I was starving by the time I got home today so thank God for leftovers! I quick threw together this grain bowl using my lemon pepper green beans from last night and some of the stuffing ingredients for my peppers, and then topped it with a fried @vitalfarms

Yellow onion, yellow bell pepper, garlic, black beans, quinoa, lemon pepper roasted green beans + a fried egg and green tabasco.

saved my dinner tonight. 😬 It was another random meal of digging into my fridge and I found some pre-marinated beef shawarma, bok choy and peas donated to me by Mily which I cooked in pre-packaged Szechuan sauce, quinoa, smashed quail eggs and some furikake. Yes, I try and cut my carbs but Quinoa is actually a good carb- like any other carb rich food, you just have to limit it sometimes- obviously it depends on the person, like for vegans/vegetarians you will most likely need more quinoa than someone who is not (me), however I love adding quinoa to a dish. If your trying to cut down on the carbs/starch and take something like rice out of your diet, quinoa is the way to go- high in both protein and fiber, it will definitely keep your tummy full, satisfied, and HAPPY🥦🥙🍽💪🏼🥘

Here’s a tummy friendly, good for you bowl that’s warm and helpful for those recovering from sickness or feeling low on energy. Dandelion greens are literally somehow both a weed and the food of the gods. Also lentils make the world seem like a fun cozy simple place and kraut is like the cutest little way to add a party to your bowl. UGH I LOVE FOOD SO MUCH.
Dandelion greens sautéed with olive oil, lentils mashed into a sort of daal, room temp sauerkraut, quinoa made with ghee and a cute little piece of pepper that needed to be eaten because I WOULD RATHER TRIP ON THE SIDEWALK IN FRONT OF BEYONCÉ THEN THROW OUT FOOD.

Healthy meatballs with quinoa and hidden veg sauce . Cooking together doesn’t just have to be about sweet stuff! George grated, mixed, rolled and counted out as we prepared this together. Recipe: Mix together 500g pork mince, 3 tbsp cooked quinoa, 3/4 tsp oregano, 1 crushed clove garlic, 1/2 onion grated, 1 heaped tsp ketchup, 1/2 tsp sea salt flakes and a good grinding of pepper, 1 tbsp parmesan and 1 egg. Fry till browned all over and put in a baking dish. Pour over a sauce made by softening 1 pepper, 1 small stick celery, I carrot, 1 small onion and a clove garlic. Add two tins toms and a tsp tom paste and simmer for 10 mins. Add a tbsp fresh basil and 1 tbsp cream cheese then whizz till smooth and pour over. TOP with mozzarella and bake for about 20 mins in a hot oven. While I'm not vegan or vegetarian I do always try to find new foods to eat for some variety that are just as healthy. As a rule I rarely buy frozen meals even the "healthy" ones as they're loaded with sodium and ingredients you can't pronounce. I was happy to stumble upon this tonight at Walmart and it was very tasty and filling.
