Monday nights are becoming the time where I get all my prep done and things ready for our school week. In a perfect world, this would be done before now but by the time my weeks ends and the weekend fills up, this is my time and honestly, I don’t mind. This week we are doing everything around PUMPKINS!! What pumpkin activities did you try during PUMPKIN WEEK? One that we loved was this semi-mess free pumpkin exploration. Many little ones hate the texture of the goey pumpkin guts. We stuck the guts into a ziploc and explored the seeds and goo without having to touch them. For our other kids that love that slimey feeling, we had them pull the insides out of the pumpkin. Such a fun way to get everyone involved!

{Pumpkin Week, Recipe 7: Pumpkin Spice Latte Granola} • • Bringing it full circle with the recipe that inspired me to tackle Pumpkin Week. To be honest, as I was developing it, I was giving myself a hard time, feeling guilty about perpetuating the PSL joke. But, also: coffee pumpkin granola. • • My favorite thing about the granola, it unexpectedly turns out, is that it reminds me of my grandmother. No, she was not a pumpkin spice or granola fanatic, but she was famous for pouring her Grape Nuts and Cheerios into her morning mug of coffee. She ate things in the way that made the most sense to her (which is why growing up, it wasn’t weird to me that she gave me jello splashed with milk, or that she spread grape jelly on her fish...although that’s a tough one to stomach, even in theory, now). • • I poured the coconut milk for the picture, and then came back to it several minutes later. The smell of the spices popped out at me, but it was the bowl, looking like milky coffee, that caught my eye and made me think that maybe, as the years go by, I’ll find my grandmother more and more. I have no idea if she would have liked this (but I do know that regardless, she would have told me it was the most delicious thing I’ve ever made), but I love that when I look back at this picture, I’ll think of her. • •••••••• The recipe is adapted from my typical granola (@nigellalawson via @mollyorangette and @davidlebovitz ). I swapped out the applesauce for (a lot of) puréed pumpkin, upped all the spices, plus added extras for that pumpkin spice feel, used strong ground coffee, and added a couple tablespoons malted milk powder to give it a little more of that dairy boost (thanks to making so many @bravetart recipes this year - I was inspired and I have an open container of it), and used maple syrup and honey, instead of brown rice syrup. Bad news is, today is unfortunately the last day of #pumpkinweek on @healthychefsara :(. The good news however, is that for my last pumpkin inspired recipe, I bring you... HEALTHY PUMPKIN SPICE RICE CRISPIES!! 🎃🎃And to add a little touch, I will be providing the recipe to these delicious squares down below. . . . Ingredients: - 2 cups brown rice puffs - 1/2 cup peanut butter - 1/4 cup maple syrup - 3 tsp pumpkin spice Steps: 1) In a large bowl, mix all your ingredients until evenly incorporated. 2) Line a baking pan with parchment paper, and transfer your mixture into the pan. (Make sure it’s spread evenly) 3) Freeze in the freezer until solid (about 45-50min) . . {Pumpkin Week, Recipe 6: Rosemary Pumpkin Polenta Fries} • • I love (love, love) crispy polenta, but I’m not crazy about frying, or anything else that makes a splattery mess and results in a house that smells like oil. • • Broiling it gives me the same thing I’m after: a crispy crust with an incredibly tender center, even when cut into planks. • • For these, I made a version of my standard (cheater?) polenta, replacing a portion of the water with puréed pumpkin. I also went against tradition by adding a beaten egg to the pumpkin before cooking, to up the stability of the final product. These could also be baked at about 400, turning every 10 minutes (be very careful the first turn or two because they’ll still be closer to soft than firm.) • • ROSEMARY PUMPKIN POLENTA FRIES 1 egg 1 1/2 cups pumpkin purée 1 teaspoon kosher salt A couple grinds black pepper Water 1 cup polenta 1 large sprig rosemary, leaves stripped and finely chopped 2 tablespoons unsalted butter, cubed Grease bottom and sides of a rectangular container (mine was about 8”x10”). In large liquid measuring cup, beat egg. Stir in pumpkin purée, salt and pepper. Add enough water to equal four cups. Transfer to large wide stockpot. Add polenta. Bring to a boil, whisking constantly. Cook 3 minutes more (be careful — hot polenta pops). Reduce heat to medium and whisk 4-5 minutes more, or until quite thick and feeling harder to stir. Whisk in rosemary and butter. Carefully taste and adjust. Transfer to prepared container. Let cool 20 minutes. Chill 2 hours, or until completely cold and firm. Cover until ready to use or carefully invert onto a cutting board. Set oven rack about 4 inches from broiler heat source. Heat broiler. Cut into fries (mine are about 3/4” x 4”). Carefully transfer to greased baking sheet. Coat with olive oil cooking spray. Broil. If your broiler is like mine, you may need to adjust the baking sheet’s placement every few minutes, to reach all the fries. Once they’re slightly firm on top (5-7 minutes), carefully flip. Spray again. Continue until golden and firm. Broilers are funky though: keep an eye on the situation. Grate cheese over (this is ricotta salata), if desired.

Fall break/pumpkin week is coming to a close. We started the week with a huge haul of cheap pumpkins (bless little old men that sell home grown pumpkins) and the first thing we did was make our pumpkin planters. We do this every year and the kids LOVE watching their little pumpkin sprouts. We baked fresh pumpkin (which we then baked into crazy good pumpkin bread). While the pumpkin was getting toasty in the oven, the kids took a guess at how many seeds are in one pumpkin....and then we counted all 502 seeds (excellent slippery slimy hands-on counting activity). After all the counting fun, the kids took the guts, mixing bowls, a variety of spoons, and went foraging around our yard for pumpkin soup ingredients. I'm pretty sure they switched between brewing up soup, potion, and poison several times, but either way they had a great time! We had pumpkin guts for snack (dreamcicle salad). Friday of destruction was the best day, though. We made pumpkin volcanoes. The kids massacred pumpkins with a poke bin, and then took turns (with adult supervision) smashing the remains to pieces. A huge success and very cathartic. I lied. Wasn't ready for #pumpkinweek to end & coming hot off pizza night earlier this week, I knew one last place I could sneak in some 🎃 for a weekend kick-off 🎉 .. Pumpkin pizza (crust) FTW! Using @shredhappens classic meatza recipe outline, I made a tweak or two for some of the easiest, delicious, low-carb crust out there! Getting ready for a somewhat spontaneous shot at the @queenbeehalf tomorrow, I wanted one more balanced meal to hit my cravings while giving a good balance of protein + fiber, without a heavy load on my stomach 🙌🏻 .. But hey, if you're not into homemade crust and you missed Wednesday's review, @traderjoe 's butternut squash pizza crust is as gourd as it gets with a really nice flavor/texture profile 👌🏻 .. To make: —>Food process or blend 1 chicken breast, 1 egg, 1/4 cup of cottage cheese or greek yogurt (or parm cheese), 1/4 cup pumpkin purée, seasonings as desired + also used 1/4 cup of whole wheat flour here. Spread on lined baking sheet. —>Bake at 425F for about 10 minutes if using pre-cooked chicken and closer to 20 if you're using raw! —>Top away! {Pumpkin Week, Recipe 5: Spicy Roasted Pumpkin Wedges} • • Because of a regrettable, peeling and cutting of a 10 pound pumpkin situation many years ago, I tend to shy away from buying actual pumpkins, intended for cooking. I’d guess my yearly ratio to be about 10 cans purée to 1 real pumpkin. And I’m fine with that. Usually, I need the pumpkin already puréed and there are really good cans and boxes available. • • But, I should buy them more, because dealing with smaller, more manageable pie pumpkins are way easier than many hard squashes out there that my knife and I regularly wrestle with — and when roasted, they’re really good. It’s true that you still don’t want to eat the peel, but I’m OK with cooking and serving the slices skin-on like this, then cutting or pulling them off at the table. • • These are spicy, but really, the seasonings are up to you (you can even pumpkin spice them to your heart’s content, if that’s what you’re feeling). I used one pumpkin (which would serve about four people), halved it, scooped out the seeds, then cut it into wedges about 1/2-inch wide. I added them to a bowl of olive oil mixed with kosher salt, cumin, coriander, ancho chili powder, ground ginger, a dash of cayenne and a dash of cinnamon, and stirred it all around until they were completely coated. I spaced them out in a single layer on a rimmed sheet pan, then baked about 20, until they were tender and golden, turning once. {Pumpkin Week, Recipe 4: Gingered Pumpkin-Apple Chia Smoothie} • • I love smoothies, but when I drink them, it’s usually as a meal, so I have very specific feelings. Mainly, I want to make sure they fill me up and make me feel good about drinking them. • • This one has a base of hydrated chia seeds and soaked oats, which helps carry me almost to lunch. And, I love that if the apple I use is sweet enough, I don’t have to add anything (but, this is not crazy sugary so if you have a sweet tooth, you may want to add a date, honey or maple syrup). The other reason I love that it’s not too sweet is that you can taste the actual flavor of pumpkin, which I think often gets overshadowed by spices, sugar and pie crusts. • • Fair warning: even soaking the oats, they tend to give the smoothie a slightly different texture than a straight fruit/veggie version. But, I don’t mind it, and neither do the girls. • • GINGERED PUMPKIN-APPLE CHIA SMOOTHIE 1/2 cup water 1 tablespoon chia seeds 3 tablespoons rolled oats 1 cup pumpkin puree 1 cup cartoned coconut milk 1 large apple, washed and cut into chunks (not peeled) 1 1/2-inch gingerroot, peeled and cut into pieces 1 big handful ice cubes In small bowl, stir together water, chia seeds and oats. Let sit 10 minutes, stirring occasionally. Alternatively, you can do this the night before, and store, covered in the fridge. Stir well. In high-powered blender (or regular blender knowing it just won’t get quite as smooth), combine the chia-oat mixture and the rest of the ingredients. Blend 2 minutes, or until completely smooth, adding more coconut milk or ice, if needed. Taste and add more ginger or sweetener, if desired. Makes 2-3 smoothies. Read on and keep drooling 🤤 .. 1 3/4 cup AP flour 1 1/2 cup milk 3 tbsp brown sugar 1 tbsp baking powder 1/2 cup cream cheese (FULL FAT) 2 large eggs 1/4 cup oil 1/2 cup pumpkin puree 1 tsp vanilla 1 tsp cinnamon 1/4 tsp nutmeg .. Combine flour, sugar, baking powder, cinnamon, nutmeg together. Then add in the eggs, milk, oil, cream cheese, pumpkin — stir well but gently, just enough to combine. Heat waffle iron, spray, add batter & cook! And when you finish and have nothing pretty to top it with...grab some grapefruit, have at it, and call it a day🤙🏻😆
{Pumpkin Week, Recipe Three: White Chocolate and Toasted Pecan Pumpkin Cookies} • • I always teach the girls to keep learning and stay curious, but if I’m being honest, something big would have to happen for me to ever try to develop my own pumpkin cookie recipe. @sallysbakeblog ’s, which has been my go-to for five years, are too good — soft and chewy, not at all cakey, gently spiced and stirred together with a whisk and a wooden spoon. I also love that it’s #eggfree , which apparently still appeals to my former childhood allergy-self. • • These cookies are also exactly the kind of recipe you need, if you have a child who really wants to make things “all by myself.” I melted the butter (which she cut beforehand), toasted the pecans and dealt with the actual baking (oh, and read the recipe to her 😜), but otherwise, these were Easton’s cookies. She measured spices and swept backward with a knife, used the scale for the big things, whisked, mixed, lined the baking sheets with parchment paper and portioned out each one with the cookie scoop. It may have taken about an hour longer than it could have, but that girl was crazy proud, so all worth it. • • You’ll notice on #sallysbakingaddiction that the recipe calls for 1/2 cup chocolate chips. I’ve never made them that way — there’s something about the idea of white chocolate (chips or chunks) and toasted pecans that felt necessary the first time I made them, and I haven’t deviated since. {Pumpkin Week, Recipe 2: White Bean, Kale and Turkey Kielbasa Soup} • • Last year, we were unexpectedly snowed in, and I threw together a quick soup. As I was sautéing an onion, I looked in the fridge to see if there was anything green hiding out, and found a small container of leftover pumpkin purée. It didn’t seem like enough to make a difference, but I didn’t want to waste it either. • • I was wrong: the pumpkin gave a bit of body and richness to a carton of chicken stock and it made a basic greens and beans soup way more interesting, even if it didn’t actually taste like pumpkin. • • Since then, I’ve experimented and found that one cup of purée to about five cups of liquid seems to be the right ratio. This combo enhances the soup without turning it into a full-fledged pumpkin soup. • • WHITE BEAN, KALE & TURKEY KIELBASA SOUP 1 tablespoon olive oil 1 onion, peeled and chopped 6 cloves garlic, peeled and chopped 1 cup pumpkin purée 5 cups chicken stock (or 4 cups stock + 1 cup water) 1 can (15 oz) small white beans 1 bunch curly kale, washed, stemmed and roughly chopped 1 package (14 oz) turkey Kielbasa, cut into 1/4-inch slices on the bias In a large stockpot, warm olive oil over medium heat. Add onion; season with kosher salt and black pepper. Cook 10 minutes, or until softened and translucent, stirring often. Add garlic; cook 2-3 minutes more, or until softened. Stir in pumpkin purée. Cook 1 minute, stirring often. Add chicken stock, beans and kale. Bring to a boil; reduce to a simmer. Cook 5-7 minutes, or until the kale is starting to soften. Add Kielbasa; cook 5 minutes more, or until the kale is tender and the Kielbasa is completely hot. Taste and adjust seasonings, as desired.
