A perfect example of why I don’t log my meals in a nutrition tracker ☺️... this salad is full of leftovers, veggies of every form, fermented miso, and healthy fats. If you’re looking for salad inspo- just throw a few pieces of everything in your fridge on top of lettuce and you’ll get something like this!
What’s included in this salad: romaine base, roasted brussels and baby peppers, sautéed mushrooms and green peppers, avocado, quinoa with dried apricots and pine nuts, tempeh with miso paste, and fresh cherries. Everything is topped with coconut aminos, chopped almonds, and hemp seeds.
