-400g powdered jaggery- uhmm👌
-2 1/4 cup finely grated carrots
-1 cup roughly chopped walnuts
-1 cup raisins
-1/2 tsp sea salt
-2 tsp baking soda
-1/4 tsp nutmeg
-2 tsp ground cinnamon
-2 3/4 cup (352g) white whole wheat flour
-1 tsp vanilla extract
-3 large eggs
-1 1/4 cup coconut oil
-1/2 cup crushed, drained pineapple.
-Preheat oven to 350°F
-Prepare baking pan by greasing well
-Beat powdered jaggery, oil, vanilla and eggs until fluffy or well mixed.
-In another separate bowl, sift together flour, cinnamon, nutmeg, baking soda and salt (double sifting is recommended)
-Slowly and gently add in the dry ingredients into the wet ingredients, mix until just combined
-Proceed to fold in raisins, nuts, carrots and pineapple
-Pour in batter into baking pan and bake for 55-60 minutes or until a toothpick or knife comes out clean
-Allow to cool and enjoy.
-You can decide to cover it in Greek yogurt as frosting or enjoy it like that.
