Happy Saturday night 🤗 I am absolutely loving this beautiful fall weather 🍂 for dinner tonight I pan seared a chicken apple sausage in a skillet with @chosenfoods
avocado oil + also sautéed some spinach + Brussel sprouts + tomatoes + made a hasselback potato 😋 all I did for the potato was cut into it (almost all the way through but not quite) then drizzle some avocado oil + salt + pepper over it before putting it in the oven for around 45 min 👌🏻 just before dinner I went for a walk around my town which I love doing because it reminds me how truly lucky I am to live where I do ☺️ living so close to the ocean is something that I will never take for granted! Hope you all find something you enjoy doing tonight 💕

•BREAKFAST: Sunny side up eggs, sautéed baby spinach, avocado, watermelon radish and cherry tomatoes.
•SNACK 1: Popcorn and berries.
•LUNCH: Aka post workout meal; Protein oatmeal with banana, strawberries, blueberries, pumpkin seeds, almond butter and dark chocolate.
•SNACK 2: Apple rings with nut butter and toppings.
•DINNER: Roasted curried cauliflower, red quinoa, turkey patties, mashed purple potato, snow peas and kraut.

zucchini lasagna with an abundance of zucchini in the fridge. Surprisingly easy to make and with the cashew ricotta, tasted pretty identical to the real thing 👌
Perhaps not my prettiest looking cake.. however I finally bought a vitamix and needed to put it to the test and holy mother of God.. First of all, why didn't I buy one sooner, it whizzes everything up so quickly and smoothly 😍 so I made this strawberry cheesecake, not a total fail but becos of the high water content in the strawberries it does taste more icy than creamy and it didnt set that well, note the melting doen the sides 🙈 think ill experiment making different kinds of cheesecake to see what works best!

One of my favorite childhood foods, cheese toast, has made a major comeback in my life over the past month, and my love for it miiiight now be rivaling my love for avocado toast 🙊. But because it’s Friday, and because two-way toasting is always better than one-way toasting, I made both for today’s post-run lunch 🙋🏼♀️.
paleo bread toasted and topped with (slice 1) shredded mozzarella, then placed under the broiler for 1-2 minutes until bubbly; (slice 2) smashed avocado + feta cheese •• crispy garlic ghee fried egg •• sautéed spinach with red pepper & parmesan •• cherry tomatoes (picked in my mom’s garden this morning) 🍅.

🍌GUILT-FREE BANANA BREAD🍌
1/4 cup unsweetened almond milk
1 tsp apple cider vinegar
1/8 cup honey
1 tbsp avocado oil (or coconut or olive oil)
1 tbsp vanilla extract
1/2 cup almond flour
1 1/2 cup oat flour (ground old fashioned rolled oats)
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 cup chocolate chips

Gluten Free Spiced Oatmeal Raisins Cookies
1 cup gluten free oats
1 cup oat flour
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp all spice
1/4 tsp sea salt
1/4 cup coconut oil, melted
1/4 cup coconut sugar
2 tablespoons honey or maple syrup
2 eggs (or 2 flax eggs)
1 tsp vanilla extract
1/2-1 cup raisins, soaked in warm water for 10 minutes
Preheat the oven to 350 F. Line 2 baking sheets with parchment paper.
In a small bowl, combine the oats, oat flour, baking powder, baking soda, cinnamon, and salt.
In a large bowl combine the melted coconut oil, coconut sugar, maple syrup, eggs, and vanilla. Whisk until well combined.
Add the dry to the wet, whisking to throughly combine.
Drain the raisins, fold into the batter.
Scoop cookie dough onto the baking sheets, about 2 TBL per scoop (cookies won’t spread a lot during baking), press cookies down with fork or fingertips.
Bake cookies for 8-12 minutes or until just set. Remove from oven, let cool for 2-3 minutes, transfer to cooling rack.
Store in a sealed container on the counter for up to 1 week or freeze.
Always gotta start brunch off with a crisp Caesar salad! 🥗

It’s a really hot day today here in Norfolk, but porridge is always a good option 😋Today I had porridge oats with a tiny bit of milk, almond butter, spanish honey, half a banana, blackberries and raspberries, flaxseeds and chia seeds.
🇪🇸Porridge de avena! Alguna vez habéis comido porridge? Yo nunca las como en España pero siempre en Inglaterra. Es avena con un poquito de agua y un poquito de leche. Como topping les he puesto miel española, manteca de almendra, semillas de chia y lino, medio plátano, arándanos y moras. Probadlo! Está buenísimo.

Because it’s not cold I always have either toast or yogurt instead of porridge, in winter I have porridge every morning 😂 this was my brunch plus a lazy crumpet not pictured and some maltesers 😋🍫 Today’s bowl is: Greek yogurt with sf granola, blackberries, raspberries, almond butter, chia seeds and flaxseeds. With half a thins bagel with cream cheese and smoked salmon and half a pomegranate. Today I’m off for (hopefully) a 4 or 5k so need that extra healthy fat in the yogurt, salmon and cream cheese! 💪
