People disappoint but TACOS are foreverrrrr, am I right?! 😝😝 Okay so these are more salmon 🌯 than 🌮 but anyway they were a freaking AMAZINGGGG take on #tacotuesday 💥 For the jerk salmon — combine a tsp each of all spice, cumin, coriander, paprika, a pinch of cinnamon, salt and a 1/4 tsp thyme. Coat the salmon in the jerk seasoning then fry in garlic olive oil until crispy 🐟 I’m all about the condiments when it comes to Mexican, so these are not negotiable: ✅ Guacamole (recipe on my page) ✅ Pineapple/mango, chilli, lime + corriander salsa ✅ Cheese ✅ Corn ✅ Slaw (recipe on my page) ✅ Flatbreads (1 cup self raising flour, 1 cup greek yoghurt & tsp baking powder 👉🏻 knead then dry fry) If your not a salmon lover these would totally work with chicken or even tofu if you want it to be #vegetarian 🌱Tag a friend who’s mad about #mexican 💃

Seeing how winter decided to show up with a vengeance and my toes have been frozen for 3 consecutive days all I want is steaming hot comfort food. (And I obvi need a mani too🤦🏻‍♀️). I made up this Butter-less Chicken dish and it’s both Paleo + Whole 30 Friendly! It is so simple and quick to make and so so yummy. Pair it with roasted cauliflower or baked sweet potatoe. If you are into grains then you can use rice as your base. Recipe 👇🏻 . 4-5 Chicken breasts 1/2 Onion minced 3c Kale chopped 2 Bell Peppers cubed 1 32oz jar/can of crushed tomatoes 1 14oz can of Coconut Milk (Full Fat) 3 Garlic Cloves 1T Fresh Ginger grated 2T Garam Masala 2t Curry Powder 1t Turmeric S+P to taste Cilantro to garnish . Sauté chicken in some coconut/olive oil. Add in onion then continue sautéing for 3 or so more minutes. Add in kale, bell pepper, garlic and ginger. Stir throughout then add lid to skillet and let veggies soften for 5 or so minutes. Sprinkle all the spices over top and give a quick stir. (This is where I chop/shred up the chicken with whatever tool I’m using). Add in tomatoes and coconut milk. Heat throughout. Let simmer for 10-30 minutes. . * I do not usually measure or time anything. I just stick close to the skillet and go with the flow. You can add more or different veg to the skillet or skip the veg entirely. W30R4D22: Dinner out with my guy. When we’re eating on plan, we usually go to 1 of 2 places. This is the bbq joint in the next town over. We get beans and salad and meat. Bring our @tessemaes dressing, and ask them to leave the toast off the plate. I enjoy a little of their spicy bbq sauce, which is yummy!! The best part is, I didn’t cook or do dishes!! So, we have another week of this 30 days. After that, the plan is to stay on plan except I’m going to add back in my wine. It’s good for my heart. Whole30 Dinner Day 16: This weekend my brother-in-law's sister made my recipe (really my dad's recipe) from the blog for this spicy, nutritious and amazing pork green chile with spinach. I was so excited to hear she had made it and that the whole family liked it! Since then I couldn't get it out of my head. So I bought some pork and spinach and indulged my craving this evening. The best part is that with some slight modifications this amazingly delicious dish can be made #whole30compliant . So SERIOUS PSA to #januarywhole30 peeps, if you haven’t made the @wholesisters #dumpranch , you are really missing out. # Second, just wanted to share some tips I’ve learned with making it. 1. Let the egg sit out to room temperature. This is a tip I recommend for #paleomayo also! 2. Seriously make sure to use light tasting olive oil or avocado oil. Regular olive oil and EVOO stink. 3. You can use between 3/4 cup to 1 cup of the oil. The more you use, the thicker it is. 4. Make sure to refrigerate the #dumpranch ....it needs time to settle. 5. Make sure to use red wine vinegar..although I’ve subbed apple cider vinegar and it’s not bad per se...but I like red wine vinegar better. 6. Seriously use an immersion blender...it basically makes the dump ranch a sure thing. 7. Make sure to season properly! 8. Although not necessary, I suggest using a fresh spice like thyme! Gives the ranch an extra something. 9. I found that Thai Kitchen full fat coconut milk works a ton better than @traderjoes coconut milk. Personally I would not recommend coconut cream...the ranch does not come out right...sorry 🤷🏼‍♀️!

Tonight was the night for mulled cider and bratwurst. The bratwurst is cooked with cabbage and onions, and served with sauerkraut and mustard on the side. To mull the apple cider, I simply use Penzey’s mulling spice blend and mix with cider in a pot on the stove and let it simmer for 15 or so minutes. Perfect for a cold winter night. . . { 𝐖𝐡𝐨𝐥𝐞 𝟑𝟎 𝐒𝐡𝐞𝐩𝐡𝐞𝐫𝐝𝐬 𝐏𝐢𝐞 } Boil 4-6 baby Yukon Gold potatoes (chopped) with 1 head of cauliflower (chopped into florets) for 15-20 mins. Drain and mash with 1 Tbsp ghee, S&P. Meanwhile, sauté 1/4 cup each of diced carrots and onions in EVOO, 1 Tbsp #traderjoes Mushroom Umami Seasoning, S&P over medium high heat for 2-3 mins until softened. Add 1 Tbsp minced garlic, and sauté for 1-2 more mins. Add 1 lb. ground beef, and cook until browned. Add 1 Tbsp each of tomato paste and coconut aminos, bring to a boil, then simmer on low for 5 mins. Transfer beef mixture to cake pan and top with mashed potato/cauliflower mixture. Lemon dry-rub Baked Drumettes w/Moroccan-spiced Cauliflower 🍗 ••• Such an easy & tasty meal. I seasoned the chicken with lemon pepper & salt, a drizzle of avocado oil, baked them @ 400F for 45 min. For Cauliflower: add a little water, 2 tbsp tomato paste, seasonings (salt, pepper, cumin, curry, garam masala, & oregano). After tomato paste has melted in, add 2 minced garlic cloves, sauté for 2 min, add cauliflower florets, pitted and chopped oil-cured olives (optional), cover & then to low until softened. Whole30 Day 22 Za’atar roasted acorn squash with a cashew tahini sauce! So yummy I proceeded to eat the whole tray at once! I’m sure everyone has days like that! Don’t you? 😁 . . . Cashew and Tahini sauce: A handful of parsley 1 garlic clove 1 Tbls tahini 1/2 cup soaked raw cashews Soaked for at least a few hours 2 green onions chopped 3-5 slices of fresh jalapeño 1/4 cup olive oil 1/4 cup water Zest of half a lime + the juice Pinch of smoked paprika Salt to taste Place all ingredients in the food processor and blend till smooth. You picked the best and most delicious Whole30 recipe I've made to date, Pulled Pork.⁣ ⁣ The only thing I regret is not making more. I used 2 pounds for this recipe but when I make this again I'm bumping it up to 4 pounds.⁣ ⁣ This was really easy to make. one pan burger & diced potatoes || I ate before I though to take an after photo 🤣sooo freaking good - follow the directions for a low fat bubba burger patty, dice potatoes & cover pan. when you flip the burger, stir the potatoes as well. once the burger is done, dice an onion and add it to the potatoes, cover again until potatoes are soft. dress the burger w @primalkitchenfoods mayo & dijon mustard on romaine lettuce!
About 2/3 of the way through our Whole30, still whipping up some extremely tasty, but simple and fast meals. This one was pan seared salmon over some purple carrots, fingerling potatoes, leeks, shallots and olives cooked with nutritional yeast to give them a delicious cheesy texture. 🐟

15 minute dinners are my favorite dinners 😋 . . Pan-Seared Wild Caught Salmon from @butcher_box , paired with my favorite crispy kale! What’s your go-to weeknight meal?! . . For the salmon: Season the salmon with garlic powder, lemon pepper and salt. Heat your cast iron pan or skillet with a little avocado oil. Place the salmon skin side up in the pan. Cook for 5-6 minutes and then flip. Cook for another 2-3 minutes or until cooked through. For the crispy kale: Pre-heat your oven to 420F. Line a baking sheet with parchment paper and spread out the kale (I do about 2 cups). Spray with @chosenfoods avocado oil. Season with garlic powder, cayenne and salt. **EASY MEAL ALERT*** This tuna was so quick and had so much flavor! I needed something that would thaw fast and was low fuss. I bought a big bag of tuna steaks at @sprouts to have on hand when we needed a high protein meal and tonight was that night! My 3 year old ate a whole steak! 👍🏼 Go get yo’self some!! . . . 🐟 Marinate tuna steaks in olive oil, coconut aminos (a soy sauce substitute), salt, pepper (I only marinated for 10 minutes) 🐟 In a hot oiled skillet sear tuna for 2.5 minutes on first side and 2 minutes on the other side 🐟 This will give you a pink center. Cook longer in 30 second increments if you want it more well done
Slow cooker sweet potato curry soup! Yummy 😋. I did it in the instant pot for 14 minutes and it was perfect. I added coconut milk and cooked it 3 minutes more and the veggies were a bit mushy. I’d suggest just leaving it on warm with lid on for a couple minutes after adding coconut milk.
