We had a few of my son's friends over yesterday as they were out of school for President's day. It was midday and I didn't want to cook a full meal, so I decided a loaf of bread would do. It was teenage boys who aren't really into anything healthy, so I settled on
@kingarthurflour honey-oatmeal sandwich bread. It has some
#wholegrain , but mostly feels like a white bread. The boys loved it! Loved it so much that when it was cool enough to slice and I called them down, it was gone in under 5 minutes. I think it would have been 2 minutes, but they had to take the time to butter the bread. It was like the Nascar of eating💨.

Here's how I make the loaf:
11/4 cups boiling water
1 cup old fashioned oats
2 tablespoons butter
1/4 cup honey
Combine ingredients and let cool. This is essentially cooking the oatmeal.

Next add in:
1 cup whole wheat flour, I used white
1 2/3 cups unbleached all purpose flour
1/4 nonfat dry milk
2 teaspoons instant yeast

Mix well into you have a soft, smooth dough. Mine took about 6 minutes. Cover bowl and let it rise until doubled. Form into loaf and place in greased 9x5 pan. Or free form on a baking sheet. I used a sloppy braid 😬. Perfection isn't always the best thing, right? Let this rise. Towards the end of the rise, preheat oven to 350. I egg washed the top of mine and sprinkled on some oats. Bake about 40 minutes. Remove from oven and cool in pan about 5 minutes. Cool on rack about 10 minutes, it makes it easier to slice. I also made honey butter to go with it. My recipe is about 1/4 cup softened butter and 2 tablespoons honey. You can also add cinnamon and brown sugar of you want it to be more like Texas Roadhouse butter! .
