Today I started an 8 week fitness program that I’m super excited about ! On a day to day Monday - Thursday basis I am typically pretty good at eating healthy and taking time to exercise. However, as soon as the weekend hits I practically ruin all the hard work I put in during the week. I don’t really exercise, I over eat, and I put a large amount of bad food in my body. . . I’m starting this challenge as a way to really work towards a healthier lifestyle all the time and not just part of the time. @nimai_delgado and @biancataylorm are the creators of the program and if you haven’t checked them out before you definitely should ! The results from their past programs are down right outstanding and I can’t wait to see how I am able to transform physically and mentally! . . I choose to do challenges such as these because I respond well to plans that are laid out in front of me. I am not always the best at holding myself responsible, but when I am laid out meal plans, work outs, calorie and macro goals I typically respond well because I have boundaries I know I need to aim for. . . I love challenging myself and seeing what I’m capable of! This is one of the meals I ate today from one of my meal plan suggestions: 4oz tofu, 1 cup asparagus, 1.5 cups sweet potato, and 1/2 cup black beans 😍 I put some spices on top and devoured !!! . . I challenge you to go out and fix one thing in your normal day to day that will benefit you. Whether it’s a walk, and extra plate or green veggies, 15 min of reading, etc. You don’t have to go overboard and join an 8 week challenge like me. But I challenge you to change one thing in your life this week. Do one thing that will give you a positive outcome 😍💕 Happy Monday. Conquer this week 🤩

With the new quarter starting, my life has structure again. I’m going to challenge myself to post daily and include my daily calories. My old roommate @chris_cubra was in town today and we went to @patxispizza . While we waited for our pizzas, we grabbed some onion rings from @wahlburgers. So, I solo’d a 10” pizza, an order of onion rings, and then two bananas and an avocado within a 1.5 hour window for a total of approximately 2500 kcal. Not my healthiest day but still in a deficit.
🍝Roasted Pepper Pesto & Pasta 🍝 I loveeee roasted red peppers. How about you? I made a yummy vegan pesto using them & here’s the recipe: What you need: 1 lb box of pasta, 2 red bell peppers quartered lengthwise (stems taken off and seeds removed), 1 pint of grape tomatoes halved, 6 oz mushrooms sliced, 1 cup packed basil, 1/4 cup pine nuts, 1/4 cup oil, 2 garlic cloves, 2 tlbs nutritional yeast, salt & pepper to taste, some extra basil and pine nuts for garnish 1️⃣ Cook Pasta according to directions, and reserve 1/2 cup pasta water for later 2️⃣Place peppers skin side down, along with tomatoes, & mushrooms on a large lined baking sheet. Whipped up this dinner in less than 20 minutes this evening after a long day of traveling back from Vancouver. Feels SO good to be home with my boys! Cooked some quinoa with vegetable stock + sautéed garden broccoli with olive oil + can of rinsed chickpeas + frozen corn + sea salt & pepper. While that was cooking I threw some ingredients into the blender to make this delicious green dressing: 1/4 cup tahini + 1 lemon, juiced + handful basil + handful spinach + splash olive oil + splash water + 2 garlic cloves + salt and pepper + nutritional yeast (about 2 tbsp). Topped with a few fresh cherry tomatoes from the garden💚🌿 Love quick & healthy meals that taste good!

Reposting @mightymesina. Introducing plant based eating to our clients who would not even think about it. - We have a second level program called Elevation where we have different nutrition tasks. In the next two weeks we have to come up with some plant-based meals with these parameters: - • Between 500-1000 calories • At least 20% Protein • Fats and Carbs can be variable - Purpose: although I currently have no vegans in our Summer programs, I want to expose my clients to different food options and also vary their protein sources. For those who are not familiar with plant based foods, you cannot use any animal products. This includes any dairy (milk, butter, cheese), eggs and also fish. - I think a plant based diet is great and it emcompasses many of the things we promote at Mighty Transformation: nutrient dense, minimally processed whole foods. By knowing how to include plant based items it will give you more versatility in your diet. - I wanted a burger/sandwich but I never liked the soy burgers or black bean burgers. Either they tasted like chalk or there was little to no protein. Found this Portobello Mushroom Burger with better stats and fortunately didn’t taste bland. I grilled this and the beets were baked. Everything else was raw. No other oils or dressings. For today’s breakfast we were inspired by @learningfrombalance overnight cauliflower oats! They were definitely different from our regular overnight oats but in a good way😍 What you need: 1 cup riced cauliflower 1/4 quick oats 1/2 oat flour 2 tbsp peanut butter 1/4 cold brew coffee 1/4 cup almond milk 1/2 🍌 1 tbsp cinnamon 1 tsp vanilla extract 1 tbsp maple syrup Method: Mix all ingredients together in a jar and leave in the fridge overnight! You can top it off with almost anything. #meatlessmonday 🤣 actually that’s the case every day. 😆 The fall is a perfect time for stews, chili and soups. It’s also a great way to get lots of dense nutrition in a bowl.⁣ ⁣ Each week I’m trying a few new plant based recipes instead making the same meals every week . Today was a tasty Black Bean Mushroom Chili for dinner. Other than chopping the onions and slicing 2lbs of baby belle mushrooms dinner was made in 6 minutes in my pressure cooker or could be made in a Instantpot as well. High protein and fiber to keep you full for days 😚⁣ ⁣ Training for my last 70.3 of this season so easy to make meals is high on the priority list. There’s no time to spend an hour cooking dinner plus having several servings for either lunch or another dinner is a major plus in my book. 🥫🥗 Raw salad dressings by my good friend @nausheenthevegan - Thank you for sharing them on your page, I simply put them together 😀 - 🤷🏻‍♂️ Whenever someone asks for dressings to use on salads, I usually say it’s not something I’m familiar with & refer them to someone else way more of a pro than myself (in this case Nausheen). - 🙂 I do like to strengthen myself more in this “area” of dressings which is one reason I made this post, for me to refer back to it but also to summarize some options & share them with you guys in case you’re interested in trying them out. - 👆🏻Those are probably one of the most nutrient dense dressings I can think of (other than the typical lemon juice, garlic & mustard I stick to)
Today I made vegan pasta with different toppings. I made big batches and stored them in containers, to eat conveniently. The pasta sauce was made with: 2 blocks of soft tofu 1/2 cup of veggie stock 1/2 cup of regular soy milk 1 cup of nutritional yeast 2 whole roasted garlic 2 tablespoons of miso paste 1/2 cup of fresh lemon juice A pinch of oregano, thyme, parsley, rosemary & basil. A few pinches of black pepper Blend it well and heat on high for a few minutes, stirring occasionally. You can choose any toppings. I chose roasted bell peppers, sun dried tomatoes, fresh baby spinach, artichoke hearts, peas, caramelized onions, black olives, vegan bacon (crumbled) and vegan chicken strips. Who's tried tempeh?! 🙋 To be honest, the first time I tried it was only a couple of months ago. But, It’s quickly become a favorite source of plant-based protein. #meatlessmonday . And, tempeh is low FODMAP in 100-gram servings. 🤗⠀ .⠀ Low FODMAP Maple-Soy Glazed Tempeh⠀ .⠀ INGREDIENTS⠀ ¼ cup. maple syrup⠀ 2 Tbsp. reduced sodium tamari⠀ 1 Tbsp. garlic-infused olive oil (like @fodyfoods ) ¼ tsp. ground ginger Red pepper flakes, to taste (optional)⠀ 3 Tbsp. coconut oil (or other cooking oil)⠀ 1 (8 oz.) package tempeh, cut into 1-inch pieces (like @lightlifefoods ) Sliced green onions, green part only (optional)⠀ .⠀ INSTRUCTIONS⠀ In a small bowl, whisk together maple syrup, tamari, olive oil, ginger, and optional red pepper flakes. Set aside.⠀ Heat coconut oil in a large frying pan over medium-high heat. Once hot, add tempeh pieces and cook, flipping occasionally, until sides are browned. Remove cooked tempeh from pan and place on a plate lined with a paper towel.⠀ In the now empty pan, add sauce and cook over medium-high heat for 30 seconds to 1 minute, stirring constantly, until sauce starts to thicken. Remove from heat, add tempeh, and stir to coat. Hace un par de años tuve mi primer acercamiento con la alimentación basada en plantas, fue cuando comencé a hacer cambios en mi alimentación y estilo de vida.⠀ --⠀ Sin embargo, mi cuerpo pasó por muchos cambios y no estaba preparado. Pero empecé a hacer cambios paulatinos, escuchando a mi cuerpo y dándole su tiempo, dejando a un 80% alimentos de origen animal. Fue hasta este año, el día de mi cumpleaños en Marzo que decidí llevar una alimentación basada en plantas y hacerlo de forma consciente y respetuosa. ⠀ --⠀ Cuando hablo de una alimentación basada en plantas, me refiero exactamente a eso, a alimentarte en su gran mayoría de vegetales, frutas, granos y semillas, sin etiquetas ni extremos. Brocolli & Cashew Cheeze Baked Potato!!! This was DELICIOUS guys!! 🌱😍🌱😍🌱😍🌱 . . . Potato prep: Rinse the potatoes and puncture with a fork a few times. Bake at 375° for at least 1 hour. (May need longer depending on the size). . . . Cashew Cheese prep: Roughly 1 cup of soaked cashew nuts. (Either soaked for approx 4 hours in room temperature water, or 30-45 minutes in boiling water). Drain the water and put into blender. Add approx 3/4-1cup of plant-based milk of choice. Pulse. Add nutritional yeast, which is what gives you that cheesey taste. (Judging by the texture, you may have to add more milk at this point). Blend until smooth. Add Himalayan salt & pepper to taste. . . Assembly: cut open the potatoes and scoop out the content w/o breaking the skin, and put into a separate bowl. Add a dash of milk, plant-based butter, and cashew cheese. Mix well. Put back in the skins and back for an additional 10-15 minutes at 375°. . . I added extra cashew cheeze to the top and covered with steamed broccoli!!
