I'm far from home this evening, way up in the city of Redding, California at a restaurant called @mosaic_redding.
A young Executive Chef here, James Vereb, has just changed the menu for the season and among many other incredibly delicious additions, he's added this Arancini. But this is no ordinary fried risotto ball. These are panko breaded beet risotto balls, with local gouda, a carrot orange beurre blac, and carrot tops. Yes, they somehow made carrot tops delicious and relevant. Now I take arancini very seriously. I love to make it and I've had it everywhere from San Francisco to Rome. But ladies and gentlemen, this is the best and most creative arancini I've ever had.
So the next time you find yourself in far Northern California, I highly recommend stopping in Redding and trying Mosaic. Once you're done with your arancini, try the Sausage & Pepper rigatoni, the Carbonara, Airline Chicken, Mosaic burger or any of the pizzas. Or just close your eyes and point to something on the menu. Trust me, you'll like it!
