Pumpkin recipe challenge 🎃 My children don’t like it (even though they love just about everything else, including brussel spouts + seafood) and if I’m honest I don’t love it either. Over the last few weeks I’ve found myself with three large chunks of pumpkin in my seasonal mixed fruit + box and with my ‘nothing is wasted’ ethos, I’m working my way through recipe trials. What is it?
None broth is a nutritious broth made from animal bones (normally turkey, chicken, beef, lamb or fish). The bones are slowly simmered in water for about 8+ hours. You can add spices and organic vegetables too.

Wonderful Waffles 🙋🏼♀️🙋🏼♀️🙋🏼♀️ My Aunty Sheena shared her amazing recipe and I have adapted it to suit my gluten and dairy free needs. If you love light and fluffy waffles then is recipe is for you. You can also add a pinch of salt for savoury waffles or a teaspoon of vanilla for sweet.
- 2 free range medium eggs
- 300ml of organic oat milk
- 2 cups of gluten free plain flour
- 1 tablespoon of baking powder
- 1/3 cup of vegetable spread, melted and cooled
- Whisk the eggs and oat milk in a large mixing bowl
- Sift in the flour and baking powder. Whisk until smooth
- Gradually add in the melted spread and stir throughly
- Cook in your waffle maker, and make sure to follow those all important instructions!
One of the reasons I love making waffles, you can get so creative and go wild with the toppings! 😍
