My thoughts on Loki's character development:
I think Loki has always just wanted Odin to be proud of him. In Thor 2011, when he found that he was adopted, and that Laufey actually just left him to die, Loki felt dishonored, unloved, pointless. He thought if he could make Thor look bad, it will make Odin love him more. He was literally just begging to feel loved and appreciated, he was begging Odin to show that he loved him. But no matter how much he tried, Odin just kept on looking past him. By the end of Thor 2011, Loki practically committed suicide by letting go of Odin's staff, because he felt he had no reason to exist anymore. Thanos ressurected him and gave him a new purpose. A new reason to live. So Loki didn't care about his past anymore, he chose to forget. But in Thor The Dark World, he started showing more emotions. He lead the Dark Elves to Frigga and he felt that he was the reason for her death. He was angry at himself, angry that he couldn't save her. Nothing Loki did after his mother died in Thor The Dark World was for Odin or the thrown. It was all for Frigga. He loved her, and after all he had done, she still loved him. Loki was Frigga's son. In Thor Ragnarok, Loki finally realised something when Odin passed: There was no need to do all of that to be loved. He was and always had been an Odinson. In Infinity War he sacrificed himself to save Thor. And it was for all of them, Thor, Odin and Frigga...his family.
