For years I used to obsess over the way I looked, the shape of my arms, the proportions from my waist to back or waist to shoulders. It was a hobby, an escape, that quickly turned into a fixation. Lately I work alot and have barely made it into the gym. 7 days a week cardio and 6 days of weight training turned into 1 maybe 2 days (max) a week at the gym. What I've come to realise is that it's about balance. Body fat and water retention might have (definetly has) increased, but I'm financรฌally better, have more time for my mother, loved ones, and dogs. The gym is supposed to enhance your life, not become it. Do it to be healthy, relieve stress, and chase your goals...but if you don't have time for anyone or have a significant other or a home to go to at the end of the day then your shit out of luck. Moral Of This story is we are all pressured to look a certain way or live a lavish lifestyle out of our reach due to endless material items or chasing vanity. There are people who burn more or less calories per day based on current stats, height, weight, age, activity level... meaning a 2,000 calorie bulk for one person might be a cut for the next person! You know what I'm talking about. When you're cooking you sample the goods. You pop some of that cheese into your mouth. You add extra oil to the pan. You crack open the bag of chips while you're waiting for your baking to finish. I couldn't figure out why I wasn't losing weight until I tracked my food. Menu for Sunday breakfast: Scrambled eggs, roasted potatoes and these healthy blueberry muffins! These were really good and only 118 calories each. Ingredients: 1 cup (8 ounces) plain Greek yogurt 1/4 cup skim milk or coconut milk 1 large egg 1 teaspoon vanilla 1/4 cup honey 1 cup (3.5 ounces) old-fashioned rolled oats 3/4 cup (3.75 ounces) whole wheat or all purpose unbleached flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1/8 teaspoon cinnamon (optional) 1/8 teaspoon salt 1 cup blueberries (fresh or frozen) 4 tablespoons butter or coconut oil, melted Directions: 1.Preheat oven to 375 degrees. Line up a 12 cup muffin tin with liners 2.In a large bowl, whisk first 5 ingredients. 3.Add dry ingredients and melted butter and stie until well combined. Don't overmix. 4.I used a 1/4 cup to scoop out the batter evenly in the liners. 5.Press a few blueberries in each cup. 6.Bake for 15-17mins. ENJOY!!
