Just a throw back to my Earls days with this Cajun Chicken Cheddar Sandwich (stepped up a notch with this fresh, buttery @portofinobakery
Brioche bun), served with perfectly golden baked potato wedges.
We were craving pub food, but a dash of Cajun spice on ordinary chicken breast or thigh, and some sharped aged cheddar were all I needed to have on hand to make this glorious specimen. Just pushed the stroller a few km down then uphill to pick up the buns (aaand there’s that thing called “balance”) 😉
For my Cajun spice blend 🔥:
- 1 tsp Smoked paprika
- 1/2 tsp Chili powder (depending on how spicy you like it)
- Dash Thyme
- Dash Oregano
- Dash Garlic/Onion powder if your tummy can handle it
- Dash Salt & White pepper (could use regular black pepper, but I dig the skunkiness of white in this blend)
