Guaranteed to please!!! Italian Spaghetti Squash Cups! ❤️ Healthy and Yummy! 💪
Spaghetti squash cup ingredients
3 cups spaghetti squash
1 egg white
1 tablespoon dried parsley
½ teaspoon garlic powder
¼ teaspoon sea salt
1/8 teaspoon pepper
2 tablespoons pecorino romano cheese
Preheat the oven to 425°F. Spray a 12 muffin tin with oil.
Place the cooked spaghetti squash in a bowl, along with the egg white, parsley, garlic powder, salt, pepper, and cheese and combine well.
Scoop 1/4 cup into each tin, pressing up the side to create a nest.
Bake 18 to 20 minutes, until the edges become golden and crisp.
Sun-dried Tomato Meatballs
18 ounces ground turkey
2 tablespoons parmesan/feta
2 pieces sundried tomatoes (chopped fine)
1 tablespoon minced yellow onion
¼ teaspoon dried thyme
1 whole egg
½ teaspoon garlic powder
2 tablespoons almond flour
2 tablespoons water
4 teaspoons oil
Combine all ingredients very well (except oil) in a large bowl and mix well. Form 12 even meatballs and fry them in a large saute pan. Do not crowd the meatballs or they won't crisp - Cook for about 3 - 4 minutes, turn over and cook for an additional 3 minutes until cooked through. Remove from pan and place on paper towel-lined plate to absorb oil. Serve with heated, no-sugar added marinara sauce over spaghetti squash cups. Garnish with fresh basil.
Makes 12 cups, 4 servings

They aren’t shocking transformations especially when you take into account the length of time, but what you don’t see is all of the life I lived while also teaching myself habits that create a lifestyle. I’ve struggled with my weight and yo/yo dieting since college, I lost and gained the same 20 pounds 3 or 4 times before having kids. After I had Millie I made small goals for myself. Work out 3 days a week. Once that was habit, I upped it to 4. And then 5. I was breastfeeding and too nervous to cut calories so I tried to make good choices with my eating without stressing too much about it. By January, I was ready to make a push for more which is why I took the before pictures. It has been super slow progress, but it has been lasting progress. That’s what this is really all about for me, making this be my lifestyle, not just a quick fix to get to a certain weight. Don’t get me wrong, sometimes I fall into the mental trap of “if I did this I could lose 5 pounds by this date” and then I reel myself in and remind myself that there’s so much more than the number on the scale. There’s strength and confidence and proving to yourself that you can overcome obstacles. AND there’s also Friday night pizza with friends and vacations and birthday cake on your children’s birthdays. That stuff matters, too. I don’t ever want to be so fixated on my body that I forget to live my life, or that I put it on hold until after I’m done with this challenge or gotten to this weight. The girl on the bottom isn’t the same girl as the girl on the top and I never want to forget to celebrate the changes that you don’t see in a picture.”

Holy WOW! 😅😅 Today was legs and glutes and I really had to push myself! Intermediate kicked my butt and took me 38 minutes to complete. I used my light resistant band and for part of it I was stuck with max weight since the others were used up. I started my workout slow with a glute activation warm up and wasn’t feeling up for a workout at all and then I crushed it! Lesson, never under estimate yourself. Your mind will constantly try and talk you out of hard stuff! You can do hard things! 💪🏼

I don’t know wtf happened to my watch today, so, sweaty selfie it is. Which, is kind of a big deal for me. Back in April, when I was in my car accident, I gained back a lot of weight from when I couldn’t workout and didn’t make the best food choices; I was ashamed of how my face looked. Ashamed that I let my team down. Ashamed I let my children and husband down. Most importantly, ashamed I let MYSELF down. Not taking care of my body the way I had for over 2 years. I pressed pause on my health journey for self-destructive behaviors.
So, instead, I’d take pictures of my watch instead of selfies to hold myself accountable for my workouts (when I was able to start working out again). Anyway...
Week 3, day 2 of #LIIFT4
is done ✅! And early AF because I am at the MRI imaging center to get my MRIs done. Kind of freaking out. Kind of nervous. Mostly of what they might find, but I’m sure it’s probably nothing.

I had an AMAZING trip with my girls 👯
BUT man, am I SO happy to be home.
Although it was a couple days, I am ready to get back into my routine.
I haven’t workout in 3 days, but that’s okay because tomorrow is a new day.
I am happy that I always have room for improvement. That I can still live my life and no longer feel guilty of it or what people might think of me.
I’d do it again in a heart beat for sure.
Until then, it’s time to get back on track. Who’s with me?
Week 3, day 1 of #LIIFT4
complete! I’m making it a mission of mine to use my Fitbit during my workout vs my Apple Watch. There is no freaking way I burned that little amount of calories. And I’m frustrated with it that it doesn’t count active minutes *unless* I’m in workout mode. I upped my weights for tris AND chest, which is a HUGE accomplishment for me (leg strength for daaaays, arm strength for minutes 🤷🏻♀️😂). I still had to modify the plyo lunges, but, I didn’t stop. Eventually, (maybe hopefully) my hips will gain more flexibility. I think it is time to set up an appointment for a steroid shot in my right hip; ever since my ankle accident, it’s been extremely stiff and starting to get too painful for me to just do nothing about. Tomorrow, I have to get my workout in super early because I’m due for a MRI of my brain and cervical spine at 7:45am (good morning to me, huh? 😬) I’ll be taking some happy pills to get me through the creepy MRIs and I know I won’t want to workout afterwards- so early AM workout it is tomorrow. ❤️ any tips for my anxiety and claustrophobia?? I’ve had an MRI of my hips before, but wasn’t fully inside the machine with something on my head. .

Makes 2 servings
1 Leaner protein
1 ¼ condiments
4 cups raw spinach
2 ounces part-skim ricotta cheese
9 ounces raw boneless skinless chicken breast
¼ tsp salt
¼ tsp pepper
3 ounces low fat cheddar
½ tsp paprika
1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius or Gas Mark 6).
2. In a sauté pan over medium heat, add the oil and cook the spinach in it for 3 to 5 minutes, until it is slightly wilted.
3. Stir in the ricotta and cook for a further 30 to 60 seconds. Allow to cool.
4. Cut slits into the chicken breasts, about 1 centimeter (0.39 inches) apart and 75% of the way through the chicken. You don’t have to be too stressed about the depth of the cuts, so long as you don’t cut all the way through it!
5. Stuff all of the spinach and ricotta mixture into the cuts.
6. Season the chicken with salt and pepper, to taste. Sprinkle the cheddar cheese on top. Sprinkle the paprika, adding color and flavor.
7. Bake in the center of the oven for 20 to 25 minutes, until the cheese has melted and the juices are clear.

I am happy to report this little one is starting to love the child care at the gym!! For awhile there I was stressed out that she never would and getting to the gym and working out would be challenging and stressful for months. It really tested my patience and grit to make it work. I pushed her in the stroller until she fell asleep, only for her to wake up as soon as I tried to break away and put her in the child care. We did mommy and me classes, that she fussed through so I would incorporate her in to my workouts. She is a good little weight! 😉
So now It makes my heart so happy seeing her “socialize” with other babies, and feel content within someone else’s care. She is also getting exposed to germs, which as crazy as that sounds is so necessary. .

Turkey cheese cucumber rolls 👇🏼 Makes 2 servings
1 Leaner protein
3 ounces ripe avocado
1 garlic clove
2 tsp lime juice
¼ tsp salt
¼ tsp pepper
Two 4 ounce cucumbers
6 ounces low sodium sliced turkey breast
4 ounces low fat cheese
2 Tbs fresh parsley
In a small bowl, mash the avocado with a fork. Add minced garlic and fresh lime juice. Season with sea salt and pepper, to taste.
Mix until well combined.
Using a peeler or mandolin, slice the cucumber into equally thin strips.
Place about 12 cucumber strips next to each other, on a flat surface, such as a cutting board.
Spread 4 Tbsps of mashed avocado evenly over the slices. Then add slices of ham and cheese.
Starting at one end, tightly roll all of the cucumber slices into one long “sushi” roll.
Using a sharp knife, cut the roll into individual servings as shown in the photos. Secure with
a toothpick and place on a serving platter. Repeat with the remaining cucumber strips.
Sprinkle with fresh chopped parsley and serve immediately.

Cheesy Chicken Spaghetti Squash Casserole
6 to 7 oz raw chicken breasts - should yield 4.5 oz grilled (3/4 Lean)
1/4 tsp Mrs Dash Southwest Chipotle Seasoning or seasoning of your choice (1 Condiment)
3 cups spaghetti squash, cooked (6 Greens)
1 tablespoon light butter, melted (1 Healthy Fat)
1/2 tsp garlic powder (1 Condiment)
1/2 teaspoon salt, or to taste (2 Condiments)
1/8 tsp black pepper, to taste (1/4 Condiment)
1 tbsp grated Kraft Parmesan cheese (1 Condiment)
3/4 cup 2% Fage Total Greek yogurt (1/2 Lean)
3 oz. reduced fat cheddar, shredded and divided (3/4 Lean)
1/4 tsp dried basil (1/2 Condiment)
Poke holes on all sides of the spaghetti squash with a metal skewer or a fork.
Place a paper towel in microwave and place squash on top of paper towel. Microwave in increments of 3 minutes until flesh starts to get soft. I had a medium sized squash and microwaved for about 10 minutes. Let cool. Cut squash in half, lengthwise. Scoop the seeds and the middle strands out with a spoon and discard. Next, scrape the inside of the squash with a fork all the way to the skin. You should get strands that resemble spaghetti. Set aside.
Season chicken with your favorite seasonings. Grill until done. Weigh out 4.5 oz of cooked chicken and then cut chop into pieces. Set aside.
Preheat oven to 400 degrees. Combine melted butter, salt, pepper, Parmesan cheese with the yogurt and 2 oz. of shredded cheddar cheese. Stir in spaghetti squash until combined. Pour spaghetti squash mixture into an 8 inch casserole dish. Top with cooked chicken. Sprinkle the remaining ounce of cheese and dried basil over the top. Put in oven and bake for 30 minutes. The casserole is ready when the top is a light golden brown, which makes for a crunchy crust! Serve immediately.

Came and went this week- but for those living with mental health issues- it’s an everyday thing. —
I know this- because last year I burnt out good and proper. For so long so many had said “you’re so strong...keep going” but that was in fact not the best advice. —
The hugest relief was the moment my Dr said- “you can’t keep going on like this, you need rest! ”. In retrospect- falling apart was the best thing (not the easiest, but the best!) I had to lay work aside, turn the phone off- get help and rest.
I met other successful, beautiful amazing people who’d also reached the end of themselves- and we could laugh and cry about our ‘not-ok-ness’ - and we rested in that. —
When you face your darkness- then you can also find your light.
I am forever grateful to those who were the glimpses of light in the long dark times- to God, to doctors, for medication, for those who walked the road with me and still do, meals, love, patience- but mostly learning about being kind to myself, and letting go of shame.
Accepting my own frail humanity has allowed me to see deeper into life and have greater compassion and honor for the struggle of ordinary people around me everyday- and the courage to face everyday.

Sometimes really crappy things happen! 😢💔 But food won't fix it.
Yesterday was our 15 year wedding anniversary. My husband and our 2 youngest kids went out to eat to celebrate. This is the condition we found our car in afterwards.
My heart sank as we discovered my 14 year old son's backpack had been stolen. He was distraught from having his irreplaceable pictures in his wallet stolen.
The $80 in his wallet we can replace.
The shoes we can buy.
The window we can fix.
My heart broke as I saw my strong 14 year old young man totally breakdown and 6 our year old was crying; his whole body trembled with fear. 💔😢 As we drove home with the cold air blasting through the window;
I AM NOT GOING TO LIE , my mind went to "Those chocolate covered raisins we have at home sound pretty good right now. Maybe I will have some when I get home." My emotional eating tools automatically took over; "Emmie , oh Babygirl, those chocolate raisins won't fix my sons broken hearts right now, you can't fix it. This is something you can support them through, but they have to walk through their own pain. The chocolate raisins won't fix this pain you are in, your husband is in or our sons are in. This is tough but they will be ok. You will be ok. Lean into it and you will feel better." I cried.
I felt better.
The craving for Chocolate covered Raisins vanished.
Once we got home, I loved on my sons, put them to bed and went to bed myself. No emotional eating! No trying to white knuckle it or control my eating. Because there was no craving to control.
Before I started my journey to healing emotional eating this totally would've been something I would have emotionally eaten over for DAYS!
Sometimes I eat chocolate covered raisins. And I enjoy them without guilt but there will never be enough food to fix any emotion, so why not lean in and deal with it, without food? Because it's not about the food.
