I’ll be honest, I scheduled myself into oblivion throughout September and one thing that got left off the list was exercise. I just didn’t have the time or energy after my to-do list each day. So this weekend I was SO nervous to be climbing Mount Monadnock after such a period of inactivity, and it was the most physically challenging hike I’ve ever done. But being around such a positive crew of people kept me motivated along the way (even though my legs were jelly), and I’d do it again in a heartbeat. One of my favorite tips to help people avoid food waste is to save veggie scraps to make homemade broth.⠀ ⠀ Everything from onion skins to bell pepper tops to the leafy parts of celery and parsley stems – just collect them as you go and store them in the freezer. I like to put it all in my crockpot and let it sit for a few hours, but you can do it stovetop on low heat, too, then you strain it and freeze it in small batches. I don't add salt to the broth so I can adjust the seasoning depending on the dish I'm making.⠀ ⠀ 🛑 Just don't put any cruciferous veggies in there like kale or broccoli stems... it'll smell real bad. Oooh LA LA I love savory oats! I actually kind of prefer it over sweet oatmeal. This was super quick to whip up. and makes a great easy breakfast or lunch (or dinner!) during the week.⠀ ⠀ All it is: oats cooked in vegetable broth, topped with cherry tomatoes and shiitake mushrooms sauteed with garlic and rosemary. Cook the oats while you saute the toppings and it's all done in 10 minutes. Way better than those sugar-bomb microwave packets... immune-boosting too!⠀ ⠀ Have you ever had savory oatmeal? Whenever you're feeling under the weather, think about how you can draw energy from the earth to cure what ails you rather than going straight to the medicine cabinet. ⠀ ⠀ The tools you need for everyday healing might just be in your kitchen.⠀ ⠀ Earlier this week was non-stop sneezing and blowing my nose. Rather than popping a pill, my go-to ritual is taking a good chunk each of ginger and turmeric roots (you can find fresh turmeric at Whole Foods), chopping them into smaller pieces, and boiling them for about 20 minutes to pull out all their medicinal components. What are your favorite foods to get at the farmers market? Eating local whenever possible is so important for really getting the biggest nutrient-dense bang for your buck. Many local farms are organic (even if not labeled so... the official certification is $$$) and if you’re not sure, just ask! Eating local also means your produce didn’t travel across the world to get to you, its nutrients depleting along the way. Sometimes the produce is picked when it’s not even fully ripe, changing color only when gassed before it goes on the shelves.
