African Jollof Rice (Serves 4)
The spices make this dish full of flavour and was a hit amongst family members.
1 teaspoon olive oil
1 bay leaf
1 brown onion, diced
4 cloves garlic, minced
1 green chilli, sliced
1 thumb size piece of ginger, chopped finely
1 cup uncooked basmati rice, washed and drained until the water is clear
2 teaspoons curry powder
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper
1 teaspoon thyme
A dash of salt
1/2 cup frozen peas, corn, and carrot
1/2 red capsicum, diced
1 bunch broccolini, stems removed
8 green beans, sliced
4 cup mushrooms sliced
400 grams cooked chickpeas, washed and drained
1 cup vegetable broth
400 grams diced tomatoes
1 spring onion leaf, chopped finely
1 handful of parsley, chopped finely.
For A), heat oil and cook until onion is translucent.
Add B) and cook for a couple of minutes.
Add C) and mix well. Cover with a lid and simmer for 16 minutes until liquid is absorbed.
Garnish with D)
