A friend once asked for advice for how to fake it 'til you make it, maybe because I keep saying it. I told her to just make a decision and run with it. Whatever the outcome resulting from the decision, deal with it. Sometimes what makes it is the handling of the aftermath, not how well the actual thing that needed to be done was done.
These two pies were actually a disaster when the came out of the oven, but I dealt with it to recover the pies. Next time, I won't make the same mistake.

this week. Tested out a new apple pie recipe that incorporated a crumble under the lattice. Many more desserts to come later in the week!
Spiced plum pie 🌟 Recipe below ↴ All the flavours of the season - perfect for your Thanksgiving or Christmas table! I’m super excited for all the festive recipes this month, off to London today for a special party 🎉 to kick off the celebrations! Spiced plum pie
400g plain flour
pinch of salt
2 tbsp sugar
200g vegan margarine
6 tbsp olive oil
450g plums, sliced
2 tsp cinnamon
1/2 tsp ginger
1/2 tsp all spice
2 tbsp sugar
1/2 lemon, juiced
2 tbsp cornstarch
Add flour, salt, sugar and margarine to a food processor and process until crumbly (or use your fingers). Mix the oil with 6 tbsps of cold water and gradually add to the crumbs until a dough forms. Flatten into two discs and wrap in plastic film for at least 30 mins. Roll out one pastry disc and line tart tin.
Add sliced plums to a large bowl and coat in ginger, all spice, sugar, lemon juice and cornstarch. Stir well to coat. Roll out second disc of pastry and cut out desired shapes. Fill tart with plums and cover with pastry. Bake in the oven for 40-45 minutes, until golden and crispy.

🍎🍏My attempt at a pretty apple pie lattice after seeing too many gorgeous pies on Instagram! Wow are there some beautiful works of art shown off with pie dough! Grateful for these gorgeous apples from our neighbors to give me an excuse to make pie! 🍏🍎 I used to make the worst pie crusts (but still loved eating them) but I've gained some confidence in my method and recipe recently. Now I used quite a bit more dough in this pie than usual because the braids use three times the dough. That much dough keeps the edges from burning, but it's a lot to eat. Not anything my pie crust loving self can't handle. But I usually eat Brad's crust too (he hates pie, but especially the crust--what a crazy guy!) and with this pie I can barely just get through my own. 😂
