Hoy disfrutaremos de un plato tradicional, las albóndigas “de toda la vida” las de nuestras madres, pero en versión vegana.
Cocinamos en agua hirviendo cebolla dulce, después añadimos pimiento , ajo y cuando ya esté un poco cocinado añadimos berenjenas en cuadraditos ,zanahoria rayada y champiñones picados y especias 🌿Dejamos cocinar hasta que esté pocho y el agua absorbida... jengibre y curry casi al final.
Retiramos del fuego dejamos escurrir y
añadimos judías cocinadas y perejil fresco picado . Molemos, no demasiado, que se quede una pasta grumosa.
Dejamos reposar una horita para que el lino haga su función.
Formamos bolas y horneamos.

First time making fried rice!! 😍🤤
Very yummy. Didnt have all the ingredients to make peanut sauce so just added a tbsp of peanut butter on top. 💛
Used white rice, vegetable stock, soy sauce, tumeric, paprika, cumin, allspice, salt, carrot, corn, broccilini, green beans, white onion, ginger, green capsicum, spinach, lentils, cannellini beans and chickpeas.
So lots of ingredients. Lots of nutrients from all the veggies and pulses. Basically just used all the veg I could find in my fridge. Great way to use up veg that is about to go off, or just veg that you havent used. 😁🥕🌽🥦
Made lots aswell so lots of leftovers for the following days.

Here is Sarah‘s recipe:
For the crust:
🥨 2 cup of cashews.
🥨1 cup of coconut shreds.
🥨1/2 cup of activated groats.
🥨1/4 of rice malt syrup.
🥨1 cup of pitted dates.
🥨3/4 cup of rolled oats.
🥨2 T of quinoa flour.
🍑4 peaches de skinned and depitted.
🍑1 cup of cashews.
🍑1 tsp of lemon zest.
🍑1 T of lemon juice.
🍑1 can of full fat milk, placed overnight in the fridge.
🍰 place cashews, coconut shreds, buckwheat groats, rolled oats and quinoa flour into a food processor and blend until cashews are tiny pieces. Add malt syrup and pitted dates until combined. Place into a tart pan, taking time to make the border.
🍰 prick the crust with a fork a few times and place into the oven. 350°F for 15 minutes. It should be a nice golden colour and smell rich. 🍰 leave to cool down while you make the filling.
🍰 place all the filling ingredient into a blender. Scoop only the cream part of the coconut milk can. 🍰 pour carefully over the crust. Place into the freezer for an hour.
🍰 slice 5 peaches carefully and arrange slices to your liking on the cold tart. Enjoy right away or place back into freezer to enjoy later!

My Buffalo sauce addiction continued while I was in Portland! Got the buffalo sub from Sweet Hereafter would definitely recommend it! I also got the Mac and cheese (not pictured) and it was by far the best Mac and cheese I’ve ever had 😍
Aside from blueberries. Another antioxidant that is essential for me is lemon.
Lemons contain vitamin C. Not a spectacularly high amount, but 30-50 miligrams per lemon. They also contain potassium.
Drinking lemon water first thing in the morning gives the body a chance to absorb these vitamins effectively and can provide a little immune boost.
Vitamin C is also good for the adrenals and can potentially help reduce the effects of stress.

It’s my Vegan birthday! 🌱🎂 when I made the change I was so curious to see what a year later would look like. How would I feel? Would I still be able to accomplish my fitness goals with such a drastic dietary change? So, what do I have to report? Sure, I’m not as lean. Inherently vegetables have more carbs than meat but that’s a pretty simplistic comparison. My meat based keto diet from the left photo was pretty much eggs, turkey, and avocado. Today I have a well rounded and robust diet and I eat tons of fun stuff. Up front you have so much basic rethinking of your day to day trying to figure out what to eat. I replaced my eggs with oatmeal and my meat with beans... and I ballooned. So I’m super sympathetic to the vegan curious. It is a big adjustment. I’ve only really been playing with #veganketo
for 4 or 5 months and the weight is still coming off. I still have so much to learn. I used to count protein in units of eggs and chicken breasts. Today outside of the scoop of protein I have post workout I really don’t track protein anymore. I am still gaining. Am I growing as fast as I would be if I was eating animals? Who cares. I’m not training for Olympia. I’m natural (always have been) and I’m finding there is plenty of protein available in a plant based diet to allow me to have intense workouts and meet my goals and most importantly I’m 38 and I feel 25. Recovering like I did as a teen. I’m lucky my partner @fluidity_embodiedlifestyle
has also been my guide on this journey and has accepted my #keto

Years ago when I discovered the horrors of animal testing I made a conscious decision to buy from companies who did not torture animals.
I’m not perfect, I used to copy my friends and buy MAC make up, only to find out they tested on animals! They also use parabens (which are bad for the skin as well as bad for aquatic environments🐬).
Sometimes when I’m shopping even the staff don’t know if their products are cruelty free but with a bit of patience they can find out.
Did you know that everything from shampoos to floor cleaner are tested on animals by forcing the chemicals into their eyes and down their throats.😱

Cinnamon buns 😍 I made these on Friday for my non-Vegan family and everyone LOVED it!! 😊 Yes, these have refined sugar in them 😱, and white flour (omg, gluten??), but sometimes you just gotta treat yourself and your fam. I think it’s really important to make vegan food that is really good, even if it isn’t 100% (or even 10% 🙉) clean, because it’s awesome to show people that vegan food can taste amazing, and that they don’t have to miss out on anything! Strawberry açai + passion fruit coconut 🥥 yoghurt, more strawberries, date syrup...💫
Wanted to spice things up a little this morning so I made this VEGAN OMELETTE 🍳 For the batter I simply blended up 1/2 a block of tofu, 2 tablespoons of tahini, 3 cloves of sautéed garlic, 1 teaspoon of corn flour, salt, pepper and a couple tablespoons of water to blend. I then sautéed 2/3 cup of mushrooms, 1/2 a small white onion, 4 cherry tomatoes and a handful of chopped spinach until the onion was translucent and left 1/3 of the veggie mixture on the pan, and spread the “egg” batter on top. I let it cook for five min, then baked it for 15 minutes and put a slice of @vega
cheese on top to melt (not that great tbh), and a couple minutes before I took it out of the oven I added the remainder of the sautéed veggie mix on top. I folded it in half and topped with some tahini + lemon juice, coriander and parsley 🌱 it did take a pretty long time to prep, but it was awesome! Next time I’m definitely going to add some Cholula or Sriracha because I like it extra spicy 😍🌶
