🍝Homemade beef spaghetti.
🍝Oh I went down that road. Yeah, that road. That road where I started to demonize every single food that was processed. Anything that came in a package I refused to get. I made everything from scratch. Tomato sauce from fresh tomatoes, cos even canned tomato were no good. Got a grain mill to mill my own flour. Made my own bread, noodles, tortillas from scratch. For a while I was making Ezekiel bread every other day.
🍝Yeah, I was that werido. That was DURING my weight loss journey.
🍝I've lightened up a lot now. A lot a lot. I realized that while I was making everything super fresh, it took away way too much of my time. I was basically living in the kitchen. I turned the TV to face the kitchen. I moved my phone chargers to the kitchen. I started eating my meals at the kitchen.
🍝I learned a lot of little tricks, like homemade tomato sauce.
🍝Previously I'd boil the tomatoes, peel them, mash them, then cook them. Way way too much works. I guess it was cos back then I didn’t have a vlog to work on. Nowadays I go for canned tomatoes. Any will do, I try to find it in the purest forms I can.
🍝To me tomato sauce is basically a canned tomato and salt. Full of flavor, nutrient rich. Add meat or seafood and it’s the easiest, quickest tomato sauce ever. Over rice, pasta, or even in bread like a sloppy joe are all great choices.
1 can of tomatoes (any type)
Salt (to taste)
Heat up the pan to medium heat and cook the optional ingredients first if there are any. You technically could just dump everything in together, but I’ve found caramelizing the onions, giving the meat a slight char goes a long way in terms of flavor. Once everything is slightly browned, put in the can of tomatoes. I tend to not use water at all to keep the flavors strong and pungent. Bring it up to a boil, put the lid on, put it the smallest flame to simmer for 15-20min and done.

for giving me my confidence back and changing my life for the better! If you don’t know VCI check them out! Seriously I’ve never felt so good to be in the skin I’m in. I’m still losing weight to get my size where it was pre Hashimotos but having a little work done to my body and face has given me a whole new level of drive and confidence that I needed to be able to hit my goals. Not that every one needs help but I did and vci were nothing but supportive. Since my BBL procedure I can now wear normal clothing and be a basic, generic, stock standard fit in anything I try on and it’s the best feeling. I use to hate trying on clothing even if I lost a bit of weight and wanted to celebrate, if I tried it on and it didn’t fit right it just set me back and made me depressed so I retreated from being me. Now I’m getting healthier, trying new things, progressing with my study’s and have such a better out look on life. It maybe superficial to some but meh it’s not about others it’s about me. Having Hashimotos has changed my life and it’s taken years to get my mental health and physical health to where I am now. The hard work I had to put in to even be able to my operation was a massive motivator. I didn’t think it would be so life changing but it has been and I feel so blessed to have had Dr Gavin work on me. Count down is on for round 2! I’ve got 3months to lose 6kg and stabilise my weight, this is going to be a challenge over xmas 😬
I attempted to go running for the first time in at least 10 years yesterday! 20 minutes in and I was already dead and needed a break! I don’t know what made me think it would be a good idea to attempt to run a half marathon in a year... At this rate I’ll barley get through a 5km! 😅
I guess I just needed something to aim for to keep me motivated! No harm in trying right?
I’ve always hated running, but I’ve always admired those fit people who are like “oh I just went for my morning run” every morning! How do those people even exist? I want to be a fit person that goes for a morning run. .
One thing I’ve discovered though is there are some really nice places near my house! I’ve been living there over a year and done zero exploring so far. This is definitely a good way to get me outside and get me exploring some of the nice places near by to me.
I may or may not attempt to go for another run this evening I’m still undecided. I’ll see how I feel when I get home.

Where are my bakers at?! With a second rest day in the schedule I had some extra time this morning and what better thing to do then whip up some oatmeal cookies for my potluck!
One of my secrets to baking and not eating the entire tray is to take them out of the house as soon as they cool! I packed these suckers up and gave them all away so I couldn’t eat the entire pan.
To make them a bit cleaner
I subbed whole wheat flour for white 🙊🙊 I also opted to make oatmeal craisin and pumpkin seed cookies instead of chocolate chip to hopefully give them a bit more fiber then classic chocolate chip cookies 🍪 .
Make sure you make nutritious meals you actually WANT to eat,🌯 not just ones that look good on paper. Anyone else ever made something like kale salad because you think you should, then not been able to touch it all week?🤢 There are so many amazing choices out there!
