Quick breakfast before a long day at uni. Really filling and satisfying with healthy carbs, fats and proteins. Now all filled up and ready to go🏃🏽♀️ Have a good day everyone!
PB and J Oatmeal
1/2 cup rolled oats
1 cup of liquid (I did half water and half unsweetened almond milk and a little vanilla)
1 banana (1/2 stirred in the porridge and 1/2 on top)
1 tsp ground flaxseeds
1 tsp chiaseeds
Handful of blueberries
Little handful of grapes
1 tsp hemp seeds
1 tsp cacao nibs
1 tsp peanut butter (try to get one without any oil or sugars)
1 tsp raspberry jam
I also added just a little unsweetened soy yogurt
Put oats, chopped banana, chia seeds and ground flaxseeds in a saucepan and pour over water/milk. I like my porridge quite thick so I add water/milk until it covers the oats. If you like it more runny feel free to add more. Bring it to a boil and stir around until it’s nice and creamy.
Pour the porridge in a bowl and top it with the rest of the banana, blueberries, peanut butter, raspberry jam, cacao nibs and hemp seeds.
