Marathon #6 coming in hot (and tired 😏) But DAMN does a runners high feel so good πŸ’₯ Absolutely loved this race, even seeing that it was two loops of the same thing. Beautiful scenery and incredibly peaceful + being along a Great Lake is perfection πŸ‘ŒπŸΌ . Squeaked out about a two minute PR (unofficial time) and I’m cool with that. Trained less this round than previous races, but we traveled a lot for family and some emergencies this summer that just took a much higher priority in my book. Family is everything πŸ’• . Voila! . 1/2 medium banana, mashed 2 Tablespoons nut butter (your choice! I love PB πŸ₯œ) 1/4 cup unsweetened plain almond milk (regular milk works well too!) 1/3 cup ROLLED oats 1/2 teaspoon vanilla extract 1/2 teaspoon cinnamon + desired toppings (I love to use a couple strawberries, dark chocolate chips, some sliced almonds, and some hemp hearts for a little extra protein) . Mix the banana, nut butter, milk, rolled oats, extract, and cinnamon in a glass jar (or container with lid). Press down with spoon to ensure the oats are covered with the milk. Tastes and preferences can change πŸ’™ I never liked blueberries growing up, but now they’re at least a frozen staple in our house as a go to for adding to yogurt, oatmeal, smoothies, pancakes, etc. Sometimes it’s realizing how nutritious something is and how good it makes our body feel that gives us more reason to again try a food we never gave a second chance. Grease a 12-cup muffin pan. Combine all ingredients in mixing bowl and blend until smooth. Fill 12 muffin cups evenly. Bake at 350 degrees F for about 25 minutes and the tops are golden brown. I didn’t use muffin liners and removed my muffins immediately from the muffin pan (after cooked) to cool on a wire rack. Voila! . 1/2 medium banana, mashed 2 Tablespoons nut butter (your choice! I love PB πŸ₯œ) 1/4 cup unsweetened plain almond milk (regular milk works well too!) 1/3 cup ROLLED oats 1/2 teaspoon vanilla extract 1/2 teaspoon cinnamon + desired toppings (here I used a couple strawberries, dark chocolate chips, some sliced almonds, and some hemp hearts for a little extra protein) . Mix the banana, nut butter, milk, rolled oats, extract, and cinnamon in a glass jar (or container with lid). Press down with spoon to ensure the oats are covered with the milk. #tbt to my most recent marathon AND a 16 minute marathon PR!! Now to just keep inching towards breaking that 4 hour mark πŸƒπŸΌβ€β™€οΈπŸƒπŸΌβ€β™€οΈ #ivegotgoals . Race Recap from May 6 ➑️ All the stars aligned, and I raced a confident race. Allergies were magically kept at bay thanks to the rain the night before + the light drizzle throughout the whole race. Temps were spot on for running, I was on top of my nutrition prior to and during racing, and my favorite cheer squad of family was seen several places throughout the second half!! ☺️ I’ve never felt so good during a marathon. Proud of the work I put into this one, and very thrilled to see how I can get after it again at the next. I was confident at every hill and every mile of this course knowing that this time around, I put 100% effort into my training, recovery, and nutrition. A pancake STAPLE in our freezer πŸ₯žπŸ₯ž I make all the @kodiakcakes pancakes (just add cold water), then cool on a cookie cooling rack. Stack them in freezer bags with squares of parchment paper in between, and I place them in the very spot of our freezer dedicated to @kodiakcakes πŸ™ŒπŸΌ Then on busy mornings, pull a few out of the freezer and pop in the toaster while you’re getting jackets and shoes on ➑️ BAM! πŸ’₯ You’ve got a delicious breakfast on a need-to-get-out-the-door morning that includes 14g PROTEIN and 5g FIBER per serving 🍫 Also!
