Making your own Taco Seasoning is quick, easy and great because you can choose exactly what you put in! I like to keep a big jar on hand for whenever it is taco night. . . 🌮🌯🌮🌯🌮🌯🌮🌯🌮 . . Taco Seasoning 1/43 cup chili powder 1 1/2 tablespoons garlic powder 1 1/2 tablespoons onion powder 1 1/2 tablespoons paprika 1 1/2 teaspoon ground cumin 1 teaspoon sea salt (more or less to taste) 1 teaspoon black pepper Mix all ingredients in jar. Add them to your Thanksgiving table, and your guests will be thanking you! 🥔🥔🥔🥔🥔🥔🥔🥔🥔 Herb Smashed Baby Potatoes 3 cups mixed baby potatoes, boiled until tender (15 - 20 minutes) 2 tablespoons olive oil 2 tablespoons butter, melted 3 cloves garlic, minced 1 tablespoon fresh parsley salt and pepper, to taste Preheat oven to 450 degrees F. Lightly grease a baking sheet. Place cooked potatoes onto the prepared baking sheet. Using a potato masher or fork, carefully smash the potatoes until flattened but still in one piece. In small bowl, combine olive oil, melted butter, garlic, parsley, salt and pepper. Brush mixture over potatoes. I recently purchased a Pullman Loaf Pan, yippee yippee skippee! I love that it makes perfectly square loaves of bread - ideal for sandwiches. My first few batches of bread have all been a hit. Pain de Mie (adapted slightly from a #kingarthurflour recipe) 1 cup milk 2/3 cup water 8 tablespoons butter, softened 2 teaspoons salt 3 tablespoons sugar 1/4 cup nonfat dry milk 3 tablespoons potato flour starch 4 1/2 cups all purpose flour 2 teaspoons instant yeast I use my bread machine to mix, knead and to let the dough rise. Add wet ingredients to the bread machine pan, and top with dry ingredients (yeast on the very top). When the cycle is finished, remove the dough. Lightly grease a 13 x 4-inch pain de mie or pullman pan. Shape dough into 13 inch log shape, and place in pan. Cover with lightly greased lid and let rise in warm place for about 45 minutes. Preheat oven to 350°F. Bake the bread for 25 minutes. Remove the pan from the oven, remove the lid, and return the bread to the oven to bake for an additional 20 minutes, and turn it out of the pan onto a rack to cool completely. Topped with some bacon, toasted pine nuts, and capers, this is one dish you'll be having seconds of. 😋 : : : : Gnoccci, Cauliflower and Arugula Skillet 1 package plain gnocchi 1 head cauliflower florets 1 tablespoon olive oil 1 package bacon 3 - 5 garlic cloves, smashed then thinly sliced 2 tablespoons capers, drained salt and pepper, to taste 2 or 3 tablespoons toasted pine nuts 4 cups arugula (or, if that is a bit too bitter, 2 cups arugula and 2 cups spinach) 1 tablespoon balsamic vinegar Preheat the oven to 450 degrees. Place gnocchi, cauliflower florets, garlic and olive oil on cookie sheet. Toss together. Season with salt and pepper. Roast, stirring occasionally, until tender and lightly browned, 30 to 35 minutes. Meanwhile, dice and cook bacon until crisp. Remove bacon to a paper towel lined bowl, keeping the drippings in the skillet (if your bacon was especially fatty, remove some of the drippings - just make sure to leave 2 or 3 tablespoons of drippings in the pan). Add roasted cauliflower, gnocchi, garlic, capers, pine nuts, arugula and balsamic vinegar in skillet. Sauté, stirring frequently, until arugula is slightly wilted. Toast pecans in skillet, stirring frequently for about 10 minutes. Add butter and stir until it melts. Add salt, cumin, cayenne, cinnamon and orange peel and stir. Add sugar and water, and cook and stir until the mixture thickens and coats the nuts. This will take several minutes. Pour pecans on baking sheet and separate with fork. Let them cool completely. Since I was a teenager, I have been a bit known in my tiny circle for my lemon curd - particularly when I put the lemon curd into lemon tartlets. I first became interested in making fruit curds when I was a late teenager. Fruit curds are luscious and bursting with flavor, and able to go on pretty much everything. The curds I have made so far are lemon and kumquat curds, and today I decided to use my tried and true lemon curd recipe to make a raspberry curd. And.... it turned out deliciously! The raspberry curd was smooth, and delicious and raspberry-y. Also, the color of the raspberry curd was beautiful - an all natural deep raspberry color. How will you serve your raspberry curd? Raspberry Curd 1 1/2 cups frozen raspberries, thawed 1 cup sugar 1/4 cup freshly squeezed lemon juice 2 eggs 4 egg yolks pinch salt 4 tablespoons butter In a medium, heavy bottomed saucepan, place raspberries, sugar, lemon juice, eggs, egg yolks and salt. Cook over medium heat until filling thickens slightly but is pourable, about 8-10 minutes. Remove from heat and stir in butter. Strain filling through a fine mesh strainer into a bowl. Discard seeds and other impurities. Press plastic wrap directly on the surface of the raspberry curd, this will prevent a skin from forming and will make the curd creamier. I assure you, the hardish work and time is worth it. : 🍲🍲🍲🍲🍲🍲🍲 : Shoyu Ramen Broth: 5 - 6 pounds pork hocks 1 leek, halved 2 bulbs garlic, halved 4 inch piece fresh ginger, halved 2 tablespoons better than bouillon chicken 1/2 sheet nori 2 halved onions, peels on 1/2 cup dried shitake mushrooms 1 1/2 gallons cold water Chashu: a 2 pound pork shoulder roast Tare: 3/4 cup soy sauce 1/2 cup sake 1/2 cup mirin 2 inch piece ginger, sliced 2 cloves garlic, crushed To serve: bean sprouts cooked ramen noodles green onions, sliced soft boiled eggs, halved soy sauce and mirin flavored wood ear mushrooms, sliced For the broth: place onion halves and ginger halves on baking sheet and cook under broiler for about 20 minutes, or until nice and charred. Meanwhile, bring a large pot of water to a boil (enough to cover the hocks).When it comes to a rolling boil, place pork hocks in a stock pot and cook for 8 minutes. When the water starts boiling again, drain and throw away this water. Rinse the hocks under cold running water to get rid of impurities. Wash your pot and refill with 1 1/2 gallons cold water. Add the pork hocks, well-rinsed leek, garlic, ginger, bouillon, nori, onions and shitake mushrooms. Bring to a boil over high heat and boil hard for 15 minutes. During the 15 minutes, skim all the foam and scum that rises to the surface (I just used a large serving spoon). I always make a mincemeat pie for Thanksgiving, even though my dad and I are really the only ones who like to eat it (and no, the mincemeat filling is not from scratch - I cheat and fix up a jar of mincemeat filling!). : Lattice Top Mincemeat Pie For Filling, if you want a mincemeat pie (or fruit filling of your choice) 1 jar mincemeat pie filling 2 chopped granny smith apples 1/2 to 1 cup golden raisins sprinkling ground ginger sprinkling ground cinnamon For Homemade Pie Crust: 4 1/2 cups all purpose flour 1 cup butter 2 tablespoons lard 1/4 teaspoon salt 2 tablespoons sugar 10 tablespoons ice water For Egg Wash, if desired: 1 egg 2 tablespoons water sprinkle of turbinado sugar * If you choose to do the mincemeat filling, mix jar of mincemeat and other filling ingredients in a bowl and set aside. Otherwise, prepare your other filling. * If you choose to make your pie dough from scratch (which I would recommend), cut together all the crust ingredients - except the ice water - with a pastry blender (or pulse the ingredients in your food processor). Sprinkle with about the ice water and tosstogether or pulse a few more times. If the dough looks a bit crumbly and too dry, add a tiny bit more water, and if it look too wet, sprinkle on a bit of flour. Pat into two discs and it is ready to roll out for crusts. Ah, the temperature is now 10 degrees, and we have six inches of snow. I think winter is officially here in the north woods! To celebrate 🙄 here are these Raspberry Tartlets. I love making pastries, and I love making mini pastries even more!  I don't get a lot of time anymore with two little girls so these were a real treat. * These raspberry tarts begin with crisp-but-not-too-sweet almond crust. Next is a slightly tangy filling of homemade raspberry curd. Topped by a dab of crème mousseline - a French vanilla-bean-infused-custard. Finally, they are topped by a fresh raspberry and the lightest dusting of powdered sugar. At just about two inches, these little tarts are perfect little one-biters.* Raspberry Tartlets  almond crust 1 c. flour 1/3 cup sliced almonds, ground finely 1/4 cup sugar 1/4 teaspoon salt 6 tablespoons butter, cold and cubed 1/2 teaspoon almond extract 3-5 tablespoons ice water raspberry curd 1 1/2 cups frozen raspberries, thawed 1 cup sugar 1/4 cup freshly squeezed lemon juice 2 eggs 4 egg yolks pinch salt 2 tablespoons butter Cream mousseline 1/2 cup milk 1 vanilla bean, halved 2 egg yolks 2 tablespoons sugar 1 tablespoon flour 1/4 cup heavy cream, whipped * For Crust: Place flour, almonds, sugar, salt and butter in bowl of food processor. Pulse a few times, making sure butter is cut in well. Add water while you pulse about 10 times, make sure dough comes together.  Dump dough onto a sheet of plastic wrap, form into a disk, wrap, and chill for at least 30 minutes before rolling out. Preheat oven to 425 degrees F. with rack in lower third; spray 12 tartlet pans with nonstick spray.  Roll out dough, place it in the pan, trim.  Repeat. Those perfect crispy edges, and they are soft and chewy in the middle. Grab a glass of milk and have a few, warm and gooey right out of the oven! : : 🍪🥛🍪🥛🍪🥛🍪🥛🍪 : : : Mini Chocolate Chip Cookies * 1/2 cup butter, softened 1/2 cup shortening 3/4 cup brown sugar 1/2 cup sugar 2 eggs, room temperature 1 teaspoon vanilla 2 1/2 cups all purpose flour 2 teaspoons baking soda 1/2 teaspoon baking powder 1 teaspoon salt 1 cup mini chocolate chips * Cream butter and shortening with sugars. Add eggs and vanilla. Add dry ingredients and mix just until moist. Stir in chocolate chips. Let dough chill in refrigerator at least overnight (I actually let mine rest in the refrigerator for about two days). * Using teaspoon scoop, roll balls of dough out. Bake in a 325 degree oven for 7 or 8 minutes. The insides will look underdone! Greek Yogurt Chicken Kabobs; flavorful, moist, and delicious! Eat them right off the skewer, on a sandwich or in a pita shell; however you do it, you'll be happy! : : 😋 : : : Greek Yogurt Chicken Kabobs * 1 1/2 cups plain Greek Yogurt zest and juice from one lemon 1 teaspoon cumin 1 tablespoon olive oil 2 teaspoons paprika 1 teaspoon dried oregano 1 teaspoon turmeric 1 -2 teaspoons all purpose Greek seasoning 1 1/2 teaspoons salt 1 teaspoon pepper 4 - 6 cloves of garlic 4ish pounds boneless skinless chicken thighs * The day or morning before you want to eat your chicken, trim chicken thighs of fat and any other undesirables and cut into large bite sized pieces.  Place Greek yogurt, zest and lemon juice, cumin, olive oil, paprika, oregano, turmeric, Greek seasoning, salt, pepper, garlic in bowl.  Mix well.  Add chicken and refrigerate at least 6 hours or overnight. * When you are ready to cook, light your grill to medium high heat.  Place chicken pieces on skewers (we like to use double skewers), making sure not to pack too tightly.  You'll probably need 6 - 8 skewers. Grill, turning occasionally, for 15 to 20 minutes.  Remove from grill and serve as desired.  The chicken is yummy plain, or with tzatkiki and naan, or on little buns with lettuce, onion and tomato. Making your own stock/broth is so easy! I love how thrifty it is, and how I know exactly what I am feeding my family! I start the process ahead of time by collecting clean vegetable scraps and placing them in a bag in the freezer. Onion peels and ends, celery leaves and ends, carrot ends and peels, even apple cores, ect.... all can be thrown in there! Whenever I cook chicken, or beef, pork, ect... I place the carcass/bones and save those in a bag in the freezer. Depending on when I have some extra time at home, I'll pull out all my stock scraps and pop them in a large stockpot on the stove (sometimes I use my instant pot if I want to get it done more quickly). Fill your pot with cool water and let simmer for 6 or 7 or 8 hours. Season as desired and taste (I usually season my stock with pink Himalayan salt, pepper, some fish sauce, and a dash of rice vinegar). Strain broth/stock by pouring contents of your stock pot through a sieve. If you want a really really clear broth/stock, after you strain through the sieve, you can place a towel or coffee filter inside a colander or strainer and slowly pour the stock/broth through again. You can then preserve your broth by canning it, which I used to do. But sometimes (especially now a days) digging out the pressure cooker and going through that whole process just takes too long. Now, I freeze the broth/stock in quart and gallon sized bags, labeled and easy to pop in the freezer. When you are ready to use your stock, simply cut the bag off the frozen block and place it in your pan over low to medium low heat. It will melt rather quickly and you can go about making your dish! . . . What do you think? Are you fired up about making your own broth or stock?! We ended up with a lot more carrots then I expected this fall. As I've been looking for ways to use them up, I decided to make Zucchini Carrot Bread. They turned out great, and we loved the addition of the carrots. I also added some golden raisins (a favorite!). . 🥒🥕🥕🥕🥕🥕🥕🥕🥕🥒 . Zucchini Carrot Bread 1 1/2 cups of flour 1/2 teaspoon baking soda 1/2 teaspoon baking soda 1/2 teaspoon salt 1 teaspoon cinnamon 1/4 cup oil 2 eggs 1 teaspoon vanilla 1/4 cup sugar 1/4 cup brown sugar 1 cup shredded zucchini, peeled 1 cups shredded carrots Preheat oven to 350 degrees. Grease a loaf pan. Mix dry ingredients together. In another bowl, mix wet ingredients together. Add zucchini and carrots and mix well. Add dry ingredients and whisk together. Pour into prepared pan, and bake for about 50 minutes, or until toothpick comes out clean. I found a super good sale on raisins the other day, and decided to fulfill a years-long food dream - to make my own raisins. I cleaned the red grapes very well, and dunked them in boiling water for a minute to soften the skins. I had my girls help place them on the food dehydrator trays. I dried them for about 48 hours at 135 degrees. It was really cute, because a few times through the 48 hour dehydrating process, my little girls asked if they could sample the grapes. They proclaimed the raisins "yummy, Mommy!" I purposefully left the raisins nice and plump. Their flavor is full and you immediately notice their unique delicious taste and how moist they are - not quite like the dried little raisins that come out of the boxes at the grocery story. If I have any raisins left from my little girls, I'm going to use them in some baking. Carrot Cake Pancakes with Buttermilk Cream Cheese Syrup? Yes please! I recently made a carrot cake, and ended up having a little batter left over. On a whim, I decided to try making these pancakes, and they turned out deliciously! My four year old just loved them. If you are looking for a luxurious breakfast or brunch, look no further than these Carrot Cake pancakes. To make them: simply add some buttermilk to carrot cake batter until you have a good pancake-like consistency. Cook on preheated griddle like regular pancakes. For the syrup, I just added buttermilk to cream cheese frosting. Breakfast? Maybe not.... when I look at it written out, it looks more like dessert. With jack o' lanterns, brings pumpkin seeds! My girls carved (with help of course) their very first pumpkins, and my four year old was very eager for me to Roast Pumpkin seeds. Since she doesn't like a lot of spice, I did a very simple salted pumpkin seed. Roasted Simple Pumpkin Seeds 1 1/2 cups raw whole pumpkin seeds water to cover pumpkin seeds 2 teaspoons salt 2 teaspoons olive oil The night before you want to roast your pumpkin seeds, place seeds, water to cover and salt in a bowl. Stir and let sit overnight. The next day, drain seeds and toss with olive oil. Fried Green Tomatoes, the summer has almost passed without me making you! My grandma has made fried green tomatoes ever since I was a small child. When I was little, she would say that they are only for grownups. Of course, that made us kids want to eatthem!  To make these Fried Green tomatoes, I just used my mandolin to thinly slice green tomatoes from the garden (I know some people do thicker slices, but I like more of the crispy breading). I had some stale saltines and ritz crackers that I put in a Ziploc baggie and smashed until coarsely crushed. I dipped the tomatoes in three stations: First, flour (I seasoned the flour), egg mixed with a bit of milk, and then the crushed crackers. Fry them in a mixture of butter/veggie oil until crispy and golden brown on each side. Enjoy hot! Pastry Cream can be used to fill doughnuts, tarts, cream puffs, pastries and cakes. Since there are so many uses, it is very handy that pastry cream can be easily made in home kitchens. . . . . Pastry Cream 2 cups whole milk 2/3 cup sugar, divided 1 vanilla bean, scraped pinch salt 3 egg yolks and 1 whole egg 2 tablespoons cornstarch 2 tablespoons butter In a large sauce pan, stir together milk and 1/3 cup sugar. Add vanilla bean scrapings and also the vanilla beans. Bring to a simmer over medium heat. In a separate mixing bowl, whisk together egg, egg yolks, cornstarch, and 1/3 cup sugar. Once the milk has reached a simmer, carefully pour half of the hot milk in a steady stream into the egg mixture, whisking constantly. Immediately pour the egg mixture back into the saucepan, whisking constantly. Return to a medium heat and whisk constantly until mixture thickens, several minutes. Remove from heat and stir in butter until melted. Pour into a clean mixing bowl and cover with plastic wrap, making sure the plastic wrap touches the top of the pastry cream. Cool completely in the refrigerator. Creamy, peanut buttery, and that crust! It's just like a big, chewy peanut butter cookie. Add in the no bake creamy peanut butter cheesecake, and top with white chocolate reeses mini peanut butter cups. . . . . Creamy Peanut Butter Cheesecake For Crust: 2 cups creamy peanut butter 2 eggs 2 cups sugar Preheat oven to 325 degrees F. Combine peanut butter, eggs and sugar. Spread evenly into bottom of greased 8inch spring form pan. Bake for 35 minutes or until toothpick comes out clean. Cool completely on wire rack. For the Cheesecake: 20 ounces cream cheese, softened 1 1/2 cups creamy peanut butter 2 cups powdered sugar  1 8 ounce container cool whip, thawed (or make your own) In large bowl, beat cream cheese, peanut butter and powdered sugar until smooth. Blackberry Cake Roll - may I have some more please?! A roll of lighter than air vanilla bean cake, very slightly sweetened homemade whipped cream, and fresh blackberries. . . . . . .  Blackberry Cake Roll 1/4 cup canola oil 1/4 cup milk 1 egg yolk 2 tablespoons sugar 2 tablespoons all purpose flour 2 tablespoons rice flour 5 egg whites 2 tablespoons sugar Whipped Cream Blackberries (or fruit of choice) Preheat oven to 320 degrees. Lightly spray 11x11 pan with cooking spray (I made my own out of tinfoil). Mix together oil, egg yolk, milk and sugar. Sift together flour and rice flour. Stir together wet and dry ingredients. Place egg whites in medium bowl. Whip to medium stiff peaks, gradually adding 2 tablespoons sugar. Fold egg whites into mixture. Bake in prepared pan for 15 to 20 minutes or until cake springs back when you touch it. Dust kitchen towel with powdered sugar, and roll cake up in it and let it cool. Spread cake with whipped cream, and place a line of blackberries down the side. Roll up. Top with dollops of whipped cream and more blackberries. I decided to add some Flavored Wood Ear Mushrooms to my Shoyu Ramen Bowl. I found the dried mushrooms online, and set to work. I rehydrated a nice handful of the mushrooms in a bowl of warm water, then squeezed the extra water out. Thinly sliced themushrooms, then put in a skillet. I added a bit of sugar, a few tablespoons of soy sauce, a couple of teaspoons each of mirin and sake, and 1 teaspoon sesame oil. I then just cooked and stirred the mushrooms until there wasn't any liquid left in the pan. Done and ready to go! P.S. Chicken Corn Chowder with Lime Cream Topping 2 tablespoons butter 1 tablespoon olive oil 1 large sweet onion, chopped finely 8 cups corn (preferably fresh cut off cob) 2 or 3 minced garlic cloves 1 jalapeno pepper, seeded, membranes removed and finely chopped 1/4 cup flour 5 cups chicken stock 4 potatoes, peeled and chopped 1 cup milk salt and pepper to taste 1/2 cup heavy cream 2 cups shredded or diced cooked chicken Put butter and olive oil in stock pot. Add onion, garlic and jalapeno pepper and sauté until onion is soft. Add flour, and cook and stir for 1 - 2 minutes or until bubbly. Add stock, milk, corn and potatoes. Cook for about 30 minutes, or until corn is cooked and potatoes are soft. Add chicken. Adjust seasonings as desired. This chowder is delicious just as it is, but if you want to add that extra special touch, make this Lime Cream Topping to finish your bowl of chowder off: mix together 1/3 cup mayonnaise, 1/3 cup crema (or sour cream), 1/2 cup feta cheese, zest and juice of 1 lime, and a sprinkle of Tajin chili-lime seasoning. We don't *always* agree on pizza toppings around our house. This time, I decided to have two different topping options on my Sheet Pan Pizza - we had a regular old pepperoni, sausage and cheese on one side, and on the other, Hawaiian Pizza with Canadian bacon, pineapple, onions and cheese. My whole family was happy! My favorite Pizza Crust recipe is Peter Reinhardt's Neapolitan Pizza Dough. I love that I can make it a day or two in advance, and the flavor only improves as it enjoys its delayed fermentation in the refrigerator. I also love the crispy, chewy, slightly fermented texture of the cooked crust. I usually cheat and use my bread machine to mix up my dough's, so those are the instructions I'll include here. It is just so easy and saves time! As the mommy of a toddler and a preschooler, t-i-m-e is kind of a four letter word around our house. . . . Neapolitan Pizza Dough 4 1/2 to 4 3/4 cups bread flour 1 3/4 cup water 2 teaspoons salt (you could use a little less if you wanted) 1 tablespoon sugar 1/4 cup olive oil 1 teaspoon yeast In bowl of bread machine, add water, salt, olive oil and sugar. Top with bread flour, and yeast. Turn bread machine on to dough cycle. Make sure to check your dough toward the end of the kneading stage; depending on the humidity and conditions in yourhouse, you might need a little more or less flour. Place dough in a slightly greased bowl or gallon bag, and let sit at least overnight in refrigerator. Next up, Shrimp Teriyaki Stir Fry! I left the shrimp shells on for the stir fry to give the dish a little more flavor. The stir fry also featured bean sprouts, hokkein stir fry noodles, homemade teriyaki sauce, shredded carrots, baby corn, bamboo shoots, watercress, broccoli, snow peas, onions, and sliced Napa cabbage. In hindsight, next time I would remove the shrimp shells after I finished cooking them and before I added them to the rest of the dish. I love leeks, you love leeks, we all love leeks! Ahem, ok, enough with the cheesy humor. We had some lovely leeks that I've harvested from the garden, and I wanted to use them in a very special way. I decided to make a Leek Pie (It was going to be a tart but I seem to have lost my tart pan). In the end, I liked the pie better anyways. Leeks, smoked ham, melty cheese and a buttery pie crust. Leek Pie 3 leeks, sliced 2 tablespoons butter salt and pepper to taste 1/2 cup heavy whipping cream 1/2 cup shredded pepper jack cheese 3/4 cup shredded Monterey cheese 2 eggs  1 cup diced smoked ham 1/2 cup parmesan cheese (and more to dust the top, if desired) 1 9 inch pie crust (homemade or bought) Sauté sliced leeks and butter for about 10 minutes, or until the leeks are soft (save a few pretty slices for the top if desired). In bowl, stir together cream, cheeses, eggs, ham. Add leeks and salt and pepper. Pour into prepared pie pan, top with saved leek slices and parmesan cheese, and bake at 350 for about 45 minutes. There's something about fall that just puts me in a caramel-y mood. Hence, this Salted Caramel Sauce. It was pretty easy, and can go on everything. Or, you could just eat it from a spoon (not saying that I did or anything). . . . . . Salted Caramel Sauce 1 cup granulated sugar 1/2 cup butter, cut into 8 pieces 1/2 cup heavy cream 1 14 ounce can sweetened condensed milk 1/2 to 1 teaspoon salt (amount depends on how salty you want your caramel) Heat granulated sugar in a medium saucepan over medium heat, stirring constantly with a high heat resistant rubber spatula or wooden spoon. Be careful not to let it burn. Once sugar is completely melted, add butter (because the caramel will bubble quickly so be careful!). Stir for a couple of minutes using a whisk. Very slowly, drizzle in heavy whipping cream and sweetened condensed milk. Allow to boil for 1 - 2 minutes. Remove from heat and stir in salt. These Cranberry Almond Dipped Biscotti would be the perfect Halloween gift for your friends and family! . . . 🍪🍪🍪🍪🍪🍪🍪 . . Cranberry Almond Dipped Biscotti 2 cups all-purpose flour 1 1/2 teaspoons baking powder 1/4 teaspoon salt 2 large eggs 3/4 cup sugar 3 tablespoons unsalted butter, melted and cooled 1/2 teaspoon almond extract 1 cup dried cranberries 1/2 cup almonds, chopped Preheat the oven to 350. Line a large baking sheet with parchment paper. In a bowl, whisk the flour with the baking powder and salt. In a medium bowl, beat the eggs with the sugar at medium speed until pale and creamy, about 3 minutes. Beat in the butter and almond extract. Pour the egg mixture over the dry ingredients and stir until combined. Stir in the dried cranberries and almonds. Using lightly floured hands, shape the dough into 2 slightly flattened 10-inch logs on the prepared baking sheet. Bake for 30 minutes, or until golden. Let the logs cool slightly. Using a sharp serrated knife, slice the logs 1/2 inch thick on the diagonal. Arrange the slices on the baking sheet cut sides up and bake for about 10 minutes, or until the biscotti are lightly browned and crisp. A delicious, hearty loaf of Irish Soda Bread isn't just for St. Patrick's Day! I make a loaf quite often, and it is a hit with everyone. . . A toasted slice of Irish Soda bread hits the spot at breakfast! . . . . Irish Soda Bread 2 1/2 cups all-purpose flour 1/2 teaspoon salt 1/2 teaspoon baking soda 1 1/2 teaspoons baking powder 2 tablespoons sugar 3 tablespoons butter, cold 1 cups raisins (I like to simmer them in some water for a bit to make them nice and moist) 1 egg 1 cup buttermilk or (or you could make your own sour milk) 1 tablespoon (ish) milk granulated sugar for sprinkling, if desired Preheat oven to 350 degrees. Combine flour, salt, baking powder, soda, and sugar. Add butter and cut in until crumbly. Stir in the raisins. Make a well in your dry ingredients. Combine egg and buttermilk and add to dry ingredients. Stir until just blended. Turn the dough out onto a wooden board sprinkled with flour. Knead the dough gently for just a minute. If the dough is a little sticky, dust with some extra flour. Take care not to overwork the dough! You can either form the dough into a free standing loaf, or bake it in a bread loaf pan. Then brush each with milk and sprinkle sugar on the top. Bake 40 or 45 minutes until golden. I live in wild rice country, and know quite a few people who harvest wild rice each year (I haven't yet, but it is on my bucket list!). One thing I've learned over my years of cooking wild rice, is that it is best cook wild rice to taste and texture, rather then by the timer. As you can see from the picture of this batch of wild rice I cooked, each kernel of rice of popped open, but it's not exploded. This gives you wild rice with a chewy, perfect texture. I also like to flavor my wild rice by adding a garlic clove or two, a pinch of salt, and even some better than bouillon to the cooking water (or use broth). I've been on a little caramel kick lately. Enter this Nutty Caramel Corn, a perfect blend of carmely-ness, crunchiness and toasted nuttiness. Sweet and salty! And maybe slightly addicting..... . . What is your favorite fall snack? . . . . Nutty Caramel Corn 1 - 14 ounce can sweetened condensed milk 1 cup light corn syrup (light corn syrup) 1 pound brown sugar  1/2 cup butter 1 cup of unpopped popcorn kernels 1 1/2 cups toasted pecans 1 1/2 cups toasted almonds Pop your popcorn with desired method (I use a large pot on the stove and cover it with perforated tin foil). To make the caramel, cook the brown sugar, corn syrup, and butter over the stove on medium high heatand bring to a boil. Add the sweetened condensed milk. Stir continually for about 3 to 4 minutes until it gets to the soft ball stage (it clings together when you drop some in cold water). Watch it closely so it doesn't burn! When the caramel is finished cooking, take your pot off the stove and pour over your popped popcorn. Do you remember those luscious Maple Glazed Pork Belly's that went on the Big Green Egg earlier? Well, here they are. And let me tell you, they turned out delicious and succulent. The outside had a great smoky and mapley crust, and the insides were tender and luscious. . . To make this deliciousness for yourself, just take some pork belly strips and put them in a gallon bag. Pour in some maple syrup and kosher salt and squish the bag around to coat. Let marinate for 6 hours or so. Place in smoker that's set at 300 degrees for a couple of hours. Remove from heat and enjoy! . . I love canning and preserving food, and have ever since my grandma taught me how to make my first batch of chokecherry jelly when I was 12. As the years have progressed, each summer and fall I have loved filling my canning shelves with the delights of the season and garden bounty. Each fall and winter, I love pulling jars off the shelf to feed my family, or give as gifts to friends and loved ones. This morning, I pulled a jar of Almond Pear Jam off the shelf to add to our toast. I came up with this recipe when I was a teenager, and have made 20 or 30 jars each summer. It tastes gourmet and delicious, but this Almond Pear Jam is really super easy - I just add 1 to 2 tablespoons of almond extract to each batch of pear jam.
