No weight loss (or gain) this week! It happens. It was a stressful week and I only actually got one row in since starting the challenge. I had 2 days where I pretty much went to bed right after dinner. My body demanded sleep, I listened. I still got lots of walking in, since my job is pretty active. We had tornadoes touch down in the area last night, so were inside and prepared to act. We were lucky to not be affected, but much of the city is without power. Not the greatest start but looking forward to a hopefully less stressful week.

Raising a daughter is one of the hardest things I think I will ever do in my life. I never thought about the impact I would have on her, she looks up to me, cares what I think, watches my every move, wants my approval, learns from me, and my biggest fan. This young lady is fierce, strong, independent, and stunning. I pray that today and everyday I can lead and guide her to follow her dreams and walk the path God has mapped out for her. Sounds simple doesn't it... each meal I try and mix plant food with protein. Most times I am successful but then comes the weekends. Any tips from the #instagfamily on how to get through this? I'm thinking prepared meals for these days as week days are much simpler

Follow @weightloss.my.channel CHICKEN BURRITO BOWL❤️😋 Serves 4-6 INGREDIENTS 2-3 boneless skinless chicken breasts 3 bell peppers, any color, sliced 1 large red onion, sliced 2 tablespoons olive oil 1 tablespoon taco seasoning Salt and pepper 1 jar salsa 3 cups cooked brown rice, divided 1 can black beans, drained and rinsed 1 can corn 1 cup shredded cheddar cheese 1 lime, sliced into wedges Fresh cilantro to garnish PREPARATION 1. Preheat oven to 400˚F/200˚C. 2. Line a baking sheet with foil. 3. Place the chicken, peppers, and onions onto the baking sheet and drizzle with oil. 4. Sprinkle the taco seasoning evenly over both sides of the chicken breasts. 5. Salt and pepper the peppers and onions, tossing to coat. 6. Top each chicken breast with a generous pour of salsa. 7. Bake in a preheated oven for 25 minutes. 8. Rest chicken for 10 minutes, before slicing into strips. 9. Add a base of brown rice to 4 food storage containers. Top each with a scoop of black beans, corn, additional salsa, cheddar cheese, cooked peppers and onions, and sliced chicken. Garnish with fresh cilantro and a lime wedge. 10. Store in the refrigerator (and enjoy any extras immediately). Can be kept refrigerated for up to 4 days. 11. Meal-prep FTW! Enjoy! my life’s purpose isn’t to lose weight, but I’d be lying to you if i said that i didn’t feel 1000% happier in my skin now that i TAKE CARE of my body. that doesn’t mean i need to be a certain weight, or be ‘skinny’ to be happy, but it does means that i need to take care of myself, inside & out to be my happiest. I feel best when I’m fueling my body w/ good food MOST OF THE TIME, when I’m training regularly MOST OF THE TIME, and I’m loving/enjoying my life MOST OF THE TIME. Perfect doesn’t exist in any aspect of your life, including your happiness. It’s a work in progress, a consistent effort, every. single. day. Remember that. You deserve to feel good & THAT. IS. ALL. THAT. Be conscious and aware of the caloric and macronutrient value of food and when eating particular foods be aware of what you've had and what you're going to have for the rest of the day. There will always be lower calorie alternatives. Take the above example for instance, a few small changes in product choice have changed the caloric density significantly between each meal.
