Salsa verde with Green Tomatillo
8 ounces (5 to 6 medium) tomatillos, husked and rinsed
Fresh hot green chiles, to taste (roughly 2 serranos or 1 jalapeno), stemmed
5 or 6 sprigs fresh cilantro (thick stems removed), roughly chopped
Scant 1/4 cup finely chopped onion
Roughly chop the tomatillos and the chiles. In a blender or food processor, combine the tomatillos, chiles, cilantro and 1/4 cup water. Process to a coarse puree, then scrape into a serving dish. Rinse the onion under cold water, then shake to remove excess moisture. Stir into the salsa and season with salt, usually a generous 1/4 teaspoon. @elmexicanobrand

Fresh home made salsa verde . Place bell pepper , jalapeños, Anaheim peppers, garlic cloves, onion , several (min 6) tomatillos on an oven safe dish sprinkled with pink salt pepper and olive oil. Heat 300 until starts to wilt . Cool and blend with water and fresh cilantro until well mixed. Store in fridge in a mason jar , up to 1.5 weeks . Not that we have tacos every Tuesday but we came into some tomatillos, so when there are tomatillos why not make tacos!? Yucatan Fish which was super easy, a achiote paste, orange juice, lime juice and olive oil. I baked it in paper with tomato, shallots and green chillies and then served it all with tortillas, grilled corn (not served on the cob, Aaron isnt a fan of it on the cob) and tomatillo salsa.
It was delicious for a first attempt, unfortunately I couldn't be bothered trying to get good photos 😊

Home from our trip and back to reality 😬... also back to an exploding summer garden - the house we’re renting has all sorts of interesting things popping up (I’ve started to hold back on the weeding when a new plant comes up in case it’s another treasure!). I love these little tomatillos with their pearlescent papery outer skins like little presents waiting to be opened 😊 Does anyone have any tips on cooking with them or favourite recipes? this braised chicken thigh tomatillo stew situation topped with a mixture of pickled radishes, raw onions, and jalapeños and sopped up with tortillas IS EVERYTHING. stop what you’re doing and make it RIGHT NOW while it’s still raining in Southern California. I also took some homemade salsa macha out of the freezer, and it’s prob going to go down as the best decision of my week (it’s been a rough week ok??). Thanks again @alisoneroman
