Noodles in Asia and Spaghetti in Europe may look similar, however they have many differences.
• Noodles tend to use softer wheat whilst pasta wheat is generally the harder, durum variety (more refined suji) that grows in the Mediterranean region. Softer wheat gives noodles a lighter colour, a smoother, silkier feel and enables them to cook quickly, whilst harder durum wheat provides pasta with a more golden colour, a strong, elastic texture and a firmer bite.
• Also, noodles generally contain salt, added to develop the softer protein and help bind the dough, whilst pasta is mostly salt-free. This means that noodles are cooked without the need for extra salt.
• Noodles were traditionally served in a hot or cold seasonal broth whilst pasta had a sauce added. Nowadays, though, fusion cuisine is offering all sorts of exciting new ways to prepare noodles.
• But the most important different is how they are made: whilst pasta dough is generally extruded, much like squeezing a toothpaste tube, noodles are made to the "roll-and-cut" method.

at the beginning of this month - on their very first Saturday of service!! Naturally there was a lineup. But it was SO worth the wait. I repeat: SO worth it. Some of the finest pasta I’ve had on this continent. You could taste the care & love that went into it. It wasn’t just hype. This place is special, Toronto ❤️

What started out as a ‘secret pasta speakeasy’ - born out of the passion of owner Leandro Baldassarre (pictured) - has turned into a small empire in-the-making. Only a limited amount of pasta is prepared for lunch service (Tuesdays-Fridays, and Saturdays in December thus far). The lineups, the vibe, the space, the food - it makes for such a great and unique experience! We weren’t able to sit down and eat on-site (there are only 4 tables!) - but luckily grabbed some takeout. My food pics are therefore not representative of the Famiglia Baldassarre plating - but I can 100% attest to the delicious taste! I can’t wait to return. Again and again. Grazie @famiglia_baldassarre

Gainsbourg Bistro-Brasserie and it was ok overall I think. The place is very nice inside. The waitress was friendly and at our table very fast but then it would take forever for her to come back. I had a mac & cheese that I found it was a bit too cheesy almost sickening. People that were with me liked their food (burger and soup). I liked though the atmosphere of the place and the patio - it must be nice to be there in the summer. I might go back. 🥣 Fui conhecer o @microgainsbourg
Gainsbourg Bistro-Brasserie e, no geral, foi ok eu acho. O lugar é bem bonito por dentro. A garçonete bacana e educada atendeu a gente rápido mas depois desapareceu! Eu pedi um Mac&Cheese e achei muito cremoso e bastante queijo, quase enjoativo. Quem estava comigo gostou da comida deles (hamburguer e sopa). Spaghetti con espinaca baby y salsa de queso de cabra; me gusta mucho el queso de cabra pero aveces no se como usarlo al cocinar y esta es la receta perfecta, además es rica y considero seria una comida completa y saludable.
320 g de spaghettis o puede ser tallarines
200 g de hojas de espinaca
150 g de queso de cabra
50 ml de leche
1/4 de cebolla picada
1 diente de ajo
2 cucharadas de aceite de oliva
Sal y pimienta al gusto
Cocer la pasta en abundante agua, yo agregó un trazo de cebolla y un poco de aceite de cocina para evitar se peguen, después escurrir y reservar.
Picar la cebolla y el ajo y en un sartén agregar el aceite de oliva, el ajo y sofreír con la cebolla y agregar el queso de cabra y la leche, se hará una crema, cuando esté uniforme agregar las espinacas, reducir por espacio de 5 minutos y agregar la pasta y mezclar bien.
Puedes agregar almendras fileteadas para decorar o parmesano.

I love the earthiness of the truffle & parmigiano-reggiano offset by the creaminess of the butter, the saltiness of the prosciutto & the crunchiness of the grissini cracker!☺️⠀

HEADS UP — they go quickly, so make a big batch for your gang! I generally figure about 2-3 per person depending on the rest of the menu.⠀⠀

PROSCIUTTO-WRAPPED GRISSINI w/TRUFFLE PARMIGIANO BUTTER⠀⠀
Serves 12-20 as an Appetizer⠀
For the Butter*:⠀⠀
•½lb unsalted butter⠀⠀
•½cup parmigiano-reggiano cheese, grated⠀⠀
•2Tbsp truffle oil (white truffle oil is preferred)⠀⠀
•½tsp truffle salt (or plain salt if you don’t have truffle salt)⠀⠀
•¼tsp black pepper⠀⠀
•20slices prosciutto, very thinly sliced⠀⠀
•Make butter by mixing first 5 ingredients together until well-combined. (This can be made in advance, as it holds for weeks covered tightly in fridge.)⠀⠀
•When ready to assemble, spread room temp butter over ¾ the length of each grissini. Then, wrap buttered part of grissini w/1/2 slice prosciutto.⠀⠀
•Continue w/remaining grissini, then place on plate for serving.⠀⠀
•If you are not eating them immediately, cover them tightly in plastic, to prevent prosciutto from becoming dry & discolored.⠀⠀
•*You’ll definitely have Butter leftover. It’s great w/Cheese Ravioli or on warm bread!⠀⠀
