’s recipe for vegan meringue! 🍓—————————————————
I followed her recipe other than the following amendments: * I swapped her complicated coconut cream to ordinary whipped coconut cream (the thick bit on the top of a can of coconut milk - you can get more solids by putting the can in the fridge the night before and it whipped really well!)
* I made two meringue circles as she suggested and, well, one failed. It was slightly larger than the surviving one and definitely needed longer in the oven because it was completely stuck to the baking paper and incredibly sticky. Eton mess anyone?
My pavlova then became just one layer but it was so packed with fruit that I didn’t miss it! 🥭🍑🍍🥝—————————————————
The meringue is VEGAN and made with aquafaba (the mystical fluid in a can of chickpeas). I was told that it is best to make vegan meringues with unsalted chickpea water so make sure you look out for this on the label. I had to use Waitrose chickpea water to find some that weren’t salted. —————————————————

Other than that… pretty impressive, right? I was pleased with myself and pleased to trick my boyfriend’s parents into trying it before telling them it was vegan (sorry Marie). Satisfying!

FROM TROPICAL HEAT TO ICY COLD! 🌴✈️❄️
Hi from cold ass Germany! 😃🙂Even though it is freeeeezing right now and walking around with shorts and a shirt is something I miss way too much, I am glad to be here and spend some time with my loved ones 🥰 You know what I was the most excited about (after seeing my family) when I jumped on the airplane back to Germany? To finally make some CELERY JUICE!! No joke 😂 During my time in Thailand this miracle juice popped up everywhere and everybody loved its healing properties. I HAD to try it but living out of a backpack with no kitchen tools at all was not the optimal thing to do so 😄 Well, now that I am reunited with my juicer I‘m juicing celery like there’s no tomorrow 🤣 Everyday I'm drinking 32oz on an empty stomach thirst thing in the morning and man, I am loving it! 🤩 It tastes way better than I imagined and the benefits are just INCREDIBLE. Helps with high blood pressure, constipation, bloating, acne, eczema - just to name a few. I can only recommend you to give it a try! It’s truly life changing 🙏🏻💚

Hi vom arschkalten Deutschland! 😃🙂 Auch wenn die Temperaturen mit jedem Tag sinken und ich es total vermisse, mit Shorts und Shirt bei 35 Grad rumzulaufen, bin ich sehr froh momentan hier zu sein und Zeit mit meinen Liebsten zu verbringen 🥰 Wisst ihr, worauf ich mich nach ihnen am meisten gefreut habe, als ich ins Flugzeug gehopst bin? Auf die Möglichkeit frisch gepressten SELLERIESAFT zu machen!! Kein Scherz 😂 Während meiner Zeit in Thailand ist das Internet förmlich explodiert und zahlreiche Menschen berichteten begeistert von den heilenden Eigenschaften des Selleriesafts 🙌🏻 Das musste ich ausprobieren! Da ich allerdings nur mit einem Backpack unterwegs war und keinerlei Küchengeräte bei mir hatte, gestaltete sich die Umsetzung etwas schwierig 😄 Jetzt, wo ich endlich wieder mit meinem Entsafter vereint bin, entsafte ich Sellerie als gäbe es kein Morgen mehr! 🤣 Jeden Tag trinke ich rund 1 Liter auf nüchternen Magen und ich LIEBE es 🤩 [Weiter in den Kommentaren]👇🏻

I have been in Berlin for almost a week now and it has not been the easiest transition 🥶 The weather is much colder than California and I am yet to be set up in my apartment so my routine has been all over the place 🏃🏼 I am doing my best to stay optimistic and remember that this is only temporary 🙌🏽🎉
On a more positive note, I just renewed my @headspace

Wenn ich gewusst hätte, dass das so einfach ist und so gut schmeckt 😋 hätte ich mich auf jeden Fall schon viel ehr an Grünkohl Chips probiert 😊 Sonntags veranstalte ich immer eine Art kleinen Cheatday 😅 Nachmittags gab es Wraps und Abends dann ein bisschen was zu knabbern 😍 In meinem Fall gilt ganz klar Chips über Schokolade 🍫 Früher war das Mal anders, aber seit meine Zähne so empfindlich sind, kann ich nicht mehr alle süßen Sachen schmerzfrei Essen. 😟
Heute ist es hier in Finnland doppelt so kalt wie gestern ❄❄❄ -18° Grad 😯.
If I had known that this was so easy and tasted so good I would definitely have tried kale chips earlier😊 I always have some kind of cheatday on Sundays 😅 In the afternoon there were wraps and then a bit of a nibble in the evening 😍 In my case, chips are definitely over chocolate 🍫 It used to be different, but since my teeth are so sensitive, I can no longer eat all sweet things painlessly. 😟
Today it is twice as cold here in Finland as yesterday ❄❄❄ -18 ° degrees 😯.
🍋🥢Crispy baked cauliflower with Chinese lemon sauce.🥢🍋
This was unreal! A beautiful Asian cuisine that keeps your taste buds tingling.
* 1 small head of cauliflower, cut into florets
* 1/4 cup flour (plain, wholemeal, chickpea, whatever you prefer)
* Salt and pepper
* 1 cup of bread crumbs (panko works best)
* 1/2 cup plant milk
* Sesame seeds
* Rice to serve
This was so extremely tasty! I wish I made more 😍
Preheat oven to 200degrees and line a tray with baking paper. Mix the flour with the pepper and salt in a small bowl, put the milk and panko crumbs in seperate bowls. Drop a few cauli florets into the flour, then milk, then crumbs. Place them all on the tray and cook in the oven for 30 mins until golden brown. Once cooked place in bowl with rice and drizzle the sauce on top!
Lemon sauce 🍋-
* 1/2 cup water
* 2 cloves garlic finely chopped, grated or minced
* 2 teaspoons of ginger powder
* 1/4 cup fresh lemon juice
* 1 tablespoon of soy sauce
* 1 teaspoon of rice vinegar
* 1 teaspoon of sea salt
* 1/2 teaspoon of sriracha sauce (optional)
* 4 teaspoons of tapioca mixed with 2 teaspoons of water
Combine all the ingredients except for the tapioca in a small pot over medium heat and bring to a simmer. Add the tapioca and water mixture and stir constantly for two mins until thick.
🥜🥦🍅Vegan Veggie Gnocchi🍅🥦🥜
One of my personal favourites! Made with a homemade creamy sauce it will keep you coming back for more. It’s a perfect meal for a cold night in with fresh bread to soak up all the sauce at the end 🤤
You will need:
* 2-3 cups of chopped broccoli * 3-4 cups of sliced mushrooms
* 1 cup of cherry tomatoes halved * 2-3 cups loaded of fresh baby spinach * Roughly 500g of gnocchi (if you don’t like gnocchi pasta works fine with this dish also)
Now to the best part.. The cream sauce * 1 cup of unsweetened almond milk
* 1/2 cup of unsalted cashews
* 2 teaspoons of white miso paste
* 1 teaspoon of dijon mustard
* 1 teaspoon of salt
* 3 tablespoons of nutritional yeast
* 2 large garlic cloves (only 1 if your not mad about it like I am)
Blitz these ingredients together in a blender, Nutri bullet or whatever mechanism you have. It will be very runny. This sauce thickens up as you heat it.
Cook the gnocchi (or pasta) first. Set aside.
Blanche broccoli. Set aside.
Sauté the mushrooms and tomatoes in a deep dish pan for 3-4 mins. Add the sauce, cook for a couple more mins then add the spinach. Once that has wilted down add the gnocchi and broccoli. Stir well so sauce covers all, serve! You will make this again guarantee 🤤😉🌿 #vegangnocchi
