Recipe: aster scabber sidedish(취나물)
1. Get a package of dried aster scabber(취나물) from a korean store and boil for 30 min.
2. Let it sit for a couple hours, wash, fill it w cold water, and let it soak for 12 hours or so.
3. Stir fry some garlic and onions and add the aster with about 1/3 cup of soy sauce and a tbsp of honey.
4. Cook til soft and add some sesame oil and sesame seed.
Because we love names with meaning, we just had to give little miss Petunia a middle name. We chose Imani, a Swahili name meaning Faith. Petunia Imani...say that 3 times fast! 🤣

Tohle jsem já. Moje pravé já, co miluje tanec, umění, knihy, fotím a spoustu dalších věcí. Na druhou stranu ráda běhám, ráda posiluju, dělám jógu a jím zdravě. Chci mít zdravé tělo. Lepší život. Nejím zvířata. Nikoho nepřesvědčuji o svém mínění, je to jen můj názor a tak by to mělo být. Ráda jím i nějaká jídla veganská. Občas si do kafe naliju normální mlíko, udělám si vajíčka, dám do buchty mléko, med. Ale omezuji to. Nepočítám kalorie. Ano, jím zdravě, ale intuitivně. Postupně o sobě budu více informací, zdravých receptů a kdo ví třeba se i někdy odhalím. Chci se dělit o svoje myšlenky, úspěchy, recepty, chi pomáhat.....

Damn who knew it would feel so good getting back into photographing recipes? 😂 cooking and photography are my two fav hobbies so I guess it makes sense but ANYWAYS here is a quick, cheap and tasty vegan breakfast option- tofu scramble! I add potato to bulk it up a bit and it also means you don’t need to pop any toast in, just eat it by itself or with your favourite sides (I often do 🥑 or 🍅).
(Note this recipe is a bulk one - to be made at the start of the week and stored in the fridge until finished)
- block of tofu (I go for the omega 3 / protein enriched ones if available)
- 3 potatoes, diced and boiled - 2 cloves garlic, diced
- oregano/basil/your fav herb flakes or fresh (chives also go real well but only when cheap lol) 🌱
- 1 tbsp vegan butter/oil
- about 1/8 cup plant milk
- salt and pepper
1. Press the moisture out of the tofu with a kitchen towel and pop the potatoes in a pot of boiling water.
2. Add the oil and garlic and herbs to a pan and crumble the dry-er tofu on top
3. Turn up the heat and the plant milk 🥛
4. Strain the potatoes and add to the pan. Stir and serve/pack away!
And to end with a little story, the avo in the pic was purchased by a street stall outside my work in Manhattan. I nipped out to run some errands and couldn’t resist grabbing just one avo. The man upselled me 2 for $3 without much resistance (hello) and added some free bananas before handing them to me. It was a nice little interaction and it turned out to be one of the best avos I’ve ever tasted! 👒
It’s been a couple of days since kaporos ended but I still feel it like it was today. 6 days went by so quickly but at the same time every day felt like it was dragging. Never have I experienced such emotional peaks and lows and it felt like I was swimming in adrenaline. I probably cried 100 times in grief and in happiness. I rescued, I documented, I disrupted, and I also confronted. I had grown men in my face telling me they would kill me. I had racial slurs thrown at me. I witness baby chickens treated as if they are nothing like they’re trash, because to 99% of the world they’re objects. When they are conscious sentient beings who suffer and experience pain.
But I also got to witness the very (rare) best of humanity in the activist I had the honor of working with. Being surrounded by humans who care and worked their asses off to ensure safety and the well being of these babies was the absolute most amazing experience. Even though I got sick from pushing myself harder than I ever have, I would do it all over it again because moments like in this photo, getting babies to safety makes it all worth it.
They’re why I’m vegan.

They’re why I prioritize kaporos.

products with my hubster ❤. On this day, well night ⛼, I was training him on body scrubs. These are used as gifts and he did an amazing job.

DINNER: 10 Minute Trader Joe’s Mandarin “Chicken” with Fried Rice and Broccoli 😛 (basically a vegan Panda Express bowl!)
Ingredients (serves 2-3):
1 bag TJ’s mandarin orange morsels
1/2 bag TJ’s vegetable fried rice
1/2 bag TJ’s fresh broccoli
Cook morsels and rice (separately) on stove top with vegetable oil according to package instructions. Steam broccoli on stove top with 1 cup water. That’s it! Now serve yourself a little vegan Panda Express bowl! Top rice with Sriracha if desired 🍚
