We're just about done with our blackberry harvest in the garden, and I wanted to have a special, finale dessert featuring our remaining blackberries. I decided on a Japanese Blackberry Cake Roll. Lighter than air cake, very slightly sweetened whipped cream, and blackberries. What could be better? 🍥🍥🍥🍥🍥🍥🍥🍥 Japanese Blackberry Cake Roll 1/4 cup canola oil 1/4 cup milk 1 egg yolk 2 tablespoons sugar 2 tablespoons all purpose flour 2 tablespoons rice flour 5 egg whites 2 tablespoons sugar Whipped Cream Blackberries (or fruit of choice) Preheat oven to 320 degrees. Lightly spray 11x11 pan with cooking spray (I made my own out of tinfoil). Mix together oil, egg yolk, milk and sugar. Sift together flour and rice flour. Stir together wet and dry ingredients. Place egg whites in medium bowl. Whip to medium stiff peaks, gradually adding 2 tablespoons sugar. Fold egg whites into mixture. Bake in prepared pan for 15 to 20 minutes or until cake springs back when you touch it. Dust kitchen towel with powdered sugar, and roll cake up in it and let it cool. Spread cake with whipped cream, and place a line of blackberries down the side. Roll up. Top with dollops of whipped cream and more blackberries. Sous Vide Fajita's...... try not to drool as you take a gander at this meat! First, I took a 1 1/2 pound flank steak, dressed it with my special seasoning mix, and cooked it sous vide for 70 hours at 131 degrees F. (YES, you read that right - 70 hours!). A super quick and hot sear in my trusty ole' cast iron skillet, sliced the meat across the grain, and done. 😋It's Fajita Time.😋 🌯🌯🌯🌯🌯🌯 Sous Vide Fajita's 1 1/2 pound flank steak 1 teaspoon chili powder 1 teaspoon smoked paprika (regular is fine, too) 1 teaspoon onion powder 1 teaspoon garlic powder 1/2 to 1 teaspoon cumin (to taste) 1 teaspoon sugar 1 teaspoon oregano 2 sweet peppers, sliced 2 large onions, sliced tortilla's Toppings, if desired: sour cream cheese avocado salsa In small bowl, stir together chili powder, paprika, onion powder, garlic powder, cumin, sugar, and oregano. Pour onto flank steak and pat in firmly. Place steak in bag of choice and cook sous vide at 131 degrees for 60 - 70 hours. I cooked it at 70 hours, and was really happy with that. Heat up your cast iron skillet until it is VERY hot. Sear flank steak on both sides quickly, so as to not overcook. Remove from pan and sear peppers and onions. I like to add like a 1/2 cup of the juice from the sous vide cooking bag to the peppers and onions. Sear until slightly charred. Slice the meat across the grain. Ever since I was a kid, we have made these Dutch Babies.  The recipe originally came from my Grandma, and she doesn't remember where she got it. 'Dutch Baby' is really nothing more than a puffed pancake, and I know there are many ways to make puffed pancakes. This is just how we've done it! The next thing I would like to try are savory Dutch Babies..... they sound delicious. 😋😋🍓🍒🍑🍐🍏😋😋 Grandma's Dutch Baby 6 eggs 1 1/2 cups milk 1 1/2 cups flour 1/4 teaspoon salt 1/2 teaspoon vanilla 1 tablespoon sugar 1/4 cup butter Toppings of choice: syrups, fresh fruit, whipped cream, powdered sugar, ect... Preheat oven to 425 degrees F.  Place 10 to 12 inch cast iron pan in oven with the 1/4 cup butter.  Let it melt while you are making the batter. For batter, blend eggs in blender one minute.  Add milk, salt, vanilla and sugar and blend for 30 seconds.  Add flour and blend one minute more.  Pour over melted butter, and return to oven for 20 to 25 minutes, or until pancake is fluffy and high. Just had to share a fun little plant we grew in the garden this year: Mexican Sour Gherkins. They are little cucumbers the size of grapes. They taste like a crispy, sour cucumber. Which Hummus Camp are you in? I know some people who just love it, and some people who would rather pass. In our home🏡, we love hummus. Smooth, creamy, nutty, with just a hint of garlicky spicy flavor. We eat hummus on Wraps 🌯, Sandwiches 🥪, Pitas 🥙, on crackers, and on miscellaneous fresh vegetables 🥕🌶🥒🥦 If you are a Hummus Fan, how do you eat it? ☆☆Smooth and Creamy Hummus ☆☆ 2 cans chickpeas, drained Water to cover chickpeas in saucepan 1/2 cup tahini 3 or 4 garlic cloves, peeled 1/4 cup lemon juice 1/2 to 1 teaspoon salt (to taste) 1/4 cup olive oil 1/2 teaspoon paprika 2 tablespoons plain Greek yogurt 1/4 to 1/2 cup water, needed (I use the leftover cooking water from cooking the chickpeas) In saucepan, place chickpeas and enough water to cover. Bring to a boil and let simmer for about 15 minutes. Remove chickpeas to a blender or food processor ( I love using my vitamix). Add all ingredients. Using tamper, blend until very smooth, this will take several minutes. Adjust water as needed to obtain a smooth, creamy hummus. 🚨Note🚨 This makes a large batch. Ramen Bowls 🥢🍜 are a great main meal to have in your recipe arsenal!  What I love about them is how adaptable they are to different tastes, and how adaptable they are to what you have in your fridge. For example, this is what we had for our recent Ramen Bowls: misc veggies, pickled daikon radish, sliced sous vide chicken breasts, bean thread noodles, and medium boiled egg. I placed all this atop a bowl of homemade broth. Completing the dish are my husband's handmade chopsticks. 🥢 The possibilities are endless!  A bit of leftover shrimp or beef?  Some fresh greens?  Hot or sweet peppers?  Throw them on there!  I also love adding quick pickled vegetables. You can make your own broth or stock, or purchase it. I collect stock-making ingredients (like chicken carcasses and clean veggie scraps) in a couple of bags in the freezer, and make and freeze a bunch of stock and broth every couple of months. You can also purchase different varieties of ramen noodles. My husband had a special request for me the other day: Hand Pies. Specifically, Blueberry Hand Pies with a Glaze. I was excited and set to work. I decided to infuse the pastry dough with cardamom, because, well, why not?🍃🍂🍁🍁 *fall baking* 🍁🍁🍂🍃 Here's how it went down: ♡♡♡♡♡♡♡♡♡♡ Crust: my regular pie crust recipe with cardamom Filling: blueberry pie filling with 1 cup of fresh berries stirred in Glaze: powdered sugar, milk and a little vanilla extract ♡♡♡♡♡♡♡♡♡♡ I deep fried the hand pies, and as soon as they were done, I dunked the hot little pies in the glaze. The other day, I was looking for a quick appetizer for entertaining some unexpected company. Going through the refrigerator and pantry, I found some tasty ingredients and came up with these Smoked Cream Cheese Peach Appetizers. I used some homemade tortilla crackers (just a little oil and salt on tortilla shells and baked at 350 degrees for 6 or 7 minutes), and added a little splooch of cream cheese. Then, a drizzle of my homemade Peach Jam. 🍑Next, a piece of crispy bacon.🥓 Bacon makes everything better, right? 😋 I topped the appetizers off with a smoked almond. The saltiness and smokiness of the bacon and almond toned down the sweetness of the jam and turned the rather sweet appetizer into more of a savory appetizer. Remember the other day when I made that "Loose" Linguica for my grandma's lasagna? I specifically made extra, so I would have leftovers. This morning I wanted to try to make a Savory Portuguese Linguica Breakfast Bowl. I made scrambled eggs (a staple around here), and added the linguica, fried purple onions, red wine balsamic glazed baby portabella mushrooms, fresh parsley, cherry and yellow pear tomatoes. Our local fair has come and gone, but I recently had a hankering for some more of those luscious (ok, yes!) a bit *naughty* cheese curds. 😜 I decided I'd try to make some Tempura White Cheddar Cheese Curds, with the hopes they would be a little lighter than the traditional batter. Mmmmm, my Grandma's Portuguese Linguica Lasanga brings back sweet memories of traveling to her home in California to visit as a child. 🍅🍅🥚🥚🍅🍅🧀🧀🍅🍅 One thing I loved about my grandma's lasagna was how she added sliced hard boiled eggs into the layers. I know, I know, it sounds WEIRD. But for some reason it is surprisingly good. If you don't mind being adventurous, just give it a try. :) 🥚🥚🥚🥚🥚🥚🥚🥚 Let me know if you try adding sliced hard boiled eggs to your lasagna! I'd love to hear what you think! My Grandma's Portuguese Linguica Lasagna 4 cups marinara sauce 2 cups crumbled or sliced linguica sausage 1 box lasagna noodles, cooked according to package instructions 6 hard boiled eggs, sliced, *optional!* 2 cups ricotta cheese 2 cups mozzarella cheese Mix marinara sauce and sausage. Mix ricotta and mozzarella cheeses. In 9x13 pan, place 1 layer marinara mix, 1 layer pasta, 1 layer marinara mix, 1 layer cheese mix, sliced hard boiled eggs if desired. Some of my fondest childhood memories are traveling to California to visit my Portuguese grandmother. She always made us Portuguese Lasagna, and the highlight of the lasagna was the sliced Linguica (a delicious Portuguese sausage). The other day, I wanted to make some lasagna. I haven't made any for a several years. I really wanted my grandma's lasagna. But how could I put linguica in mine? There was no way I could get it up here in the Sticks of North America! I decided to try to make my own - because why not? I haven't gotten into stuffing sausages yet and don't have the gear, so I decided to just make a Loose Linguica. I researched the spices and herbs commonly found in linguica, and talked to my grandma. I came up with this recipe, and was very happy with it! Portuguese "Loose" Linguica 2 pounds ground pork 2 tablespoons smoked paprika 1 teaspoon pepper 2 - 3 teaspoons salt 1 tablespoon minced garlic 1 teaspoon sugar 1 1/2 teaspoons dried oregano 1 tablespoon liquid smoke 1/2 cup red cooking wine Stir all ingredients together. Cook, stirring occasionally, until pork is fully cooked. I used this for my lasagna! Fermenting is something I've been interested in for a long time. I started out years ago, making my own Sauerkraut. I used to ferment in my great-grandma's old crock, but had too many problems with molding. I've since started fermenting in 1/2 gallon glass jars with a silicone airlock - just right on my kitchen counter - and it has worked great. But why ferment, you might ask? Is sauerkraut better for you than just eating cabbage? Here's what I understand: that during the fermenting process, millions and billions of beneficial bacteria are being produced. These bacteria are called probiotics and are very beneficial to our normal body bacteria. Think of the tangy sauerkraut-y flavor - that's the good stuff! ☆To make my sauerkraut, I used four medium sized heads of cabbage from the garden. I thinly sliced them on my mandolin, making sure to remove the outer leaves, cores and any large pieces. Place in large bowl. Than, I mixed 4 tablespoons of pink Himalayan salt in with the cabbage (about 1 tablespoon per cabbage head, I did use a scant 1 tablespoon per head). Stir thoroughly. Take a clean 1/2 gallon jar, and start packing the cabbage into the jar. I used the tamper from my vitamix and it worked beautifully. You need to extract juice from the cabbage, so pound, stomp, pound. Add another tong full of cabbage, and pound some more. I did this a total of about 5 times. You want to make sure all of the air is out of the jar and you have enough cabbage juice to cover your shredded cabbage. Seal with your airlock and let ferment for about one month, depending on the temp of your kitchen. After a month, taste it and see if the tanginess is good for your taste. The sauerkraut can sit for up to 6 months, as long as the sauerkraut is still covered with brine (I usually put this in my refrigerator after it is done fermenting). You can can the sauerkraut, but you will lose the beneficial probiotics in the heating process. We are just finishing up the last of the lug of peaches we bought the end of August. This morning, I decided to make Cardamom Spiced Oatmeal with a sliced fresh peach, a few slivered almonds and blackberries from the garden. It is really simple: to my regular old fashioned bowl of oatmeal, I just add a sprinkle of cardamom! Cardamom is one of my favorite scents, especially during the fall season. I actually leave my jar of cardamom right on the front of my spice shelf so I can grab a whiff here and there when I am in the kitchen. 😏If there was a cardamom perfume, it would be my fall scent. The other day, my husband and I were in the mood for something with the theme of chocolate chocolatechocolate.  Heavy...rich...chocolatey...chocolate-ness. Did I mention chocolate? 🍫🍫🍫🍫🍫🍫🍫 So I decided to make a Almost Flourless Chocolate Torte. The reason it is *almost* flourless is because I decided to add a little chocolate shortbread crust. The dessert is topped with a layer of chocolate ganache and a tiny sprinkling of kosher salt - we found that the contrast between the rich chocolate and the salt was delightful. A piece of kosher salt with each bite of torte was the perfect way to eat it. Note: this dessert is very rich and chocolatey - it would be a good idea to cut very slender pieces and have guests over to share your dessert! Also, if you don't mind eating it for a while, it will keep well in the refrigerator for about a week. (Almost) Flourless Chocolate Torte crust:  1 cup flour 1/4 cup cocoa powder 1/4 cup powdered sugar 1/2 cup cold butter torte:  1 1/3 cups water 1 cup sugar 18 tablespoons butter 4 ounces unsweetened chocolate 8 ounces bittersweet chocolate 12 ounces semisweet chocolate 8 large eggs ganache 1 cup heavy whipping cream 8 ounces bittersweet or semi sweet chocolate, chopped For crust: In the bowl of a food processor, combine flour, cocoa powder and sugar. Pulse to combine. Cut butter into several pieces and add to flour mixture. Pulse until mixture is sandy and butter is well-incorporated. Pour crumb mixture into a buttered 10-inch springform pan. Press into an even layer on the bottom of the pan. Wrap 2 layers of heavy-duty foil around outside of pan, bringing foil to top of rim. So, I was one of those that jumped on the Instant Pot bandwagon. I found one for sale on a Black Friday, and thought, wow, this will make my life easier! And guess what...... 😮 It sure did! I am very glad I bought it! I don't use the Instant Pot enough, but every time I do, I love it even more. Today it was Pulled Chicken with Feta Coleslaw. Easy, peasy! And delicious. Even my two year old gobbled down a whole sandwich. 👧 Instant Pot Pulled Chicken with Feta Coleslaw 1 pound chicken thighs 1 pound chicken breasts 1 cup BBQ sauce 1 onion, grated (use juice too!) 2 teaspoons Worcestershire sauce 1 can green chillies, with juice 2 - 3 tablespoons honey Place the chicken thighs and breasts, BBQ sauce, grated onion, honey, green chilies, and Worcestershire sauce in the instant pot. Stir to combine. Place the lid on the instant pot making sure the valve is in the sealing position. Press manual (high pressure) and set to 15 minutes. Let the pressure naturally release for 10 minutes. Shred. Meanwhile, make your coleslaw. 1 bag shredded cabbage about 1/3 cup mayo 1/4 cup vinaigrette (I used Avocado Oil Garden Herb) 1/3 cup feta cheese sprinkle celery seed To make sandwiches, put a scoop of pulled chicken on bun. Top with coleslaw. One of my favorite recipes of all time: Bacon Wrapped Venison Tenderloin. It just melts. In. Your. Mouth. 😋😋 I've now used up all my venison..... I'm going to try to get my hands on some more this fall! 🤲 Bacon Wrapped Venison Tenderloin 2 lbs venison tenderloin (or any tenderloin) 1/2 lb thin sliced bacon 2 cups dark brown sugar 1 1/2 cups soy sauce Mix brown sugar and soy sauce in a bowl. Put tenderloin in a cooking tray or plastic bagand pour sugar/soy sauce over loin. Roll loin in mixture, completely covering it. Let meat marinate in refrigerator overnight. Remove loin and place on cutting board (save marinade). Wrap a piece of bacon around the very end of the tenderloin, securing with a toothpick. Repeat process until entire tenderloin is wrapped in bacon. Drizzle remaining marinade over tenderloin. You can continue to baste the tenderloin with the marinade throughout the cooking process with either a brush or turkey baster. 8. Place on center rack in oven and bake at 350 degrees F for 25 - 35 minutes (25, rare and 35, medium). For a crispier crust and bacon remove loin from oven and place directly on a grill or hot cast iron pan over medium high heat. Sear the bacon quickly. Remove from oven and place on cutting board. So we were grilling on our Big Green Egg over the last weekend, and I had to share with you guys what my girls and I made for my husband Charlie last Christmas! (*hint, hint, Christmas is coming*). 🎄🎄🎄🎄🎄🎄To celebrate our Big Green Egg and my husband Charlie, who does a lot of the grilling and smoking, I purchased a large white platter. Then, I painted our grilling table setup with the Green Egg. Then, my girls each put a "fire" handprint on the grill. I coated the whole thing with a food grade porcelain protective coat. You could easily paint a different grill too, like if you have a Weber or ect ... We've had a bunch of corn lately, and I don't know why, but I've just been in the mood for some Corn Chowder. Maybe it is the cool nights and 60 - 70 degree lovely *early* fall days? I'm not sure about you, but I love my corn chowder with potatoes. So the girls and I went out to the garden dug a bunch of potatoes and onions, and we set about making our corn chowder. I love involving my four and two year olds in whatever I am doing (though sometimes I do have to admit that it takes a lot longer to get a task done). 🤔 But I love how interested they are in whatever we are doing! 🌽🥔🐓🌽🥔🐓🌽🥔🐓🌽🥔 Chicken Corn Chowder with Lime Cream Topping 2 tablespoons butter 1 tablespoon olive oil 1 large sweet onion, chopped finely 8 cups corn (preferably fresh cut off cob) 2 or 3 minced garlic cloves 1 jalapeno pepper, seeded, membranes removed and finely chopped 1/4 cup flour 5 cups chicken stock 4 potatoes, peeled and chopped 1 cup milk salt and pepper to taste 1/2 cup heavy cream 2 cups shredded or diced cooked chicken Put butter and olive oil in stock pot. Add onion, garlic and jalapeno pepper and sauté until onion is soft. Add flour, and cook and stir for 1 - 2 minutes or until bubbly. Add stock, milk, corn and potatoes. Cook for about 30 minutes, or until corn is cooked and potatoes are soft. Add chicken. Adjust seasonings as desired. This chowder is delicious just as it is, but if you want to add that extra special touch, make this Lime Cream Topping to finish your bowl of chowder off: mix together 1/3 cup mayonnaise, 1/3 cup crema (or sour cream), 1/2 cup feta cheese, zest and juice of 1 lime, and a sprinkle of Tajin chili-lime seasoning. You know how you get *in the mood* for something sometimes? The other day, I was in the mood for a good old fashioned Ham Salad for lunch, like my Gramma always used to make. As I was organizing the freezer, I noticed there was some frozen ham tucked away. I happily pulled it out, and was on my quest for a tasty ham salad sandwich. I always make my ham salad in the food processor, just to make sure all the ingredients have a good consistency (also its much easier than the endless chopping, especially when I needed a quick lunch!). I served the ham salad on a bun with some fresh spinach, and it was delicious. It brought me right back to the days when I was a kid and my Gramma was so excited to make ham salad after Easter dinner. 😋🥪🥪🥪🥪🥪🥪🥪😋 Ham Salad ●leftover ham chunks, about 2 cups worth ●1 onion, roughly chopped ●3 - 4 stalks celery, roughly chopped ●squirt asiago peppercorn dressing ●squirt ranch dressing ●squirt honey mustard dressing ●dash salt ●4 baby pickles ●1 or 1 tablespoons pickle juice ●about 1 teaspoon Mirin Pulse ham chunks in food processor slightly. Add remaining ingredients, pulse a few more times until the mixture has a 'ham-salad' texture. Try it. Too dry? Add a little more of one of the dressings. Need a little more spice? add some more pepper. Need a bit of sweetener? - add a hint more mirin. Let chill for an hour or two if possible. For my four-year-olds birthday party, we decided to do a science experiment for our party favors. Rock candy! It was pretty easy to make, tasted great and was fun to do with her. It was a great exercise in patience, as well. We let ours sit for about two weeks. It was fun to watch the sugar crystals grow! We flavored ours with blueberry extract, but the possible flavors and flavor combinations are endless, depending on what flavor extracts and food coloring options you have. We did all different kids of colors. The other thing you have to decide is if you want to grow the crystals on a wooden skewer or on string. We decided to grow them on wooden skewers to make them easier to eat (I purchased the skewers online). To hold up the wooden skewers, I used clothes pins. If you decide to grow the crystals on string, you will need pencils or something to wind the string around to hold them up. 🍡🍡🍡🍡🍡🍡🍡 Homemade Rock Candy 4 cups water 8 cups sugar 1-2 teaspoons flavoring several drops food coloring of choice The first thing to do is collect your supplies: glass jars or glasses, wooden skewers and clothes pins, or string and pencils. Make sure the jars or glasses are cleaned. If using wooden skewers, balance the wooden skewer across the top of the jar to hold it in place. Make sure there is at least an inch from the end of the skewer to the bottom of the jar. If using string, cut each string a few inches longer than the jar and tape one end to a pencil. Place the pencil across the top of the jar, and wind the string until the end of it is hanging at least one inch from the bottom of the jar. The other day, I was looking for yummy ways to eat a pork loin roast. I got the idea of making a "take" on a Cuban Sandwich, with homemade mini hoagie rolls, thinly sliced sous vide pork, quick pickled cucumber slices, homemade mustard, a mixture of sautéed mushrooms, onions and peppers, cheddar cheese (since it was all I had), and fire roasted red pepper strips. As you can see from the photo, the sandwich was ooey, gooey, glistening and on-so-delicious! Sous vide Pork Loin Roast. For the pork, I soaked a 10 inch long pork loin roast in a light brine for about 6 hour, and cooked the roast sous vide at 138 degrees for two and a half hours. Than, a super quick sear in a super hot cast iron pan. You can see the juiciness glistening on the slice! So I've finally had my first experience making a dessert with my sous vide immersion cooker! I made sweet, lovely little personal pumpkin pies out of a pumpkin we grew in our garden. The pumpkin pie itself was so luscious, creamy and not like any pumpkin pie I'd ever tasted. I topped the pie with a little graham cracker hazelnut streusel (to add a little crunch) and freshly whipped cream. 😋 They were a hit!!! The pumpkin pie is velvety smooth and custardy and perfectly spicy. The streusal is crispy and sweet, and the whipped cream just tops it all off. 🍁🍁🍂🍂🍃🍃🍂🍂🍁🍁 Sous Vide Pumpkin Pie 1 cup pumpkin 1/2 cup sour cream 1/4 cup whipping cream 1/4 cup sugar 1/4 cup brown sugar 1 egg 2 teaspoons pumpkin pie spice 1 teaspoon cinnamon 1/4 teaspoon salt Heat your sous vide cooker to 185 degrees. Meanwhile, put all ingredients in food processor. Blend until very smooth. Pour into 4 ounce canning jars, to about 1 1/2 or two inches from the top. Tighten lids and rings onto jars "fingertip" tight. Use tongs to lower the jars into the water (I found out 185 degrees is a bit too hot to use your fingers!). Cook for 1 hour. Remove from water, and place in fridge to chill for a few hours. Meanwhile, make your Streusel and whip your cream. Streusel 4 tablespoons butter 1 cup flour 1/4 cup brown sugar 1/4 teaspoon salt 1 teaspoon cinnamon 1/3 cup old fashioned oats 1/3 cup nuts of choice (I used hazelnuts) 1/3 cup pretzels, crushed roughly Stir all streusel ingredients together. Supper: a bed of Edamame Noodles with Homemade Basil Pesto. This was my second time trying edamame noodles, and they were, again, delicious. I loved their texture! Have you tried edamame noodles yet? 😋 Not-Quite-Traditional Pesto About 12 cups fresh basil leaves 7 cloves garlic 2/3 cup pine nuts 1/4 cup walnuts 1/4 cup almonds About a 4 inch piece parmesan 1/4 cup lemon juice 1 teaspoon salt (to taste) Pinch sugar 2 teaspoons white balsamic vinegar Grind above ingredients in food processor until coursly chopped. You'll probably have to add the basil leaves in batches. While good processor is running, slowly drizzle in about 1 cup olive oil, or until pesto is at a good consistency. Caramelized onions.... I've read so many different tips and tricks on how to get the perfect caramelized onions! In my experience, I've found that, like the old children's book says, slow and steady wins the race. To caramelize my onions, I first thinly slice a bunch of onions, maybe 6 or 8 depending on the size. I use a mix of sweet and regular onions (usually whatever is getting a bit old in the pantry). Than, put a couple of tablespoons of butter in a skillet. Add the onions. Add a dash of salt and a pinch of sugar. Cook over medium low heat, stirring occasionally. If they start to get too brown on the bottom, lower the heat. It usually takes me about 45 minutes to get the carameliness I'm looking for. I love to add caramelized onions to sandwiches, breakfast dishes, pizzas, tacos, appetizer crackers or bruschetta, to make French onion soup out of them, ect... Have you ever made caramelized onions? We recently had some Garlic Grilled Shrimp at a family gathering, and now I've been in the mood for more! These shrimps were super easy, melt in your mouth with just the right combination of smokiness from the grill, garlic, butter and herbs. 🍤🍤🍤🍤🍤🍤🍤🍤🍤🍤🍤🍤 Garlic Grilled Shrimp 1 pound medium or large shrimp, peeled and deveined TOPPING 1/2 cup butter, melted 4 - 6 cloves garlic (to taste) salt and pepper to taste 2 tablespoons fresh parsley, chopped Preheat grill to medium high heat. Stir all topping ingredients together in bowl. Place shrimp on skewers. Remove some of the topping and brush on all shrimp (save the rest for a dipping sauce if desired). Place skewers on grill, and cook, turning occasionally, until shrimp is pink and no longer opaque. I've been making my own salsa since I was a teenager, when my Gramma first taught me how to can. Over the years, I've tweaked and improved on my recipe. Now, every summer, I look forward to growing tomatoes and making salsa. 🌶🍅🌶🍅🌶🍅🌶🍅🌶🍅🌶🍅 I've went through several "salsa metamorphoses." From chunky salsa, to more of a fine texture. From super spice to medium hot with more flavors. I like a bite of vinegar and citrus juice. Terra's Salsa 20 medium red tomatoes (about 10 pounds) 3 cups coarsely chopped onions 2 jalapenos, finely chopped, seeded with membranes removed 2 cups coarsely chopped Anaheim peppers 1/2 cup red wine vinegar 2 tablespoons white distilled vinegar 2 teaspoons salt 1 teaspoon coarsely cracked pepper 2 tablespoons sugar (to taste) 1 teaspoon chili powder 8 - 10 gloves garlic 1 tablespoon lime juice 1 (10 ounce) can tomato paste Peel, core and seed tomatoes. Let drain while you finish them. Place tomatoes in large cooking pot along with all ingredients except tomato paste. Let cook until veggies are soft and salsa is slightly thicker. If you would like your texture a little finer, use a stick blender to break up any larger chunks. Add tomato paste and heat. Taste and adjust accordingly. Prepare your boiling water canner, jars and lids. Could one call the Muffuletta the King of Sandwiches? I'm not sure, but they *are* impressive and delicious! First you have the special loaf of bread (I just made a round Italian loaf). Than, it is a layer of homemade olive salad, than, layers of salami, ham, provolone and capicola. Than, more olive salad and the top of the bread loaf. I've found its best to wrap the sandwich tightly in plastic wrap, and let sit in the fridge for a few hours - that way, the flavors and juices absorb and marry. ☆ 🥪 Muffeletta Sandwich (serves 4) 1 round loaf of bread (I made a round Italian loaf, but you could use cibatta or maybe even focaccia?) 1 cup mixed olives, pitted, and roughtly chopped 1 glove garlic, minced 1/2 teaspoon black pepper 1 tablespoon red wine vinegar 1/4 cup olive oil 2 tablespoons celery, diced fine 1-2 tablespoons fresh parsley leaves 1/2 cup chopped roasted red peppers 1 1/2 tablespoons capers 1/2 cup giardinera (pickled vegetables, found next to the rest of the pickles in the grocery store), chopped For sandwich: 1/4 pound black forest ham, thinly sliced 1/4 pound Genoa salami, thinly sliced 1/4 pound cotto salami, thinly sliced 1/4 pound provolone cheese, thinly sliced In bowl, combine mixed olives, garlic, pepper, vinegar, olive oil, celery, parsley, roasted red pepper, capers, and giardinera. Split your bread loaf in half and scoop out some of the insides to make a kind of bowl. Spoon half of the olive salad on the bottom. Layer meats and cheese on top of olive salad. Top with remaining olive salad, and replace top of bread. Wrap tightly with plastic wrap and refrigerate at least 1 hour before serving. To serve, cut in wedges. I like to serve this sandwich with homemade mustard. Our blackberries are finally ripening! I always think they will ripen sooner than September, but, again, here we are. For some reason, one of my favorite ways to eat blackberries is in a Meringue Bowl. It starts out with a light, crisp, delicately sweet and beautiful meringue bowl.  Then, a layer of homemade custard is spread in the bottom. This custard is topped with fresh blackberries and sliced strawberries and raspberriesif you wish (I did). The whole dessert is drizzled with a homemade blackberry sauce and a tiny meringue "hat." It is a perfect dessert to celebrate this time as we hurtle towards fall! Blackberry Meringue Bowl meringue bowl 6 egg whites 1/4 tsp cream of tarter 1 1/2 c sugar 1/4 tsp vanilla custard filling 1 cup milk 1 cup whipping cream 1/2 cup sugar 2 teaspoons vanilla 2 tablespoons cornstarch 4 large egg yolks fruit topping 1 -2 pints blackberries, fresh 1 pint strawberries, fresh, sliced, optional Blackberry drizzle  1 pint blackberries (frozen is fine) 1/4 cup sugar 1/4 cup cold water 1/4 teaspoon vanilla For meringue bowls:  Prepare two large baking sheets by lining them with parchment paper. On each piece of parchment paper, trace six 3-inch circles with a pencil.  Preheat oven to 200 degrees.  In a mixing bowl, beat egg whites until foamy and stiff.  Add cream of tarter.  Add sugar 1/2 cup at a time. Add vanilla.  Beat until the whites form a stiff peak.  Place meringue into an icing bag with a large star tip.  Starting at the center of each circle, pipe a circle of meringue. It is filled with juicy shrimp, crisp vegetables, tangy sauce and hearty black beans.  We love it, especially with our garden fresh veggies. I know it looks like it has a lot of ingredients, but it goes together really quickly. 😉 🍅🍅🥗🥗🍤🍤🍅🍅🥗🥗 Black Bean and Shrimp Salad 1 pound cooked medium size shrimp, peeled and deveined 1/2 small yellow pepper, julienned 1/2 small red pepper, julienned 1 small onion, thinly sliced 1/2 cup thinly sliced chopped celery 1 can (15 ounces) black beans, rinsed and drained 3/4 cup salsa 2 to 4 tablespoons minced fresh cilantro 3 tablespoons fresh lime juice 1/4 teaspoon grated fresh lime peel 2 tablespoons olive oil 2 tablespoons honey 1/2 teaspoon salt 2 cups fresh spinach leaves 2 roma tomatoes, sliced In a large bowl, combine shrimp, peppers, onion, celery and black beans.  In another bowl, combine  salsa, cilantro, lime juice, oil, honey, salt and lime peel if desired.  Pour over shrimp mixture and toss to coat.  Cover and refrigerate for at least 2 hours. So, I know, mustard is pretty inexpensive. Why bother to make your own? Here are a few good reasons: taste, and it's fun! I love making our own mustard. It lasts for a couple of months in the fridge, and the flavor is just so mustard-y. It starts out pretty spicy, and mellows with age. I use Alton Brown's recipe for Homemade Mustard, with just a few tweaks. Alton's Homemade Mustard 1/4 cup dry mustard powder 2 -3 teaspoons light brown sugar (depending on taste) 1 teaspoon kosher salt 1/2 teaspoon turmeric 1/4 teaspoon paprika (smoky paprika is also good) 1/2 teaspoon garlic powder 1/2 cup sweet pickle juice (if I don't have sweet pickle juice around, I up the sugar a bit or add some honey) 1/4 cup water 1/2 cup cider vinegar 1/4 cup whole mustard seed In a small, microwave-proof bowl whisk together the dry mustard, brown sugar, salt, turmeric, paprika and garlic powder. In a separate container, combine the pickle juice, water and cider vinegar and have standing by. Place the mustard seed into a spice grinder and grind for a minimum of 1 minute, stopping to pulse occasionally. Once ground, immediately add the mustard to the bowl with the dry ingredients and add the liquid mixture. Whisk to combine. Place the bowl into the microwave and heat on high for 1 minute. Remove from the microwave and puree with a stick blender for 1 minute. Pour into a glass jar or container and allow to cool uncovered.
