One of my biggest “guilty” pleasures is blue (bleu?!?!) cheese dressing. It’s one of the many influences that my grandpa has had on me since childhood, and I’m not ever gonna feel bad about it. When we’re having a rough day, food is one of the best tools I have, aside from music, to brighten his mood and turn things around. He doesn’t remember his favorite salad dressing by name, but when he tastes it, his whole world changes. I love that. What foods bring you THAT much pleasure?! If you can’t name any, let’s chat about figuring that out ASAP!! It’s a busy time of year, and for some, it can also be a challenging and stressful season. Simple and colorful meals full of flavor, can really nurture as well as nourish us. Our flavor-bomb salad tonight went perfectly with a simple roast chicken, covered with the veggies and juices it cooked in... loving referred to as “goo” in our house. 🌽STOMACH VS. STOMACH🌽... You may have seen me share this demo with you before, but it's such a good one I'm going to keep on sharing it from time to time. Each glass fishbowl represents a human stomach and is actually about the same size - the average human stomach is about 1 liter but has the capacity to stretch to hold up to a gallon. In each of these"stomachs"  is roughly 500 calories of corn in different forms. This demo teaches the concept of calories, calorie density, nutrient density, and the science of stomach satisfaction. The human stomach senses if its full by the nutrient content you put in and also how physically filled it is. If there is not enough nutrients in your food you will stay feeling hungry as your body craves real nutrition. If you don't fill the stomach up to its capacity it also won't feel fully satisfied. Eating a meal of whole plant foods fills your stomach with fiber, water, and the full array of nutrients it craves, so it leaves you feeling satisfied. The stomachs with processed foods contain a fraction of the nutrients or very minimal nutrition. For example the corn syrup sweetened candy and soda pack in a lot of calories but almost no vitamins, minerals, phytonutrients or fiber. Also pcessed foods are often more calorically dense so they are easy to overdo because they don't send the same signals to your body that you've had enough to eat. In the competition for goodness, the whole foods stomach always wins! This photo is from one of my recent nutrition education classes. ..🌱🍎 NUTRITION ED - AT WORK 🍎🌱.. When children grow and prepare their own healthy food, they are more likely to eat and enjoy it. I love my job as an edible education/nutrition instructor. In my hands-on classes we spend about half our time together learning about nutrition and about half our time making a recipe together in small groups. During the last month I made Three Sisters Salad with over 400 fourth graders and it was such a joy to see their joy while making this recipe themselves and then enjoying what they created. In this picture I'm demonstrating the recipe with student volunteers from the class. Afterwards students works in groups to prepare their own salad and then cooperatively serve their classmates and taste their creation. Most students said they really enjoyed the recipe and many told me they would like to make it for their parents. Some say they never liked salad before this or never liked beans before but they like them in this salad. I encourage students to adapt the recipe to what they like and to make healthy substitutions with other whole food ingredients they may have at home. Students take home the recipe card at the end and are encouraged to share the new recipe with their family. I keep talking about hot drinks...probably because avoiding sugary hot beverages is a challenge for me year round, especially during the cold weather months.  I love those pumpkin spice beverages, they just taste good (wake up Brooke, that is because they have a TON of sugar in them). After actually looking at the calories in those drinks, I don’t think I will ever buy myself a Starbucks Pumpkin Spice Latte again.  A medium Starbucks Pumpkin Spice Latte contains 380 calories! That is almost 20% of the calories someone following a 2,000 calorie diet should eat a day...spent in ONE drink. Instead, to get a similar taste, I add a LITTLE cream and sugar to my coffee and sprinkle in some cinnamon.  It tastes great, is healthier, and costs a whole lot less. If you are adventurous in the kitchen I have added a link to a Pumpkin Spice Latte recipe to my bio. This recipe calls for pumpkin puree, which is awesome. After I graduated college I got married and gained over 20lbs in one summer. We were in a new town and didn’t know many people. Then, I got my first teaching job and met the person who introduced me to Bay Athletic Club, and she also happened to be the owner 😉 As she gave me a tour we walked down by the studio and a Turbokick class was happening. I instantly got fired up and said, “I’ve never taken a class before but I want to do that!” I was hooked and fell in love with the fun music and high energy. Two years later she asked me to teach Turbokick! That was almost seven years ago now😱❤️ It was my first love in fitness and is still to this day the toughest format to teach. It’s total body cardio with high intensity intervals for good measure 💦 💪🏻I subbed tonight for the first time in a year! At the EFNEP Holiday Party we made inexpensive, homemade holiday gift jars, including this one with a healthy Hot Chocolate Mix inside! ❄️ The recipe for this Hot Chocolate Mix is simple, 1/2 cup cocoa power, 1/2 cup sugar. This recipe has a lot less sugar than some of those mixes you can buy at the store. I placed the mix in an 8 oz jar (I got a pack of 12 jars at Ingles for $10, but I hear you can get them cheaper at Dollar Tree), and decorated it with festive stickers I found at Dollar General for $1 per pack of 100! The end of the semester is always a challenging time, overwhelmed with thoughts of what “should’ve” been accomplished and struggling with feeling like I’m not doing enough. I can find myself feeling disappointed and losing sight of the big picture. Tonight, we celebrated new graduates from my lab and the achievements of previous grads. I am so proud of these women, and I am grateful that I had the opportunity to be a part of their education. Caffeine is one hell of a drug! . Caffeine is also the most abused drug. . Sadly, it’s a “drug,” lol at least by scientifically terms 😂 . Idk about you, but I love caffeine, and it does a lot for us, the primary use of caffeine for most of us is for mental alertness. (Yes I abuse caffeine) . However, there are times when I train late at night and as much as I love caffeine I know that if I have coffee or a stimulated product at night that caffeine also negatively affects my sleep. . Actually, if we consume any caffeinated product (coffee, pop, supplements, etc) within 4 hours of going to sleep it will affect an hour of our sleep. The reason for this is because 70% of the melatonin in our body is stored in the stomach and when we add caffeine we stop the process of allowing the melatonin to flow from our stomach to our muscles (which ultimately makes us relax and get into deep sleep) . Getting into a deeper sleep and a more restful state will help us burn more fat and build more muscle! . Point being - be thoughtful of when and how much caffeine we consume especially at night! . 🌱🍅RECIPE: LENTIL LOVER SOUP🍅🌱 I'm well overdo to share a new recipe with you and this one is very special to me and is a perfect warming meal for the cold weather season ahead.This hearty, nutritious and super easy soup is sure to please the entire family. This recipe is my very first soup recipe I created - adapted from a recipe from my grandmother - when I was in college. I loved this recipe because it only cost me about $5 to make an entire pot of soup which I would eat for supper for a whole week. Now it may cost slightly more to make but not much - I estimate $7-8 in ingredients from Trader Joes will fill your crockpot with lovely Lentil Lover Soup. This one pot meal is delicious served with fresh crispy bread, salad, or with sliced avocado on top. Here's the simple 100% plants recipe: INGREDIENTS: 🍅 1 lb (16 oz) dried lentils 🍅 1 jar (26 oz) Marinara sauce (organic, no salt added) 🍅 6 cups water 🍅 1 large onion diced small 🍅 16 bulbs of garlic (about 1 whole head of garlic, peeled, diced) 🍅 3 cups of potatoes chopped small (~21 small potatoes) 🍅 1 small head of celery chopped small 🍅 3 large carrots diced into rounds 🍅 1 tsp cumin 🍅 1/2 cup nutritional yeast 🍅 2 tsp salt 🍅 generous twists of black pepper STEPS: 1. Soak lentils for ~5 hours beforehand or overnight 2. Rinse lentils 3. Chop veggies 4. Combine all ingredients in a crockpot 5. Cook on high in the crockpot for 5-6 hours or until lentils are soft 6. Add more water as needed to desired consistency 7. ...👑🌿KING KALE 🌿👑... Kale is king among greens in my book for many reasons. Besides being one of the most nutrient-dense plant foods known to Man, kale is also very versatile, tasty, beautiful, and easy to grow! This impressive kale is growing through the fence of the Baldwin Park Community Garden where I teach and has been alive and growing for at least a year, but it looks like possibly a bit longer - what an impressive giant! While kale is mostly grown as an annual, it's actually a biennial plant meaning its full lifecycle takes two years to produce flowers and seeds. But in sunny southern California kale can be essentially a perennial plant as it keeps growing and growing without the need to replant. Kale is a hardy plant to grow - easy to transplant, tolerant of various weather conditions, and readily seeds itself volunteering the next generation of kale babies to adorn your garden and grace your salad bowls. Nutritional therapy in action: New recipe! . "Mock Cherry Pie" - inspired by my colleague Monique Trahan, NTP, without whom I would have never know this was possible! . Did you know you can have the taste and texture of a cherry pie without needing to pit a single cherry? It's true! All you need to do is substitute fresh #cranberries and omit any thickener because cranberries contain so much pectin they will naturally thicken the filling all on their own. Yup, a perfect way to enjoy a fresh "cherry" pie during the winter holidays. . I made this for my in-laws for Turkey Day weekend and minus the crust, it was a hit! As it turns out I did not write down the correct ratios for my perfect-the-first-time #gluten_free #sourdough #piecrust recipe, #DOH ! This means I'm obviously going to have to make a LOT more pies in the near future to figure out the correct ratios for all of you (my spouse @dj_saint is very sad about this 😉). But enough about that, on to the #easy_peasy filling! . 5 c. fresh cranberries with 1 cup set aside 1 1/2 c. maple syrup 1/2 t. almond extract 1/2 t. vanilla extract Simmer 4 cups of the berries + all other ingredients on stove until the berries just start to pop. Turn off burner and add the last cup of fresh cranberries. Add to uncooked crust and bake for 1 hour at 375° F. . I will be honest: It's the almond extract that takes this filling over-the-top as a replacement cherry pie filling. If you try it, let me know what you think! . For class today my students learned how to make two different types of hummus. Our hummus recipe excludes the use of tahini (I personally like it better without it) _ 1️⃣Classic Hummus Recipe: •1 Can of Chickpeas •1 lime, juiced •1-2 garlic Cloves, mince •1/2 tsp of ground cumin •1/2-1 tsp of salt •2 tbsp of olive oil *Add 2-3 tbsp of water Dash of Paprika 2️⃣Roasted Pepper Hummus Recipe: •1 can of chickpeas •2 garlic cloves, minced •1 Small jalapeño pepper •1 Small red pepper •2 tbsp of olive oil •1/2-1 tsp of salt •1/2-1 tsp of paprika •2-3 tbsp of water _ Instructions: super simple! Add all ingredients to a blender or food processor and blend for about 3-5 mins. Serve with carrots, celery, crackers or pretzels. When people ask me what I do I jokingly tell them that it is my job to try to convince elementary school students that eggs are not a dairy. The students can hardly believe it when I tell them that eggs are in the protein group! It makes sense why they would think eggs are dairy, in almost all the grocery stores I’ve been in there are signs like this (it’s not just in Walmart, that was just the store I happened to be in). I’m facilitating and assisting with some pretty cool trainings this week! First, I’m partnering with 3 community organizations to train their staff members to teach Five Times a Feast, a healthy cooking and nutrition program that helps participants overcome some of the common barriers to healthy home cooking. Y'all know I'm always talking about the miracles you notice when you have an attitude of gratitude, but I was really blown away by this most recent experience! 🍴 After my cruise got back to Ft Lauderdale, I planned on meeting up with my friend to explore Miami because my flight home didn't leave until 9pm. I found out at the last minute that he wouldn't be in town and that I'd be stranded in Florida by myself for 12 hours 😩 🍴 I was feeling pretty sad about it, but I kept telling myself that everything would be ok and that I was grateful for the extra time to myself. I planned to uber to the airport to drop off my luggage, then to a movie theatre to catch a couple movies to burn time. 🍴 Miracle number 1: After separating from all my friends, I run into two of them again as soon as I got through customs. Their uber was pulling up to take them to their rental car because their flight was leaving from Miami. They told me to jump in their car and they took me to the airport. I dropped my bags at the airport and took another uber to the movie theatre. After the movie, I took an uber to @clovermintcafe , a vegan restaurant with great reviews. 😋 🍴 Miracle number 2: When I get to the restaurant, I made small talk with a woman who was also sitting alone. I told her I was from out of town and was trying to burn time before my flight that night. She asked if I wanted to join her and I happily accepted her offer! As we talked, we discovered that we had so much in common and were at similar points in our life. We connected about spirituality and she brought me to tears when she insisted on showing me around Ft Lauderdale so I wouldn’t have to sit at the airport for hours! 🙌🏾 🍴 The Creator continues to amaze me daily by creating a reality better than I could ever imagine! Last night I hosted my sister, my mother, my grandmother, and my aunts for dinner at my house! As a younger woman, this was the first time I had hosted any sort of dinner with my family...so it was kind of a big deal. I was stressing about what to prepare because I wanted to impress them!  I decided on these mini meatloafs from the EFNEP Cookbook. I just got off of a call with some of the ladies on my team. We were talking about the phrase, “finding balance in life.” The way the world works today, balance doesn’t really exist. It’s no longer work life and home life. So much of what we do incorporates all of our roles everyday. Many of us have more than one job, we manage our home, ourselves, we have kids, pets, family members, businesses etc. We are still parents at work, we still have responsibilities at home and we are always working on ourselves (or we should be). Instead of thinking of your roles as needing to be balanced, think of the roles you have as more fluid...that you can switch gears from one role to the next and back again in the same 10 minutes. It’s important to remember that everyone wears many hats in life. How we show up in those roles matters and we need to remember that all of our roles blend to make us who we are. We can’t separate our roles anymore than we can be in two places at once. This well loved, giant dice is my favorite teaching tool when it comes to encouraging youth to be physically active. The possible games are endless!! Today each different color represented a different body part we were going to exercise and the side with the person was a break. We went around the class and everyone rolled then lead us in an exercise that worked the specific body part for a count of how old they are. This week | My brain 🧠 | ⠀⠀ I completed the course SOS Approach to Feeding this week. It was all about feeding therapy for picky eaters and problem feeders. Dr. Kay Toomey (paediatric psychologist) and Bethany Kortsha (occupational therapist) facilitated 4 intense days of learning at Melbourne University. (I’ll be sharing more about this in my next post so stay tuned!) ⠀⠀ I have learnt so much! A lot was revising child development, cognition and learning theories. This is an area that I often delve into with parents and teachers so they understand that eating is a much more complex process than we think it is. ⠀⠀ Like with learning any new information, it will take some time to process and sink in. Measuring cups are not only handy tools in the kitchen, they are great tools to help you tackle portion control! Do you actually know how much you are eating? It is so easy to turn that ½ cup of oatmeal in the morning into 1 cup. Oatmeal is something I measure out every morning so I don’t over serve myself. I encourage my participants to have a “measuring day” every once in a while to see if they are actually eating the correct portion sizes of foods. On the first day of the adult EFNEP lesson series we do something we call a 24 hour recall. I bring in lots of measuring tools to help participants estimate how much they have eaten and they record, in detail everything they ate for the last 24 hours. This is another great exercise to do yourself every once in awhile just to check in and see what you are actually eating. Something else I encourage my participants to do is look on ChooseMyPlate.gov (link in bio) to see how much of each of the five food groups they should be eating everyday. You could be eating the correct portion sizes, but overeating a particular food group. Part of the journey to healthy eating is taking a step back and examining what you are eating now. Just a few simple changes could get you moving towards a healthier lifestyle!
