Warming spices, plant-based protein, & some green goodies were the perfect comfort food this weekend.
Chock full of protein, fiber, folic acid, and manganese, chickpeas are nutritional overachievers!

...here’s what I did 👇
1 onion, diced
2-3 cloves garlic, minced
1 can garbanzo beans/chickpeas
1/2 TBSP curry powder
1.5 TBSP ketchup
1 cup water
1/2 TSP sea salt & 1/4 TSP pepper
Dash of cloves & turmeric
1 cinnamon stick
Sauté onion in some olive oil, stirring occasionally, until dark brown around edges, about 6 minutes.
Add garlic, curry, cinnamon, and cloves and cook, stirring, until fragrant, 30 seconds.
Add chickpeas, s&p, and a cup of water.
Bring to a boil; reduce to a simmer, cover, and cook 20 minutes.
Uncover, and increase heat to medium-high; cook until sauce is slightly reduced, 5-10 minutes.
I usually have it with rice or quinoa +🥦+ 🥑
