Cooler days and longer nights are upon us, which means comfort food season has officially arrived. It's time to hunker down with warming foods like French onion soup, macaroni and cheese and lasagna. Okay, so our favorite comfort foods happen to contain copious amounts of vegan cheese. Guilty as charged.
Yesterday I tried this vegan barley rissotto from @urbanplatter.in
also called barley khichdi in India and it turned out so darn good and cheesy. Almond Parmesan cheese used @urbanplatter.in
. You can even make your own cheese dressing at home using #nutritionalyeast
As for the recipe : * In one tsp olive oil @urbanplatter.in
sauté onions, garlic, parsley, basil and all the spices. Sauté until golden brown !
- Add tomatoes and vegetables ( you can even roast vegetables separately in microwave)
- prepare dressing adding 2 tsp almond Parmesan cheese, 1 tsp tahini, lemon, oregano, pinch of soy sauce and paprika
- Add the dressing to the pan
- add roasted barley rissotto and some #vegetablestock
- cook until soft
Garnish with coriander leaves, pumpkin seeds and pomegranate seeds yayyy enjoy !
