Greek Chicken Meal Prep

MARINATED GREEK CHICKEN
2 pounds boneless, skinless chicken breasts
5 Tablespoons olive oil, divided
zest and juice of 1 lemon
3 garlic cloves, minced or grated
1 Tablespoon red wine vinegar
1 teaspoon dried rosemary
1 Tablespoon dried oregano
kosher salt, to taste
ground black pepper, to taste
2 small (or 1 large) English cucumbers, diced
2 Tablespoons red wine vinegar
2 Tablespoons olive oil
2 teaspoons dried oregano (or 2 Tablespoons chopped fresh oregano)
zest and juice of ½ lemon
1 large cucumber, grated and drained well
1 cup plain Greek yogurt
3 cloves garlic, minced or grated
zest and juice of ½ lemon
2 Tablespoons chopped fresh dill
1 Tablespoon chopped fresh mint (optional)
kosher salt, to taste
ground black pepper, to taste
1½ pounds cherry tomatoes, halved
3 cups cooked brown rice
1 red onion, sliced

Crock-Pot Beef Stew warms the soul! And to be honest, I'm the only one in my family that likes soups. But this one is different. It's hearty enough for my husband, and without broth, it's "steak and potatoes" for my littles! 💯
2.5lbs stew meat
1lb whole carrots, peeled and chopped in 1in pieces
2lbs red potatoes, quartered
1 small yellow onion, cut into wedges
2 qts beef broth
1 tsp salt
1 tsp pepper
4 cloves minced garlic
2 TB coconut oil
3 TB coconut aminos
1. HEAT coconut oil in large skillet and add stew meat. Brown on all sides about 5 minutes.
2. ADD broth, carrots, potatoes, onion, garlic, coconut aminos, salt, pepper, and browned beef to slow cooker.
3. COVER and cook on high 4 hours or low 6 hours.
4. TO serve ladle stew into bowls and add additional salt and pepper to taste. Enjoy!

5️⃣ 5 partial to full shoulder press into 5 squats with lateral hold

so here’s a savory combo from a while ago:
1️⃣ beet hummus, homemade cashew „mozzarella“ & tomatoes 🍅
2️⃣ curry hummus, cucumber & sprouts 🥒
I’ve tried store-bought vegan „cheeses“ before but I‘m simply not a fan of cheese alternative products, especially oil-based ones. 🙅🏽♀️ that’s why I make my own ones occasionally: nut-based options are not only healthier but taste much better! have you ever made your own vegan cheese? 🧀 it’s so easy! you can find my go-to cashew mozzarella recipe below 👇🏼
cashew mozzarella cheese:
- 1 cup of cashews, soaked in water overnight
- 2tbsps psyllium husk
- 1tbsp of lemon juice - 1tbsp of nutritional yeast
- 1tsp of salt
(optional: 1tsp of sango coral powder for a higher calcium content)
1. mix the psyllium husk into 1 cup of water. let it sit for around 2 hours, stirring occasionally, until gel-like & thick.
2. drain the soaked cashews & blend them with the psyllium husk „gel“, lemon juice, nutritional yeast & salt until thick but creamy.
3. split the mixture into three parts. transfer into round bowls/jars. leave in the fridge for at least an hour before using.
Vegan Day 37 - Sunday I tried to veganize my favorite childhood dish: Peanut Butter Chicken. I poured the peanut butter sauce over steamed cauliflower and chickpeas, served over rice, with a lime avocado spinach salad, topped with chopped peanuts and green onions. All my life my mom has served this dish with lots of chicken and lots of rice (maybe some broccoli too?) but it is very rich and filling. I was so excited to fill half my plate with veggies this round and cut down on the heavy sauce consumption (I am officially addicted to cherry tomatoes btw. I am adding them to everything) This dish turned out better than the original! Comforting, filling, indulgent, and all plant-based. .
This morning I woke up at 5 with intense intestinal pain. I have been mildly blocked for 3 days and I guess something got worse last night. My pain has subsided but I am inflamed and bloated. Today I am eating only plants and I am going to avoid wheat and soy this week until I feel back to normal. My Elisa food intolerance test results listed Soy and I wanted to pretend that I would be fine eating it as a vegan, but it is worth experimenting to see if that is causing this irritation. Luckily, whole foods are tasting better and better these days and I don’t feel deprived 🥗 #plantbased #vegan #newvegan #wholefoods
Are you getting enough fruit and vegetables in your diet each day? One great way to start each day is with a fruit and vegetable smoothie, like this one! You can mix up the veg daily with leafy greens such as spinach or kale and pair them with tropical fruits for a real treat or try some root vegetables such as carrots with peaches and orange for a boost of vitamin c and beta carotene! .

Let’s talk about food!!! Mmmmm...seriously; I have a love affair with food ❤️ One of my absolute favourite dressings is from a small Canadian company called Little Creek and their best dressing is called Okanagans Origional. It’s soooo good. But quite expensive. My family and I can easily go through 3 cups (750ml) in less then a week...so I’ve learned how to make my own version. I’d like to share it all with you today.
1/2 cup olive oil
1/2 cup Apple cider vinegar
Juice from 1 lemon
1 clove of minced garlic
1 Tbsp of Tamari soy sauce or braggs liquid soy seasoning or coconut aminos (lots of options!)
4 Tbsps nutritional yeast
1 Tbsp Dijon mustard
Sea salt to taste
Pepper to taste
Add everything together in a glass container with a tight seal and shake, store in the refrigerator.

Mmmmmmanicotti last night
These wholefood products have been my life saver lately!! Since it is winter where I live (and I mean winter as in 5 feet of snow and -30 winter), getting an array of fresh product has been quite difficult due to selection and price!
