...🌽A Country Grown on Corn🌽... I showed up for work at the community garden yesterday and was in awe by the beauty of the corn that towered over my head. The corn was at least a foot or two taller than me with beautiful red tassels flowing over like locks of hair topping the generous giants. What an amazing and awe-inspiring plant corn is! Although this plant has gotten a bad rap lately in the press, this is mostly due to it being used as the main source of animal feed and unhealthy processed food products. But whole corn seeds are super nutritious, full of fiber, water, protein, fat, healthy carbohydrates, and protective phytonutrients. Corn can take a lot of the credit for growing a nation since it has been an American staple crop for millennia. Here are some more corny facts: 🌽 Corn’s Ancient Origins – Corn/maize has been a staple food of Americans for thousands of years. There is evidence that Americans were cultivating corn for at least the last 6000 years. 🌽 The oldest rock art on this continent includes petroglyphs of corn and agave plants. 🌽 Fresh corn is a great source of antioxidant carotenoids including lutein and zeaxanthin, phytochemicals that support healthy vision. 🌽 Corn is considered by many serious gardeners to be an essential staple crop because of it's nutrition value, ability to store well, and the diversity of tasty ways to enjoy it. 🌽 Over 90% of starch used by Americans today is from corn. 🌽 56% of added sweeteners used by Americans today are from corn. These use just the processed sugar from corn, while leaving behind all the beneficial nutrition found in whole corn seeds. 🌽 Less than 10% of corn grown in America is consumed by humans. According to the CDC, nearly 1 in 5 school age children and young people (6 to 19 years) in the United States has obesity. One of the EFNEP tips I have been trying to incorporate into my diet is to go meatless at least once a week.  Protein alternatives you can add to your diet include beans and peas which are a good source of protein, vitamins, minerals, and fiber, naturally low in fat, and less expensive than meat.  Just substituting beans with meat once a week has saved me a LOT of money in my grocery budget. One of my favorite ways to incorporate beans into my diet is to make bean burgers (it is a healthier version of my FAVORITE food)! These cauliflower nuggets from Salamander Resort are a great delight, esp since I'm a huge huge fan of cauliflower! . Cauliflower can be used as a substitute for rice and potato (or to decrease the amount of rice/potato called for in the recipe). Just remember to strain all the water out of the cauliflower first! The first time I made mashed cauliflower...it ended up more like cauliflower soup. 😩 . Eating healthy doesn’t have to take a whole lot of time, it just takes a little planning! Step one in the planning process is just making a list of the healthy meals your family likes. Often times we forget from week to week the simple, healthy meals we can cook for dinner. One of the meals on the top of my list is stir fry. Another part of my planning process is cooking brown rice and chicken on Sunday so I can add it to meals all week! I stir fried this in some low-sodium soy sauce, but that stuff still has LOTS of sodium in it. If I had been really prepared I would have had the ingredients I needed to make my own healthy stir fry sauce. I love the combination of mozzarella cheese, tomatoes and basil. If I can eat caprese salad as a snack everyday, I would! . Basil are part of the mint family and are rich in vitamins A and K and also iron and magnesium. . If you have extra basil that you can't use up, you can put the basil leaves, garlic, onion powder, garlic salt (or regular salt for those who are not a huge garlic fan), cracked black pepper, olive oil and some chili pepper flakes in a food processor and then freeze in ice cube trays. But...let’s be real, sometimes it creates a lot more work for momma. A LOT more work. Am I right? 🤦🏻‍♀️ . I find simple tasks that won’t cause me to stress out, allow anyone to lose a finger, or singe the hair off someone’s arm. 😳 . When it comes to making pesto, I am all about feeling and flavor. A few giant handfuls of bright green basil, a couple smashed cloves of garlic... maybe more, maybe just a small one. Lots of cheese (I like a mix of Parmesan and Pecorino Romano) or none to keep it vegan, if you’re into that. Raw or toasted pine nuts? Up to you... or maybe you like walnuts instead. A squeeze of lemon juice for brightness and a couple turns of a pepper grinder. Pulse it in a blender or food processor and then keep it running as you drizzle in some rich extra virgin olive oil to your desired texture. I’m so grateful we got to pick enough basil at @road20farm #farmparty yesterday, so that we have pesto for the winter. Such an unexpected gift! Farm to table at its best. We are talking popcorn this week! If you cook it yourself, to avoid eating lots of extra salt and butter, it’s actually a really healthy whole grain snack! However, I know when I make popcorn I crave for it to have a little flavor. Before I found this recipe I used to grab for that super bad for you cheese powder, but not anymore! Yogurt Parfaits & Granola! This week with my classes we discussed sugar, probiotics and flavored yogurts vs plain yogurt. _ The recommended amount of added sugar we should consume a day is a max of 6 tsp or 25 g of sugar for women and 38 g of sugar for men. Many flavored yogurts such as yoplait, dannons and etc are loaded with added sugar! So instead we sweetened our plain yogurt with honey, cinnamon and orange, juiced. Plain yogurt has live cultures (good bacteria) which are known as probiotics. Probiotics helps to keep our gut healthy (our second brain) _ Recipe for Gooey Granola: 🔸1 1/2 cups of oats 🔸2 tbsp of preferably raw honey 🔸3 tsp of flaxseed (high in fiber and great for regulating digestion) 🔸1/4 tsp of cinnamon Steps: Mash banana, add oats, flaxseeds, honey and cinnamon. Make into small balls. Makes about 15-20 _ Recipe for Yogurt Parfait: 🔸1-2 cups of plain yogurt 🔸1/4 tsp of cinnamon 🔸1 orange, squeezed 🔸1/2 an orange, diced 🔸1 Apple, diced 🔸Berries of choice (we used strawberries) 🔸3 tbsp of dried fruit of your choice (we used dried pineapples) Steps: Add yogurt to bowl, squeeze half an orange, add cinnamon, tbsp of honey and mix. Combine fruits in a separate bowl. _ Yogurt parfait: Add one layer of yogurt, followed by fruit, another layer of yogurt, more fruit and etc. Add granola ball on top of parfait or eat it as a side! _ I hope you guys enjoy this recipe! Healthy doesn’t have to mean complicated and expensive. I usually cook brown rice at the beginning of the week and add a variety of veggie and protein options to it to make different meals. Last night I sautéed up some veggies (including spinach, carrots, and homegrown peppers) then added the brown rice (a whole grain by the way) and some black beans (a super cheap protein option) to the pan right before I served it to warm it all up. I splurged at the grocery store and added a little feta cheese for some taste. Last week all of my students made popcorn with me in my popcorn popper, and they LOVED it!! They were even more excited to learn that popcorn is a WHOLE GRAIN! Microwave popcorn, movie popcorn, and other options that come pre-popped are not good for you because the benefits of the whole grain are drowned, literally, in the negative effects of butter and salt.  If you pop the kernels yourself you can control how much oil and slat you put on the popcorn and it becomes a really healthy, whole grain snack your whole family can enjoy! #transformationtuesday the girl to right has struggled with her weight for a very long time. I didn’t understand how I was working out but my stomach was not as slim as I wanted it to be and why my quads were growing but my behind wasn’t. I can admit the girl to the right was depressed, insecure and it was mostly because my acne and weight took a toll on my happiness. I wouldn’t leave my house without covering my acne/scars, I would even workout with a face full of makeup and I had just gotten off birth control which made me gain a lot of weight. (Honestly terrified of going back on birth control) Many would say that the girl to the right looked perfectly fine but I wasn’t fine on the inside.
