Avocado toast time!! I toasted two slices of @traderjoes sourdough bread and added on mashed avo, a little bit of kale pesto, hot sauce, pumpkin seeds, red pepper flakes, and sprouts. So filling and delicious!! 😋 I announced a few weeks ago that Jon and I are engaged, and we’ve really been enjoying this new phase in our relationship. Blueberry & Cinnamon Protein Pancakes with smoked tempeh and maple syrup. Tried the new @myproteinuk Vegan pancake mix.. here’s the honest verdict.. . . Ok so I tried the mix with JUST water.. it was a complete fail. Don’t do it to yourself (or your frying pan). Looked like something died on the hob. BUT then I tried it with a bit of oat milk, oats and banana... and it was BANGING. Might’ve been better if I used milk instead of water but wanted to see what it was like following the recipe. I got the Blueberry & Cinnamon flavour which is nice, and added smoked tempeh on top of the stack 🙌🏻 If you’ve bought it let me know your thoughts! Guisado con ñoquis de papa! Ideal para épocas frías! Para cuando necesitamos que una comida nos abrace el alma!!!💕🌱🤗 -Ingredientes: 150 gm de porotos negros cocidos, 1 taza de ñoquis, 1/2 cebolla, 1 rabanito, 1/2 pimiento, puré de tomate y queso crema de almendra. -Preparación: Cortar en tiritas las verduras y saltearlas por 10 min en una sartén con un poco de aceite (el que más te guste, yo use de oliva), agregar pure de tomate (1/3 de la cajita aprox.) y dos cucharadas de queso crema de almendra y condimentar a gusto. Esperar a que la salsa hierva y agregar los porotos negros. En otro recipiente vamos a cocinar los ñoquis, una vez listos, los colocamos en un bowl o plato hondo, y le colocamos encima la salsa, mezclamos todo y listo! Riquísimo, rapido y calentito! Vegetable spiral tart!!🍭 ————————————————— This was a challenge but looked so impressive by the end! ————————————————— I followed the @sainsburys recipe for ’Spiral Vegetable Tart’ and it was really good! Mine may not be as neat as theirs but what can you do 🤷‍♀️ ————————————————— I cheated and used #JusRol short crust pastry for my base, but it’s vegan and reliable so there is no shame. The base is covered in butternut squash and onion puree before the vegetable are layered on top. I made a small ‘rose’ of courgette on a chopping board first and transferred it into the middle of the tart as my starting point. The rest of the vegetables are then worked around this middle. 🥕 ————————————————— My biggest downfall was that I don’t own a mandolin (no, not the instrument but I don’t have one of those either). A mandolin is the best way to get all of the vegetables cut to the same thickness. I used a vegetable peeler for the courgette without trouble. I tried the same method for the carrots but the pieces came out too thin to be able to use so I grated it on the widest side of my grater (the bit that is just slits) and this meant they were quite thick and didn’t cook completely, which was a shame. I ended up cutting the aubergine slices with a knife and realising I had used a different method for every vegetable and should probably just buy a mandolin. 🍆 ————————————————— This tart was worth the effort but I’m not sure I will be making it again in a hurry. I need a nap. 😴

SO, a little while ago I picked up this cute af mini waffle more from Urban Outfitters. With a vegan pancake recipe (randomly found online) I was able to make these deliciously looking golden waffles. Rather fluffy, but could be fluffier. ⁣ ⁣ Recipe: ⁣ - In a bowl or a cup, add 1¼ cup plant based milk with 1 tsp apple cider-vinegar and 1 tsp vanilla extract. Leave to curdle. ⁣ - In a large mixing bowl add 1½ cup self-raising flour, 2 tsp baking powder, 1 tsp bicarbonate soda, 3 tbsp caster sugar, 1 inch of salt.⁣ - Pour the liquid mixture, which is now a vegan buttermilk, into the flour mixture. Leave for 5 minutes. ⁣ - On medium heat flip some flipping pancakes or churn out some waffles!! ✨Happy Sunday Beautiful People!💫 ~ Sunday is my favourite day of week. There’s always a sense of calm in my home - the perfect atmosphere to relax, recharge and plan my new week. Sunday is also the day I try to spend time with myself and lately I find that having a ‘hair spa day’ is the best way to do this. ~ Okay, so if you have Afro hair, you know wash day is no joke - detangle, wash, deep condition, style - that can take the whole day depending on what your routine is like😩. Mine takes a couple of hours 🙌🏾. I used to dread it, but now I look forward to it. My goal this year is to try not to cut my hair and grow it out long (who else?). Considering I’m very scissor happy, I’m going to need all the luck I can get 😂 How do you spend time with yourself? ~ My other favourite way to spend time with myself is to take myself out for a meal 😊 This photo was taken earlier this week at @yosushi. For the cookies: 95g oat flour – plain oats ground up into a flour in a food processor Use gluten-free oats if you’re allergic/intolerant to gluten 105g ground pistachios – whole pistachios ground up in the food processor 1/4 tsp salt 1/2 tsp cardamom powder 2 tbsp coconut oil, melted 2 tbsp maple syrup or liquid sweetener of choice .......... Method: Preheat your oven to 180°C/160°C fan/350°F. Start off by making the blueberry chia jam – add the blueberries, lemon juice and stevia into a small saucepan. Cook over a low/medium heat until soft enough to mash with a potato masher. Once you have a sauce like consistency, take off the heat and mix in the chia seeds. Leave to cool. In a large bowl, mix together the oat flour, ground pistachio, salt and cardamom. Pour in the coconut oil and maple syrup and mix to combine. Divide into 10 equal portions and shape into balls by rolling them between the palms of your hands. Arrange on a baking sheet lined with parchment paper and press down the middle using your thumb to create the ‘thumbprint’. Add jam in the centre, then bake for 12-15 minutes.
