Vanilla Almond Cranberry Granola 🥣
I’ve been going crazy on the granola of late because it’s sooo good! I made a version of granola before, it was a peanut butter based one (recipe on my page!), but I wanted to try a new one and this had to be shared! The trouble is, I have no self control and it doesn’t last long! 🤭😂 It’s because it’s so versatile; breakfast, snack, dessert, or even just a sprinkle on something for extra yuuum! If you made the other one, give this a go and let me know which one you prefer 👍🏼
>> in a large bowl add 1/2c maple syrup (I tried this with honey too and the honey was just too over powering, if you didn’t want maple flavour you could replace with honey), 1/4c melted coconut oil and 2tsp vanilla essence. Mix together well.
Add in 2c rolled oats, 1c sliced almonds and a pinch of salt. Mix together well until all the oats and nuts are moistened.
Optional; add in 1/2c each of sunflower, pumpkin or other nuts too.
Place on a lined baking tray and bake in the oven at 180degrees for about 15mins, you want to flip the mixture every 2-3minutes. But keep an eye on it because different parts will cook faster, this burns very easily!!! Add in 1/2c dried cranberries and cook a further 2minutes until nice and golden. If using shredded coconut, this is a good time to add that too as it cooks a lot faster than the rest of the mix.
Let cool then store in a airtight container, or eat while still warm 👍🏼😋 yummo!

Crumbly Blueberry Oat Slice
I love a sweet treat with yummy fruit that’s mostly guilt free and easy to make!

which you should check out because the recipes are delish! I made mine with coconut oil as I wanted a slightly healthier alternative, but it also means it can be dairy free (without the glaze)! Try it with other fruits and let me know how it turns out! |
>> in a large bowl mix together 1c oats, 1/2c flour (use wholewheat for a healthier alternative), 1/3c brown sugar, 1/4tsp ground ginger and 1/4tsp salt.
Add in about 1/4c melted coconut oil - you want to do this in spoonfuls so that it sticks together without forming a big clump in the middle. Separate mixture in half and press one half into a brownie pan.
Pour 1 1/2c blueberries over the base and spread evenly - I used frozen blueberries and it came out fine!
Sprinkle 1Tbsp flour over the top, then 1Tbsp sugar and the juice of half a lemon.
Sprinkle the rest of the crumble over top evenly. Some blueberries will show through.
Bake at 180degrees for about 20mins, or until the berries start ‘bubblying’ and the crumble is nice and golden.
Remove from oven and cool completely.
Once it’s completely cooled, whisk together 1/4c icing sugar, 1tsp vanilla essence and 1-2Tbsp milk. Once you have a smooth but quite runny consistency, drizzle over the cooled slice. Slice and enjoy, or keep in the fridge for a treat later! Perfect 👌🏼
