HOW TO MAKE Hollandaise Sauce using the Breville|PolyScience Control Freak 🍳❤️ . Cook Time: 5 minutes. Temperature: 167ºF / 75ºC. Serves 10 as an entree portion. Here's what you need: 170g Egg yolk, 120g Water, 60g Lemon juice, 6g Salt, .2g Cayenne, 300g Unsalted butter (Cold, Large dice) . Method: 1. Set the Control Freak to Probe Control. 2. Whisk all of the ingredients together in the pot continuously. 3. Bring the mixture to 163ºF / 73ºC using Probe Control, MEDIUM intensity, whisking constantly. 4. Once the mixture reaches 163ºF / 73ºC, manually set a one minute timer. Keep whisking for the duration of the timer and the sauce should look sufficiently set when time has elapsed. 5. Reserve the sauce at 144ºF / 62ºC using Probe Control, SLOW intensity, whisking occasionally to distribute any hot spots. *Ensure the tip is far down in the sauce without touching the bottom. . Give it a try. Termino medium rare (saigne) sellada al sartén con una pisca de aceite aromatizado con romero y tomillo. Como no podía pasar la noche sin conocer el resultado, la puntica si quedó de prueba para la cena y el resultado fue ambrósico. 🤣🤣 Le siguen en su orden de prueba este hombro de cerdo (pork shoulder) y estos chicos malos con la T por dentro (T Bone steak). Sous vide "Poor Man's Prime Rib" - a humble chuck roast transformed into a luscious, silky, red, prime rib-like meat. I bought a 3 pound chuck roast, seasoned it with salt and pepper, and cooked it sous vide at 131 degrees for 24 hours. This resulted in perfect medium-rare slices of premium, tender and gorgeous meat. To finish the meat off, I made a Herbed Mayonnaise with fresh cracked pepper, and did a quick sear in a smoking hot cast iron pan. I used the juices from the sous vide bag to make a quick pan sauce with red wine, simmering until slightly thickened. I topped everything off with some sauted baby portabella mushrooms that were sauteed in red wine, garlic and olive oil. Here is an easy recipe that any idiot can make. It's a butter basted porterhouse steak with creamer potatoes in butter and herbs. 1. Porterhouse steak and throw Stubbs steak rub on it and put it in a freezer bag and put in freezer until you are ready to use it. I had mine in freezer for like 3 weeks. 2. Heat up sous vide (I have an Anova) to 131° put the freezer bag with the steak in it for for at least 2 hours. I had mine in for 3. 3. When it's done, and this is important, take it out of the freezer bag, and PAT THE STEAK DRY with a paper towel. Moisture on the steak keeps it from getting a good seer. 4. Season the steak with a healthy amount kosher salt and crushed pepper. I use pink Himalayan salt. 5. Heat up a cast iron skillet and throw in like a tablespoon of butter. Throw in steak and seer first side for about 45 seconds, flip it and seer other side. 6. Remove and enjoy it. Its delicious. The potatoes? Come on.
