Ingredients: makes 12
2 medium sweet potatoes mashed- (stab with a fork and microwave for 6-8mins, scoop out the flesh when cool enough to handle)
1 can tuna (preferably in spring water) drained
1 shallot very finely chopped
2 tbs coriander finally chopped
1/2 tsp cumin
1/2 tsp paprika
1 tbs flour
1tbs olive oil for shallow frying.
Mix all the ingredients apart from the flour and oil, form into small patties. Sprinkle flour on both sides, and place on a medium heat pan and shallow fry for a couple of mins on eat side for a golden crunch.
