For all of us that get volunteered for those last minute Halloween bake sales or parties, these are for us 😜💆🏻♀️ Made in under 30 minutes from start to finish so that we can quite possibly enjoy our coffee hot (and only microwaved once, max .... I know I’m not alone here). *

O N M A C R O N U T R I E N T ________________B A L A N C E -- Macronutrient balance means getting the right combination of protein, healthy fats and fiber-rich carbs to fill you up, keep you satiated and keep your blood sugar balanced. I find that this is often one of the biggest game changers for clients. Why? Because when you don't get the right balance of nutrients, depending on what you're eating, you may end up with cravings, spiked blood sugar, feeling heavy/lethargic, lacking in micronutrients (vitamins, minerals) and/or eating more or less of particular macronutrients than your body needs -- all of which will prevent you from reaching your nutrition/health/wellness goals. Looking for a lighter fall squash dish? Try my Roasted Delicata Squash Salad, with baby spinach and Brown Butter-Cider Vinaigrette. So good. - 2 Delicata squash (about 2-1/2 lbs total)
- 3 Tbsp olive oil, divided
- 5 thyme sprigs
- 1/4 cup apple cider vinegar
- 2 Tbsp minced shallots
- 1 tsp honey
- 1/2 tsp red pepper flakes
- 3 Tbsp unsalted butter
- 1-1/2 cups baby spinach leaves, lightly-packed
- 1/4 cup chopped fresh chives
- kosher salt and freshly-ground pepper
- roasted squash seeds or your favorite toasted nuts, for garnish
1. Preheat oven to 425 degrees F with rack in center position.
2. Cut Delicata squash in half lengthwise and use a spoon to remove seeds and stringy pulp. (Set aside if planning to roast the seeds, otherwise, discard.) 3. Cut each half, crosswise, into 1/4-inch thick slices. Arrange on a baking sheet, toss with 2 tablespoons olive oil, thyme sprigs, and a few pinches of kosher salt and pepper. Roast 30-40 minutes, turning squash slices halfway through, until tender and golden.
4. In a small saucepan, simmer apple cider vinegar until reduced to 2-3 Tbsp, about 2-3 mins. Transfer to a small bowl and set aside.
5. In the same saucepan, heat butter over medium-low heat, gently swirling the pan occasionally, until solids are light golden brown and fragrant. Remove from heat.
6. Stir shallots, honey, red pepper flakes, and a pinch of kosher salt into the reduced cider vinegar. Slowly whisk 1 Tbsp olive oil and browned butter into the vinegar mixture until emulsified.
7. In a large bowl, gently toss together spinach, roasted squash, and vinaigrette until coated. Season to taste with salt and pepper. Garnish with roasted squash seeds or nuts. Serve immediately, while the dressing is still warm.

I’m back in the office today, and by office I mean small corner of our living room. And working in between playtime, snack time and sleep time. Trying to balance my time as a mum and a business women is never easy, but I do go easy on myself, if something doesn’t get done.. it will. And if my kids need me, I’m here
Having my office in the living room has been a challenge, the kids like to climb all over me and sit on my lap whilst I’m working, which I secretly love, but I’m not overly productive
