Old Fashioned Sour Cream Doughnuts! It was a balmy 26 degrees below zero this morning when we woke up (actual temp, swipe to see my thermometer!)😨 so that means it's a baking day! I've been working on my doughnut technique. To celebrate all my new followers (welcome!!🙋‍♀️), I made these Mushroom Toasts, with sautéed sliced baby portabella mushrooms, minced garlic, thyme, parsley and a squeeze of lemon. Yes, I've jumped on the Chocolate Babka train! This was a challenging bread to make, but I enjoyed the process. Also, the end result was scrumptious and a hit with my family. ⁣ ⁣ ⁣ ⁣ ⁣ ⁣ ⁣ ⁣ ⁣ ⁣ ⁣ ⁣ Chocolate Babka⁣ ⁣ bread:⁣ 1 large egg plus 1 large egg yolk⁣ 1 cup whole milk⁣ 1/3 cup sugar⁣ 1 1/2 teaspoons salt⁣ 1 stick plus 2 tablespoons unsalted butter, cut into tablespoons, at room temperature⁣ 4 cups flour⁣ 1 packet dry active yeast⁣ ⁣ Chocolate mixture:⁣ 8 ounces milk chocolate, finely chopped⁣ 4 ounces bittersweet chocolate, finely chopped⁣ 4 tablespoons butter⁣ 1 tablespoon cocoa powder⁣ 1 tablespoon sugar⁣ 1/4 teaspoon salt⁣ ⁣ As per my usual, I like to make my dough in my bread machine on the dough setting (to save time). Of course you can make this by hand too! For the bread machine, add wet ingredients to pan: egg, egg yolk, whole milk, sugar, salt, room temp butter. Add flour, and top with yeast. Run per manufactures instructions for dough setting. Remove and chill dough overnight. Meanwhile, prepare your chocolate mixture.⁣ ⁣ To make chocolate mixture: Heat all chocolate mixture ingredients in a heatproof bowl set over a saucepan of simmering water, stirring occasionally, until chocolate and butter are melted and mixture is smooth.⁣ ⁣ To make your babka: Coat a 9-by-4-inch loaf pan with nonstick baking spray and line with parchment paper, allowing 2 inches of overhang on each of the long sides. Dump chilled dough onto a clean lightly floured surface. Roll out to a 22x12" rectangle and orient so a long side is facing you. Using an offset spatula, spread chocolate filling over dough to extend to the edges. Roll up dough away from you like a jelly roll, pulling lightly on it as you roll to keep your thickness. Cut log in half crosswise, leaving one end attached for a couple of inches. Set halves so they are side by side and touching, with the cut side facing up. Place one half over the other to make an X, then twist each side together, keeping cut side facing up - you should have 4 twists. Transfer bread to pan, tucking ends under each side. Cover with plastic wrap, and let rise for 30 minutes to 1 hour. (Directions continued in comments).
I've found I make Chicken Salad somewhat often. I love it because I can use leftover sous vide chicken, and other miscellaneous fruits and veggies. I made this latest batch into a Chicken Salad Sandwich. 🥪🥪🥪⁣ ⁣ ⁣ ⁣ ⁣ ⁣ ⁣ Chicken Salad⁣ ⁣ 3 or 4 sous vide chicken chicken breasts, diced⁣ 1 - 2 cups diced grapes⁣ 1 sweet red onion, finely chopped⁣ 1/2 cup sliced green onions ⁣ 1 cup finely diced celery⁣ ⁣ And dressing (recipe follows) and stir. Serve on desired bread or tortilla with fresh lettuce and tomatoes, if desired. ⁣ DRESSING: ⁣ ○1 cup avocado oil mayo⁣ ○ 1/2 cup sour cream⁣ ○ 1 -2 teaspoons dijon⁣ ○ 2 teaspoons lignin juice⁣ ○ 2 teaspoons rice vinegar⁣ ○ 1/2 teaspoon garlic powder⁣ ○ 1 teaspoon salt (to taste)⁣ ○1-2 teaspoons sugar (to taste)⁣ ○ 1 tablespoon curry powder ⁣ ○ 2 tablespoons chopped fresh parsley ⁣ Mix and pour over salad ingredients. Korean BBQ Ramen Bowl! Gorgeous, and delicious. Shitake Beef Broth, ramen noodles, sous vide cooked Korean BBQ Beef, peas, broccoli, charred baby corn, toasted sesame seeds, green onion curls, and a fresh squeeze of lime. Time to eat! ⁣ ⁣ ⁣ ⁣ ⁣ ⁣ Sous Vide Korean BBQ Beef and Vegetables⁣ ⁣ *beef steak, sliced as thinly as possible⁣ *desired veggies and toppings⁣ *broth (I made a Shitake Beef Broth)⁣ ⁣ Korean BBQ Sauce:⁣ 1/2 cup dark brown sugar⁣ 1/2 cup soy sauce⁣ 2 tablespoons mirin⁣ 1 tablespoon rice wine vinegar⁣ 1 1/2 teaspoons sesame oil⁣ 1 teaspoon fresh ginger, grated⁣ 1 tablespoon chili paste⁣ 4 or 5 cloves garlic, minced⁣ 1/2 teaspoon pepper⁣ 2 teaspoons cornstarch⁣ 2 teaspoons water⁣ ⁣ ⁣ In saucepan, combine all ingredients except cornstarch and water. Bring to a boil. Make a slurry out of cornstarch and water, and add to boiling saucepan. Whisk until thick, just a couple of minutes. Let cool slightly. Add sliced beef and sauce to your sous vide bag or vessel. Cook in your sous vide container 131 degrees for 1 to 2 hours. Silver Dollar Sourdough Pancakes! My late grandpa was known for his sourdough, and especially for his Silver Dollar Sourdough Pancakes, drizzled in real maple syrup. He never wrote the recipe down, and it has been my goal to reproduce those tangy, delicious pancakes. My sourdough actually came from my grandpa, and I am thrilled to be able to nurture this piece of my family history. ⁣❤ ⁣ I think I am the closest I have ever been to getting my grandpas exact sourdough pancakes, and it makes me feel closer to him (he passed away unexpectedly about 10 years ago). Seared Sous Vide Chicken Breast with Provalone and Wine Braised Mushrooms - your new favorite easy meal. . . . . . Chicken Breast with Provalone and Wine Braised Mushrooms 4 chicken breasts, cooked (I cooked mine sous vide at 143 degress for 3 hours) 4 slices provolone cheese 1 large box baby portabella mushrooms, washed and sliced  2 tablespoons butter 1/2 cup white wine 1/4 cup mirin dash balsamic vinegar dash soy sauce 2 cloves garlic, minced 1 tablespoon Au Jus dry mix In skillet, place butter and let melt. Add mushrooms, wine, mirin, balsamic, soy sauce and minced garlic. Let cook and simmer until mushrooms are tender, about 10 minutes. Sprinkle au jus mix over and cook and stir until sauce is slightly thickened. Place your chicken breasts on plates. Top with provolone cheese slice, and pop under the broiler until the cheese is melted and bubbly - just a couple of minutes. Keto Roasted Red Pepper Sauce! In my efforts to eat healthier meals, I made this super easy, flavorful sauce that you can put on almost anything. I made a big batch of this Roasted Red Pepper Sauce and have been using it (so far) on chicken or other meats, veggies, eggs, or with Miracle (Shirataki) Noodles. All I did was blister 2 or 3 seeded red peppers and an onion under the broiler until nicely charred. Pop the peppers and onions in a blender, and add 1 cup cooked cauliflower, 2 or 3 sautéed garlic cloves (with a smidgen of butter), salt and pepper to taste, and a dash of smoked paprika. We've been eating this Caramel Apple Butter for the last couple of months, and boy, is it good! We eat apple butter on toast, pancakes, waffles, scones, ice cream, or even just from the spoon! 🍎🍎🍎🍎🍎🍎🍎🍎 : : : Caramel Apple Butter 20 pounds apples (I used a mix of jelly crabs, eating crabs, and regular apples) 2 cups apple juice or cider 2 -4 cups brown sugar, or to taste 1 - 2 tablespoons cinnamon 1 teaspoon cloves 1 teaspoon ginger 1 teaspoon allspice 1 teaspoon nutmeg 1 tablespoon vanilla 2 -11 ounce bags caramels To large pot, add apples and cider. Cook down until apples are soft. Run through a food mill or sieve. Return to pot. Add all remaining ingredients and cook until thickened, about 1 - 2 hours. Stir often as this can scorch easily. Sous Vide Korean BBQ Beef and Vegetables - our new favorite meal. Tender, juicy slices of beef bathed in tangy Korean BBQ sauce, cooked sous vide for an easy, peasy dinner! I added some sautéed snow peas, onions, carrot, radishes and salted egg yolk broccoli to increase the veggie aspect. Jasmine rice, a sprinkle of toasted sesame seeds and green onion curls finish this meal off perfectly. . . . . . . . . . . Crispy Broccoli with Air Fryer Crispy Chickpeas! I've been working on getting at least 6 cups of veggies in a day, and this broccoli dish has been a winner. It's so easy, thanks to the use of frozen broccoli florets. . . . . . . . . . Crispy Broccoli with Air Fryer Crispy Chickpeas Broccoli seasonings of choice (I like garlic ranch seasoning) drizzle olive oil 1 can chickpeas drizzle olive oil seasoning of choice (I like some season salt and pepper) Fresh squeeze of lemon Preheat oven to 450 degrees. Put your baking sheet in the oven to preheat. Dump broccoli on hot baking sheet, season as desired and drizzle with olive oil. Return baking sheet to oven for about 18 minutes. I like to stir the broccoli occasionally, so it gets an nice even char. Meanwhile, make your crispy chickpeas. Heat air fryer to 390 degrees. Drain and rinse a can of chickpeas. Toss with olive oil and seasoning (I like to do this right in the air fryer basket so I don't dirty another bowl). Cook at 390 degrees F for 12-18 minutes, shaking them a few times during the cook process. Switch the oven to broil, and broil on the top rack for 1 - 2 minutes. Remove and place in bowl. Gnocchi with Vodka Sauce! I think it's safe to say that I've fallen in love with this tomato sauce that just gives you such a punch of tomato flavor.🍅 👊👊🍅 Add in some pillowy, soft gnocchi, and you have a meal fit for a king. . . . . . Gnocchi with Vodka Sauce Gnocchi, for serving 1 medium onion, diced 4 garlic cloves, minced 1/2 cup Parmesan cheese, grated 2 tablespoons olive oil 1 6 ounce can tomato paste (or better yet, get the tube of double concentrated tomato paste!) 3 ounces vodka 3/4 cup heavy cream parmesan cheese, for serving olive oil, for serving Cook gnocchi, saving 1/3 cup boiling water for later. Heat 2 tablespoons olive oil in saucepan over medium heat. Add onion and garlic and cook, for about 6 minutes. Add tomato paste and stir. Continue to cook, stirring constantly, until the tomato paste is a deep red color and starts to brown on the bottom of the skillet (6ish minutes). Add vodka and stir, reducing heat to low. Add 1/3 cup boiling water to heavy cream, and stir (this will prevent your sauce from breaking). Slowly add warmed cream to tomato mixture, stirring constantly, until your sauce forms. Remove from heat. Stir in gnocchi and 1/2 cup parmesan cheese. Stir gently until parmesan cheese is melted (you might have to put it back on the stove for a little bit). Salad Extraordinaire? 🤷‍♀️ Anyways, this dinner salad featured a mix of spinach and arugula, and leftovers from a recent charcuterie board: fresh cherry tomatoes, sun dried tomatoes, toasted almonds, salami, prosciutto, cranberry goat cheese, green onions, sweet peppers, a iceberg lettuce wedge (for extra crunch), avocado, and toast. Parmesan Potato Stacks - a crispy, flavorful side dish that will complete just about any meal! I just thinly sliced Yukon gold potatoes (they needed using up) and stirred them together with some melted butter, dash thyme, dash salt and pepper, and parmesan cheese. Stack up the slices in a muffin tin and bake at 375 degrees F for about an hour. Next time, I would do a few things differently: leave the peels on the potatoes, slice a little thicker (the 2 setting on my mandolin), cook them a little less, use a little less butter, and top generously with parmesan cheese. Potato Pancakes (or Latkes) are one of our favorite foods. One of the most important things I have learned about making potato pancakes is that the potato shreds need to be dry - as dry as possible. To accomplish this, I got out a clean kitchen towel, rolled the potato and onion shreds in the towel and squeezed as much liquid from them as possible. . . . . . . . Potato Pancakes or Latke's 2-ish pounds russet, peeled and rinsed 1 yellow onion  1/2 cup green onions 2 large eggs 3 tablespoons flour 1/2 teaspoon salt 1/2 teaspoon pepper About 1 cup vegetable oil  more green onions for garnish, if desired Using a hand grater or food processor, shred potatoes, working over a large bowl of cold water or frequently transferring shredded potatoes to water (this will help keep them from turning brown). Shred onion and add to bowl (if using green onion, reserve til later). Let potatoes and onions stand in the cold water for 30 minutes. After the 30 minutes, drain potato mixture and wipe bowl clean. Squeeze extra water from a large handful of the potato mixture, then pile the mix onto a clean kitchen towel. Enclose potatoes tightly in towel and twist it to wring out remaining moisture. Repeat to dry all potatoes, using fresh towels if needed. Return potatoes to bowl. Add eggs, flour, green onions, salt, and pepper to bowl and mix well. Pour about 1/4 inch oil into a 10- to 12-inch frying pan over medium-high heat. When a few drops of water sprinkled in the oil pop gently, scoop up 1/3 cup of the potato mixture, then turn it onto a wide spatula. Flatten mixture into a pancake about 1/2 inch thick. Gently slide each cake from spatula into hot oil, 3 to 4 pancakes per batch (try not to crowd the pan!). Cook until the undersides of the pancakes are golden brown (lift with spatula to check), about 3 minutes. Turn and cook until remaining sides are golden brown, about 3 minutes longer. Transfer to paper towels to drain briefly, then keep warm in a 200° oven while you cook remaining pancakes or eat them right away!

Sesame Seared Sous Vide Tuna with Jasmine rice and Pickled Carrots. Easy, healthy and delicious! . . . . . . . . . Sous Vide Tuna Preheat your sous vide cooker to 110 degrees F. Generously season tuna steak with salt and pepper. Place in bag or vessel of choice. I added a dribble of olive oil to the steak. Using displacement method, remove all air from around tuna. Cook at 110 degrees for 30 to 45 minutes (this will give you a meaty and moist cook). Remove and sear or season as desired. I coated my tuna steak with sesame seeds and seared in a hot cast iron pan for just a tiny bit on each side. Cardamom and Maple Glazed Broiled Grapefruit! No, it isn't dessert: it's just your perfect breakfast. Mix together 1 tablespoon of maple syrup and 1/8 teaspoon ground cardamom. Halve a grapefruit. Using a paring knife, loosen grapefruit segments from membranes and pith. Brush maple syrup and cardamom mixture over grapefruit halves. Broil for about 10 minutes. Homemade Almond Milk! Super easy and uses just two ingredients: water and almonds. I decided to make my own almond milk particularly because I liked the simplicity of the ingredients, and I knew exactly what was in it. To make your own almond milk, just take 2 cups sliced almonds and cover with water. Let soak for 6ish hours. Drain. Add to blender, along with 7 cups of water. Add sweetener if desired (options would be maple syrup, a date or two, or stevia). Blend thoroughly. Drain through cheesecloth or nut milk bag. Squeeze bag to get all the milk out! This makes 7ish cups. You could easily halve the recipe, or freeze extras! One of my favorite things at Japanese restaurants are the Tempura Vegetables. Tempura is a light, crispy batter encases vegetables and/or meats. This last weekend, I thought to myself, why not make my own? So made a tempura batter, using flour, potato starch, an egg and cold club soda. Then, I dipped fresh green beans, fresh asparagus, thinly sliced eggplant, onions, mushrooms and par cooked sweet potato in the batter. The oil temperature throughout the cooking process, and the best way to do that is to not put too many vegetables in at once. Raspberry Cruller's! Since January's birthstone is a garnet (and my mom's birthday is in January!), I decided to make up another batch of these Raspberry Crullers to celebrate this luscious color. Crisp on the outside, light and airy on the inside, and drizzled with a gorgeous fresh raspberry glaze. Happy January! . . . . . Raspberry Crullers 1/2 cup butter, cubed 1 cup whole milk 2 tablespoons sugar 1/2 teaspoon salt 1 cup all-purpose flour 3 large eggs 1 teaspoon vanilla extract 4 cups vegetable oil Raspberry Glaze 2 cups powdered sugar, sifted 3 tablespoons raspberry juice (I pressed thawed frozen raspberries through a sieve)  1 teaspoon vanilla In a large and heavy bottomed pot, heat your oil to 350F. Keep your thermometer in the pot so you can adjust the temperature as needed. In a smaller pot over medium heat, combine the butter, milk, and sugar. Heat until the butter is completely melted and it starts to steam. Stir constantly - this should take about five minutes. Quickly mix in the flour with a wooden spoon. Keep mixing and it should form into a large mass. Keep it on the heat for another five minutes and keep stirring. It should start to leave a residue on the bottom of the pot. Remove from heat and keep mixing until it’s no longer hot to the touch. This should take another 5-10 minutes. Mix in the vanilla and then the eggs one at a time. At first, it will look like they don’t want to combine with the dough but just keep working at it. Once your pastry is ready, set it aside and prepare your parchment paper. Cut out squares that are about 5×5 inches. This recipe makes about 15 crullers. Make the glaze: whisk all of the ingredients together. This perfect Brined Sous Vide Fried Chicken will immediately become your favorite fried chicken recipe. I've finally come up with a great fried chicken recipe and technique! (I've been trying to perfect fried chicken for years). 🍗 . . So, here's how it went (and this is more of a method than an actual recipe) (I'll try not to make it too confusing!). I brined 6 pounds of chicken thighs in a brine of 1/2 cup each sugar and kosher salt, about 1 gallon water (or enough to make sure the thighs are covered), and various spices. This brined for 4 or 5 hours in the refrigerator. Then, the sous vide bath. The chicken thighs went into 3 bags and I used the water displacement method to remove all air. Temperature of 165 degrees for about 2 hours. Then, the breading. I used 6 cups flour, and added 1 1/2 to 2 tablespoons of seasoned salt. Then, slowly drizzle 2/3 cup buttermilk into the flour, stirring with a fork so you get a clumpy mixture. Remove thighs from the sous vide bath bags, dip in plain buttermilk, then dredge in the flour mixture, turning to coat thoroughly. Let breaded chicken thighs rest on a wire rack while the oil heats (should be about 10 minutes or so). When the oil is heated (flour should bubble when sprinkled in), start frying chicken thighs 2 or 3 at a time, depending on the size of your pot. Cook for about a minute or two or so on each side until the chicken is golden and crispy (the chicken is throughly cooked already so all you need to do is get the crust golden brown and crispy). Quick Pickled Onions and Cukes! Ever have some fresh cucumbers hanging out in your fridge that need to be used up - yesterday! - but you don't have salad on the menu for a few days? That happened to me the other day, and I decided to slice up the cukes, add some sliced purple onion, garlic and a tangy brine to make some refrigerator pickles. I didn't measure anything, just put all the sliced veggies in my quart jar, filled with apple cider vinegar to about half full, added 1/4 white vinegar, and filled the rest of the way with water. I added a bit of salt, some peppercorns and a sprinkle of dried dill weed. (note: I used quite a bit of vinegar as I was in the mood for a really vinegary pickle: you can reduce the vinegar to have a more mild pickle!). . . . Our latest Sous Vide Brisket: this is a process that I would call "hands off time consuming." But the result is out of this world amazing - tender, succulent, and dripping with juiciness. I did a low and slow approach of setting the sous vide to 135 degrees F and cooking the brisket for 50 hours - this process created the meaty, tender, steak-like texture in the final brisket that I was looking for. . . . . . . . . Sous Vide Brisket 1 beef brisket 1/2 cup kosher salt 1/2 cup sugar hot water, enough to cover brisket dry rub Make brine by combining hot water, salt and sugar in a bag (I used an xl zip lock bag). Stir or shake water until sugar and salt is dissolved. Let cool. Add brisket and brine for 8 hours or so (I did mine overnight). Remove brisket and pat dry with paper towels. Rub generously with dry rib of choice. Vacuum seal in sous vide vessel of choice. Cook sous vide at 136 degrees for 50 hours (a little more or less is ok). After 50 ours, remove from sous vide water bath and chill in ice bath for an hour. Meanwhile, fire up your smoker (we use our #biggreenegg ) to 225 degrees. You could reapply some fresh dry rub if you wish. Smoke for about 3 hours. Remove and let rest for 20 minutes. Chicken breast, gently cooked sous vide in a savory butter chicken sauce. And how about adding in some lightly sautéed fresh vegetables, just to up the healthy aspect and get some more veggies in? Yes, you will love this new and improved Sous Vide Butter Chicken and Vegetables! . . . . Sous Vide Butter Chicken -sauce: 1/4 cup butter 1 medium onion, diced 3 cloves garlic, minced 1 tablespoon grated fresh ginger 1 tablespoon turmeric 1 tablespoon chili powder 1 tablespoon ground coriander 1⁄2 teaspoon ground cinnamon 1⁄4 teaspoon cayenne pepper 1 teaspoon salt 1 1⁄2 cups tomato sauce, canned 2 pounds boneless, skinless chicken breasts, cut into 1" cubes 1 cup heavy cream 1⁄3 cup minced fresh cilantro -rice of choice, to serve (I used Jasmine) -sautéed veggies of choice, to serve (I sautéed a mix of onion slices, fresh green beans, snow peas, cauliflower, sweet peppers and mushrooms) . . . Melt the butter in a saucepan over medium heat. Add the onion, garlic, and ginger and cook for about 5 minutes, or until the onion is translucent.  Stir in the turmeric, chili powder, coriander, cinnamon, cayenne pepper, and salt. Heat for 1–2 minutes.  Pour in the tomato sauce and cream and bring to a low simmer. Cook, stirring often, for about 5–7 minutes. Remove from heat and let cool to room temperature.  Fill the water bath, stock pot, or cooler with water (however you use your sous vide setup). Set your sous vide machine temperature to 146 degrees F.  Place the chicken in a gallon zip lock bag, or sous vide vessel of choice. Pour in a good 1 cup of the cooked sauce, and toss to coat the chicken evenly. Place the remaining sauce in the fridge. Vacuum seal bag or use displacement method to remove all air from the bag. Try to make the chicken cubes a flat of layer as possible.  Place the chicken in the water bath and cook sous vide for 2 -3 hours (I cooked it closer to 2). Ooey, gooey, cinnamon rolls - what could be better? I made an extra pan of cinnamon rolls at Christmas and popped it in the freezer for cinnamon rolls later! I even froze a container of Cream Cheese Frosting. I'll just thaw in the refrigerator overnight, and whip the next morning for an easy, easy batch of beautiful cinnamon rolls! This is one of my kitchen time saving tips: make extra and freeze for later. I do this with everything that freezes well: breads, pizza crust, pizza, soups, some casseroles, meat, ect... It saves a lot of time! Carbonara Trumpet Pasta . 1 pound dry trumpet shaped pasta 6 slices bacon, sliced into small strips 2 tablespoons extra-virgin olive oil 2 eggs 2 to 4 garlic cloves, minced 1/2 cup freshly grated Parmesan 1/2 cup freshly grated Romano 3 or 4 sliced green onions Salted egg yolk, grated (or, extra parmesan for grating over the top) . . . Bring a large pot of water to a boil and season with salt. Cook pasta according to package directions. Reserve 1 or 2 cups of the pasta water before draining. Set aside. Meanwhile, in a large saucepan, cook bacon over medium heat until crisp, about 7 to 10 minutes.. Reserve 2 tablespoons of the grease and drain extra. Set bacon aside. In a mixing bowl, whisk together egg yolks, eggs, parmesan and Romano. Over low heat, toss drained pasta with cooked bacon, and 2 tablespoons of bacon grease. Pour egg mixture in, along with reserved pasta water and toss together with pasta for two minutes. Baby Smashed Purple Potatoes! A perfect, unique side dish for your table. . . . I boiled baby purple potatoes for about 25 minutes. Then, I placed them on a baking sheet, smashed each one, and brushed a mixture of butter, a little olive oil, chopped fresh herbs, pink Himalayan salt, freshly ground pepper, goat cheese crumbles, grated parmesan cheese and bacon over each potato. I broiled them until they were a bit crispy on the tops, probably about 10 minutes (I put the pan on the second rack from the top of the oven). . .🥔🥔🥔🥔🥔🥔🥔🥔🥔 . They were soooooo good, I'm happy to report! Crispy on the outside, soft in the middle, with a lovely seasoning, cheesy goodness, and the freshness from the herbs. Easy Yeast Bread - aren't those lovely words!? . . I love these types of bread because - as it says in the title - they are so easy! Stir together some ingredients, let them sit overnight, plop the dough into a hot dutch oven, bake, and that is it! . . This cooking technique gives the bread a great crust and a moist, chewy interior. . . . . . . Oh So Easy Overnight Light Wheat Bread 2 cups white or unbleached bread flour 1 cup wheat flour 1 1/4 teaspoon salt 1/2 teaspoon yeast 1 1/2 cups water + 2 TB Stir together all ingredients. The dough might seem a little dry, but don't worry. Cover, let sit on counter overnight or for about 12 hours. At least a half-hour before dough is ready the next day, heat oven to 450 degrees. Put a 6- to 8-quart heavy covered pot or dutch oven (cast iron, enamel, Pyrex or ceramic) in oven as it heats. When dough is ready, carefully remove pot from oven. Pour dough into pan. Shake pan once or twice if dough is unevenly distributed; don't worry too much - it will straighten out as it bakes.  Cover with lid and bake 30 minutes, then remove lid and bake another 15 to 30 minutes, until loaf is beautifully browned. When the loaf is done (I bake to an internal temp of 190 to 210 degrees F.), remove pan from oven. Oh-so-carefully remove the from the pan and cool on a rack. Prosciutto Wrapped Fresh Ginger Dates with Balsamic Reduction - My mom recently went on a trip to southern California to visit my grandma. One of the treats she brought back with her were some California dates. I was so excited about them, and wanted to make something that really showcased the dates. These little bites were a perfect seasonal appetizer! . . I had some prosciutto in the freezer, and decided I wanted to make prosciutto wrapped dates. But what else could I do to make them a little more special? Hmmmm... I decided to make a little seasoned cream cheese filling. . . . . . . . . Prosciutto Wrapped Fresh Ginger Dates with Balsamic Reduction 25 pitted dates 1 package prosciutto, sliced in half lengthwise 2 ounces softened cream cheese 1/4 cup freshly grated Parmesan cheese 1 teaspoon freshly grated ginger 1/3 cup balsamic vinegar 2 tablespoons honey a dash of salt and freshly grated black pepper 1/2 teaspoon freshly grated ginger 25 pecan halves, toasted Preheat oven to 350 degrees F. In a sandwich bag, mix together cream cheese, Parmesan cheese, and ginger. Set aside. Cut along one side of each date and pipe some of the cream cheese mixture into the center of each date. Top with a pecan half. Slice each piece of prosciutto in half lengthwise. Wrap each date loosely in a strip of prosciutto. Place on an oven-safe wire rack that is placed on top of a foil lined cookie sheet. Bake for 20 minutes, then set oven to broil, move cookie sheet to the top rack and set the timer for 3 minutes. Meanwhile, make your balsamic reduction. Place balsamic vinegar, honey, salt, pepper and ginger in a small sauce pan. Bring to a simmer over medium heat and let bubble while whisking till the balsamic reduce by about 75 percent - this will take 5 to 10 minutes. And yes, all with a dahlia on my head (this photo is from our summer) * For those of you who don't know, my name is Terra, and welcome to The Kissing Crust! Thank you to those who have been following me since I started my Instagram account in August 2018! I'm just a simple gal that loves to cook, bake and experiment in the kitchen. The Kissing Crust is how I can share my kitchen experiences with each of you (since I don't have time for a full-fledged blog right now)! * * I live way up in the North Woods🌲🌳🌲🌳 with my husband, two daughters, ages 4 and 2, and a fish🐠. I work part time as a nurse. 💉 * * The name "The Kissing Crust" came from an obscure baking term which refers to the edge on bread where two loaves have baked together. In between our regular jobs, my husband and I love to read to, cuddle and play with our girls. Or, they could even *be* your dinner. . . . Bacon Wrapped Scallops 16 large scallops 8 slices thick sliced bacon, cut in half crosswise Olive oil for drizzling Freshly ground black pepper, to taste Himalayan salt, to taste Preheat oven to 425°F. Line a baking sheet with parchment paper or a silpat. Set aside. Wrap each scallop in a half slice of bacon and secure with toothpick. Repeat. Drizzle olive oil over each scallop and season with pepper and kosher salt. Arrange scallops in a single layer on baking sheet. Ok, now the holidays are done and it's time to start eating a little lighter! How about this Shrimp Pad Thai? Chock-full of peas, edamame, green onions, carrots and shrimp, and tossed with a slightly spicy homemade pad thai sauce, your taste buds will be thanking you! . . . By the way, it's as easy as pie to switch out the shrimp with chicken, tofu, steak, ect.... and just as tasty! . . . . . Shrimp Pad Thai 4 ounces rice noodles Boiling water to cover noodles 8 ounces shrimp, peeled and detailed 2 tablespoons sesame oil 1/2 to 1 cup sliced green onions 3-4 garlic cloves, minced 1 teaspoon minced ginger 2 eggs, whisked 3 tablespoons fish sauce 2 tablespoons brown sugar 3 tablespoons rice wine vinegar (I like seasoned) 1 tablespoon soy sauce juice of ½ lime, plus more for garnish finely chopped peanuts, for garnish chopped cilantro, for garnish Place rice noodles in a bowl and add enough boiling water to cover. Let sit for for 6- 8 minutes, until tender, then drain. Heat your wok and add sesame oil. When hot, add shrimp and cook until cooked through and pink. Remove to bowl. Add a little more oil if needed. Add green onion, garlic and ginger, and cook and stir for a few minutes.  Make a well in the center of the wok, and add the whisked eggs. Scramble the eggs and break them apart into little bits, letting them brown just little, and mix them into the shallots and garlic. Add drained, partially soft noodles, and toss with egg mixture,stirring and flipping constantly for a few minutes, or until the noodles become soft and pliable. I like to add my sauce fixings at this time too: the fish sauce, sugar, rice vinegar, and soy sauce. Cook until the noodles are soft but chewy, adding just a little water if it seems too dry. The holiday season just isn't complete without a glass (or two....) of Eggnog, whether it's store bought, homemade, or cooked ..... sous vide? . . Eggnog is a perfectly silky, custardy drink that tastes like Christmas in a glass (with or without brandy, or rum, ect...). I use my Mom's recipe (which might have originally been my Grandma's recipe? I'll have to ask) every year. . . This year, however, I've taken this traditional eggnog recipe to new levels: Sous Vide Homemade Eggnog. No more standing at the stove, stirring the custard and trying to make sure it doesn't burn. No more texture issues. No more trying to coat the back of the spoon perfectly. . . . We're talking easy, peasy: using your favorite eggnog recipe, mix up your custard base, transfer to canning jars, and cook sous vide at 165 degrees Fahrenheit for about an hour. Let jars rest for about 15 minutes on the counter, then chill your eggnog in the fridge overnight. . . Top with whipped cream, and a fresh grating of nutmeg, if desired. Use-What-You-Have-In-Your-Kitchen Ice Cream Parfait What do you do when you want a fast, delicious, beautiful dessert? When I had this issue, I opened cupboard doors, the pantry doors, the refrigerator door, and the freezer door, trying to see what I had around. I decided to make a kind of ice cream parfait in a wine glass. It turned out beautiful and oh-so-tasty. One of the things I really liked about this idea is that you can just make this with ingredients that you have on hand! Plus, it was really quick and easy to put together. Use-What-You-Have-In-Your-Kitchen Ice Cream Parfait a scoop or two of ice cream (I used vanilla) fresh strawberries, sliced (you could probably use any fruit) caramel topping (or chocolate, or fudge, or butterscotch .... you get the idea!) toasted pecans (or any kind of nut) whipped cream (if you want) what else would you like? Layer ingredients in a wine glass, bowl, or whatever you would like to use. Enjoy immediately (or you could place the desserts in the freezer for a bit of time if you needed to make them early. Sous Vide Tuna Bowl - yes, this meal really is the stuff of your dreams. Perfect sous vide cooked tuna, jasmine rice, a soft boiled egg, pickled peppers, pickled carrots and a squeeze of fresh lime. This was my first time cooking tuna via the sous vide method. I wanted to experiment, and I'm happy to say it was a successful experiment. Let me know if you try it! Sous Vide Tuna Preheat your sous vide cooker to 110 degrees F. Generously season tuna steak with salt and pepper. Place in bag or vessel of choice. I added a dribble of olive oil to the steak. Using displacement method, remove all air from around tuna. Cook at 110 degrees for 30 to 45 minutes (this will give you a meaty and moist cook). Remove and sear or season as desired. I coated my tuna steak with sesame seeds and seared in a hot cast iron pan for just a little bit on each side. Good morning! Do you like oatmeal for breakfast? Not so much? Have you ever tried steel cut oats? In addition to tasting better and having a more pleasing texture, steel cut oats are the least processed type of oat cereal. We first heard about this cereal from Alton Brown, and have been hooked ever since we first tried it. 🥣 . . . The finished oats, topped off with buttermilk, cinnamon and a little brown sugar (I know the buttermilk sounds weird, but it truly does give the oatmeal a delightful tang). . . . . . Steel Cut Oats (adapted from Alton Brown's recipe) 1 tablespoon butter 1 cup steel cut oats 3 cups boiling water buttermilk brown sugar cinnamon salt, if desired In a large saucepan, melt the butter and add the oats. Stir for about two minutes to toast. Add the boiling water and reduce heat to a simmer. Cook uncovered at a low simmer for 30 minutes, without stirring if possible (I did stir it a couple of times just because I couldn't help it). After the 30 minutes are up, do a little taste test to make sure the oats are at a good consistency and that they are cooked well enough for you. If they are good to go, spoon into desired number of serving bowls and pour on some buttermilk, add some brown sugar, and a sprinkle of cinnamon. Note: From what I have read, you aren't supposed to cook grains with salt but salt them afterwards - something about that it inhibits the amount of water each grain will take up. Anyways, I always put a sprinkle of salt on top of my cooked oats along with the buttermilk, brown sugar and cinnamon. Otherwise I think they are a bit bland. Note #2 : As I said earlier, these cooked oats warm up excellently for the rest of the week - just spoon out a bowlful and microwave for a minute or so until warm. It's just like a big, chewy peanut butter cookie. Add in the no bake creamy peanut butter cheesecake, and top with white chocolate reeses mini peanut butter cups. 🤤🤤🤤🤤 . . . . Creamy Peanut Butter Cheesecake For Crust: 2 cups creamy peanut butter 2 eggs 2 cups sugar Preheat oven to 325 degrees F. Combine peanut butter, eggs and sugar. Spread evenly into bottom of greased 8inch spring form pan. Bake for 35 minutes or until toothpick comes out clean. Cool completely on wire rack. For the Cheesecake: 20 ounces cream cheese, softened 1 1/2 cups creamy peanut butter 2 cups powdered sugar  1 8 ounce container cool whip, thawed (or make your own! recipe follows) In large bowl, beat cream cheese, peanut butter and powdered sugar until smooth. Spread a nice spoonful over crust, and sprinkle with peanut butter chips. Top with remaining cheesecake mixture (keep back a bit if you want to use it to decorate the top). Let chill at least 4 hours. To serve, remove cheesecake from pan and place on platter. I was just tickled pink to create this amazing food platter, and I think your guests would be tickled pink to enjoy this smorgasbord during New Years Eve festivities! All you have to do is arrange a variety of meats, cheeses, and crackers on some sort of platter, plate, or cutting board, ect....
