Cheese’s first real step toward immortality. Something that was fluid, hard to lug around, and with a shelf life of a week or two is transformed into something you can hold onto, store for months or even years. It is the summer sun captured for the dark days of winter back when (way back!) you couldn’t just go to the store and buy strawberries in January. And almost all cheeses wether fresh or aged for years undergo the same basic process but what you end up with can be drastically different if you cut it smaller here, cook it longer there, introduce water to wash the curd, slab it in piles and cheddar them into cubes, cook the curd or keep it at room temperature, press the curd together with a little force or a lot. Eating is an agricultural act. Every choice you make in the grocery store, at a restaurant, and as a guest for a meal at someone’s home puts you in the pathway of either protecting the environment, the oceans, rivers, and the welfare of animals or harming them. Your decisions also impact your health in ways that are not as simple as whether you choose fish or red meat. When you eat animals, including fish, that are confinement farmed, those animals and fish are being fed corn and antibiotics. None of the animals we eat are supposed to be fed corn or antibiotics. Their corn diets change their amino acid ratios in their flesh to a composition that humans have not evolved to metabolize. Too much omega-6 and not enough omega-3 is the end result for confinement farmed animals and fish. Too much 6 and not enough 3 leads to obesity, heart disease, and Type 2 diabetes. Do yourself a favor and stop eating meat and fish unless it has been allowed to freely eat what nature intended for it to eat and to roam outside or swim. P.S. You’re not doing yourself or any poultry any favors by buying “Cage-free” eggs or meat. They’re still cooped up in these concrete barns being forced to eat grain. Pastured poultry and eggs are the only humane and healthy poultry products for humans. I have a ewe who went blind through no fault of her own, and who has, despite her blindness, been able to keep up with the flock even while ranging the forest just fine. This year, at last, she’s given me twins, including this pretty little ewe lamb. She has actually turned out to be a gentle, docile mother, as if she knows that she could lose her lambs in the crowd of noises of the other sheep. She lays down for me to check her over, and let me handle the lambs without a fuss. I’ve felt kinda bad about keeping her alive this past two years since she went blind, but she doesn’t seem to come to injury over it, and I really, really wanted a shot at a ewe lamb out of her. Sometimes folks keep an animal alive that the rest of us just look at and know, that poor beast suffers, and for what, your inability to say goodbye? I think, in Cinder’s case, we managed to tread the right side of the line between unnecessary suffering and accommodating a good beast with bad luck. We’ll see how things work out with these lambs, and whether or not Cinder actually manages to raise them to weaning on her own. Beast Mode Greens is getting ready for pigs! Yes that's right, I said we're getting ready to raise pigs! My daughter Eva and I finished building a shelter today for our 5 American Guinea Hogs that we'll be getting very soon!
By rotationally grazing pigs, we will build the up soil and prepare it for planting future crop beds.
As the pigs eat the grass they till the soil and then their manure adds fertilizer to it.
By allowing the pigs to do all the hard work for us in preparing the soil for planting, we also have the added benefit of having delicious grass fed, pasture raised pork meat!

VIETNAMESE GRILLED LEMONGRASS PORK - (THIT HEO NUONG XA)
2 lbs pasture raised pork shoulder steak, about 1/2 inch thick
4 tbsp cane sugar
2 tbsp chopped garlic
2 tbsp chopped shallot or yellow onion
2 stalks lemongrass, trimmed and finely chopped (6 tablespoons)
1/2 tsp black pepper
3 tsp dark (black) soy sauce
3 tsp fish sauce
2 tbsp avocado oil
1. Put sugar, garlic, shallot and lemongrass into an electric mini chopper and process to a fine texture. (Or, mince the garlic, shallot, and lemongrass individually, put them into a bowl, and add the sugar.) 2. Add the pepper, soy sauce, fish sauce, and oil and process to combine well.
3. The marinade will be chocolate brown. Transfer to a bowl.
4. Add the pork, and turn to coat well. Cover and set aside at room temperature to marinate for 1 hour. Or, refrigerate up to 24 hours
5. Let the meat sit out at room temperature for 45 minutes to remove some of the chill before grilling.
6. Preheat a grill to medium-high. Grill for 6 to 8 minutes, turning frequently, until cooked through.
7. Let meat rest for 10 minutes before slicing and serving.
