Red curry with chicken and veggies on cauliflower rice for tonight’s dinner Sauté 4 cut up chicken breast with a tbsp of red curry paste and olive oil. Set aside. Sauté half sweet onion, 2 cut up bell peppers, zucchini, half cup of basil, and mushrooms, Put chicken back in pot when veggies are done. Today’s lunch. I was craving an omelette, so I made one, added cheese, rocket and baby spinach. Served up with my usual veg and a dollop of guacamole. Ready in 10 and super healthy!!
Golden Soup! It's hard to believe a soup could be so creamy without any cream! With only a handful ingredients, it's totes on the repeat list. 💛 Recipe: @pinchofyum 💛 2 tablespoons olive oil half an onion, chopped 2 cloves garlic, chopped 1 head of cauliflower, chopped into about 5 cups of chunks or florets 1 cup cashews 1 tablespoon turmeric 7-8 cups water 2 teaspoons salt a squeeze of lemon juice * Sauté: Heat the oil in a deep soup pot. Add the onion, garlic, cauliflower, cashews, and turmeric. Sauté for 10 minutes or until very fragrant. Simmer: Add the water (I usually start with 4 cups) and salt. Simmer until softened. Blend: Transfer the soup to a blender and blend into a creamy consistency. It’s best to do this in batches. Finish: Return to the soup pot and add any additional water (remaining 2-3 cups) if you need to thin it out. Also a good time to season with more salt and a squeeze of lemon juice. Also a good time to top with spiced chickpeas and parsley and olive oil and more salt and put on your most comfy sweater and FALL IN LOVE. ♡

Ate at my first “paleo” restaurant tonight in Indianapolis! I’m in Indy visiting family this week and we checked out this spot. I was most impressed by the app we ordered- bacon + guacamole 🥑🥓. I got the grass-fed burger (without the paleo bun because #whole30 ). It was a decent meal but I’m a tough critic. #WHOLE30 HASH BROWN WAFFLES...crazy easy and crazy creative 🤣. To make these basic waffles you will need a mini waffle maker (I bought mine at @homegoods fo $7.99...it’s from @unprocessyourfood ), 1 Full cup of #whole30compliant hash browns (I got mine at @freshthyme ), 1 egg and S&P. You start by defrosting/cooking the hash browns in the microwave. I cooked mine for 3 minutes. Next whisk the egg with the S&P, then pour and mix with the warm Hashies. Make sure your waffle iron heating up at this point! Before you put anything into the iron, spray with oil. I use @chosenfoods avo spray. Take a heaping 2 Tbsp and cook on the iron. This recipe makes roughly 3-4 waffles. # I have been loving these as buns but you can also eat alone or as a snack on the go! This chicken and “rice” casserole wasn’t beautiful, (are they ever?!) but it sure was tasty! My family is never thrilled about a casserole for dinner, but a big, colorful salad with lots of crunch and texture variety can work wonders! Recipe: @againstallgrain from her fantastic cookbook “Meals Made Simple”. If you watch my stories, you can see the dreamy-creamy sauce that goes into this dish that is made from soaked cashews, thyme, lemon juice and @nomnompaleo ‘s magic mushroom powder... it’s unbelievably delicious! Why waste $$ on store bought bone broth?. . Bone broth is all the rage these days but did you know you could be compromising the health benefits of this amazing age old tradition by not making it yourself, and at a hefty price? I’m guessing the reason you have decided to drink bone broth is to increase your nutrition, help support or heal your gut issues, and to have beautiful skin and hair. So why buy something that is less nutrient dense and 3xs the price?!. . Commercial bone broth is almost always watered down, it is supposed to have gelling while refrigerated. This shows just how much gellatin and collagen it actually has. This is highly beneficial for digestive health as well as strong bones, skin and hair. Also commercial bone broth is almost always packaged in toxic containers such as cartons which compromise your healthy broth. . It is important to use a variety of bones such as beef bones, chicken feet, lamb bones, and turkey bones. Store bought bone broths usually don’t combine different animal bones which is highly important for optimal nutrients and healing properties. . In the kitchen recipe testing for fall and I’ll have to say majority of my summer salads can transition into the fall season 🌱 I love adding seeds & nuts 🥜 to my salads because the healthy fats and the added protein. When using seeds and/or nuts, I buy them sprouted because they’re easier for the body to digest & packed with more nutrients 🙌🏼 (some grocery stores carry these) Or DIY / help activate the enzymes within nuts/seeds by soaking them overnight in purified water 💦 with a little Celtic sea salt. Then you can bake them, make nut milks, add to salads etc. And when it comes to salad dressing, try adding lemon, balsamic, Dijon mustard, 🍎 cider vinegar/homemade dressing to any salad. Gnocchi is life. Especially cauliflower gnocchi. Even if gnocchi is the hardest word for me to pronounce and type 🙃 . Tonight’s dinner featuring cauli gnocchi from Trader Joe’s, topped with ground beef, onion, garlic and artichoke heart mixed with Trader Joe’s marinara sauce (one of my favs!). Another simple and delicious dinner!
THIS is the Whole30 version of Southern Pecan Chicken Tender Salad from O’Charley’s. For all you west coaster’s, I think O’Charley’s is primarily a southeastern restaurant. They have a fried chicken salad with candied pecans and it is sooo good. It comes with a vinaigrette but I always got it with honey mustard. I’ve been daydreaming about this salad, so I had to make it Whole30 compliant! For the chicken, I modeled it after the Chicken Cutlets recipe in the Whole30 cookbook by using almond flour and coconut flour, and then added 2 tablespoons of Grilling Seasons Chicken to the mixture. It makes the perfect tasting “fried” chicken. I added sliced strawberries, mandarin oranges and pecans! Then, the most exciting surprise from tonight was a recipe from Jean Choi @whatgreatgrandmaate ! Her Whole30 Honey Mustard recipe is delicious! Sometimes a somewhat random dinner is exactly what I need. Tonight I had egg drop soup season with @redboatfishsauce , coconut aminos, and @nomnompaleo magic mushroom powder. I topped it off with green onions and Sichuan peppercorns. This steaming bowl of homemade bone broth is just so soothing! And because I was in the mood, I had a side of bacon. . I went to acupuncture tonight which is something I really enjoy, and I am so so relaxed after a session. Comfort food at its finest right here 💯 and it only took me 20 minutes to prep🙌🏼. . Spaghetti squash “pasta” bowl 1 small spaghetti squash I cooked in my instant pot whole on high pressure for 15 minutes. I then let cool, cut in half, scooped out seeds, and put back in instant pot for another 5 minutes on high pressure. . 1 lb @buyranchdirect ground turkey sausage 1 zucchini 1/3 cup diced red onion 1 red bell pepper chopped 1 Tbsp @fourthandheart California garlic ghee 1 cup @cucinaantica maranera sauce . Heat pan with ghee and sauté onions, add sausage and cook until no longer pink (5-7 minutes). Add in zucchini, cilantro, and red bell pepper, and cook another 5 minutes. Add sauce, mix, and add to spaghetti squash. #mhkwhole30
