Nothing like a good ol’ stack of pecan butter stuffed pancakes to warm my soul on this crisp, autumn morning🥞Which I am absolutely loving, by the way!! The air just seems like fall and I’m so ready for pumpkin everything, and Thanksgiving, and Christmas cookies (not fall, but still coming)🤗I’ve been trying to think of new flavors for my pancakes, so I came up with a chocolate, pecan butter stuffed flapjack this morning, but I wanna get really wild; really out of the box📦So if you have any ideas, please let me know!! My favorite appetizer! CAJUN ROASTED CAULIFLOWER with AVOCADO LIME DIP (Not the greatest pic, as my darling littles were needing me, but this is truly delicious) Cauliflower is cheap and super nutritious. From what I've witnessed it's not the most popular vegetable. Ever notice at a party how it's the last vegetable standing on a veggie tray?🤔 There will be no cauliflower left , after you try this recipe ! One serving of cauliflower contains 77 % of the recommended daily value of vit c. It's also an excellent source of vitamin k, protein, thiamin, riboflavin, niacin, magnesium, phosphorus, fiber, vitamin b6, folate, pantothenic acid, potassium and magnese. So...basically a multi vitamin, but one you can chew and taste, which in my opinion, is so much better! In this recipe the cauliflower is crunchy with a bit of spice. Dipping it into the creamy, tangy avocado dip, is a perfect marriage. Long time no see with this #breakfast ! @siriusaboutfat reminded me of a past routine weekend breakfast for me: eggs coddled in cream. I haven’t eaten it in ages as I’ve majorly cut back on dairy consumption, and my one attempt at a nondairy version came out less than stellar. But I decided to try again with the rich coconut milk that I use to make yogurt- it’s thick and creamy like HWC but is less sweet than other brands. Greased a ramekin with ghee before adding the cream and two @localcoolingfarms eggs (look at those yolks! 😍) some cherry tomatoes and herbs, baking until eggs are just set. This was a delicious alternative to the classic coddled eggs in dairy cream, and will be coming back into rotation!

A slice of this bread will keep you satiated for at least 4 hours. Excellent item for those who wants to #stopsnacking ... And you can enjoy this deliciousness with anything you like (e.g., honey, cheese, spreads, or on its own - it’s fabulous!) AND ABOVE ALL, it is so easy to make! 🙏🏽♥️ INGREDIENTS : • 3/4 cup creamy roasted almond butter (at room temperature) • 2 TBSP olive oil • 3 large eggs • 1/4 cup arrowroot powder • 1/2 TSP salt • 1/4 TSP baking soda • 1/4 cup dried apricots (chopped into 1/4” pieces) • 1/2 cup dried cranberries • 1/4 cup raw sesame seeds • 1/4 cup sunflower seeds • 1/4 cup pumpkin seeds • 1/4 cup sliced almonds • olive oil for greasing DIRECTIONS: 1) in a large bowl, blend almond butter, olive oil, and eggs with a hand blender until smooth 2) in a medium bowl, combine arrowroot powder, salt, and baking soda 3) blend arrowroot mixture into wet ingredients until thoroughly combined 4) food in apricots, cranberries, seeds, and sliced almonds 5) grease a 7,5” x 3,5” loaf pan with olive oil (you may want to use a parchment paper for easy removal after baking) 6) transfer batter into loaf pan and sprinkle with some sliced almonds on top 7) bake at 350F for 45 min 8) let bread cool in a pan for 1 hour, then serve TO STORE THIS BREAD, wrap in a paper towel, seal in a plastic bag, and refrigerate for up to 1 week!
*If it was easy everyone would do it* - This morning I woke up feeling the worst I’ve felt yet on prep: exhausted, hungry and generally quite down. (tears came out mid cardio lol) - Having been back at uni for a week now Ive come to realise how much control prep has had over my life for the past 4 months. I didn’t notice how anti-social I had become and since coming back I’ve realised how many social situations I’ve backed out of and nights out I’ve stayed in for due to sheer exhaustion. - It’s crazy what you notice when you take a step back and reflect on what you’ve achieved.✨ - I’m so so so nearly there now and I’m so so so proud of how far I’ve come. In two weeks time I’ll be brown and sparkling and on that @2brospro_events stage👙💪🏼 - To say I’m excited is an understatement. ⭐️💥⭐️
