Yeah so it turns out that getting to 268 lbs took eight weeks, not five as MFP had predicted, and I was consistently at or under my calorie goals the entire time. I have not had a single cheat day. What actually made this loss possible is that I switched to low carb on August 20th and then started to see actual results on the scale. (I was doing 30%fat, 30% carbs, 40% protein before)
Low carb is the only way of eating that has ever given me significant fat loss results. I know it's not for everyone, but it's the best possible solution for me until my insulin resistance is improved, and most likely long after that as well.

Today was day 4 of my 30 Day Healthy Challenge. Eating healthy at work last night was kind of difficult. I had packed a very healthy lunch not realizing it was People Club day. Since I am on the Pep Club, I was delivered a meal as well. It consisted of two tacos from Tacos 4 Life and a white chocolate macadamia but cookie. I talked myself into only eating one of those tacos, (although o desperately wanted both), and I gave the cookie to a coworker. I then ate the healthy lunch I had originally prepared. After working my usual 12 hours shift at the hospital and clocking out at 6 AM, my friend, Daysha, and I decided to go to @planetfitness
We power walked on the treadmill for almost an hour then I came home and completed my at home workouts. I feel like I can already see results when I look I to a mirror but I am sure that is just me being Hopeful! I do know that I am already feeling better. I am happier, my depression is staying at bay, I have more energy, I am sleeping better and my sex drive is even coming back. Finally was able to get a good workout in after slacking off for like a week. I swear when I miss a few workouts I feel horrible like I’m neglecting my body...then I don’t have much energy & the more days pass w/o working out the less I feel motivated to. It’s really a struggle trying to stay consistent not knowing the many challenges you will face along the way. But my health is a serious priority, this is the only body that I’ll get in this lifetime so it’s a must I keep it together! So no matter if you missed one workout... or you haven’t worked out in years every day is another chance to get STRONGER.. eat BETTER & to live a HEALTHIER life. There is something so special about my time alone in my office in the morning.
Something so special about hustling while the rest of the world still sleeps.
Before I found my calling as a virtual health coach, I would not have labeled myself a morning person or a night owl. I was a snooze my alarm until 10 minutes past the last time I should have, go through the motions, do the things society told me to do so that I could pay my bills and resemble a respectable adult kinda person.
No passion, no excitement, no zest for life unless it was Friday.
Now that I look back, no way to live!
Thank goodness for coaching. Thank goodness for this community. Thank goodness for the opportunity to work my butt off for something MORE. Thank goodness for the healthy lifestyle. Thank goodness for the friendships. Thank goodness for the income. Thank goodness for the opportunity to be able to work from home someday and raise my future babies. THANK GOODNESS. 🙏🏼🙏🏼🙏🏼

Fall is finally coming around here in central Virginia and that means chili and taco soup can make an appearance! To me there are certain things that just cannot be enjoyed out of season. I need cool weather for hearty foods.
I made taco soup and I thought I’d share my “tracking” of this delicious concoction!
MyFitnessPal makes it so easy to make a recipe and break down servings for easy calorie counting. If you scroll through the pics you’ll see my serving, 349g, what I actually ate (I needed more calories so I got cheese!!!), along with recipe details!
In the recipe builder I added all the ingredients minus the spices (homemade taco seasoning - gluten free, ranch powder, minimal calories) and make the servings equal to the total weight of the recipe. You can either add up all the contents as you go (I did this time) or weight the total amount when you’re done. And then when you get your serving you measure it individually. This works great for leftovers as I freeze them and reheat at a later time. Just enter the recipe and again measure your serving!
Super easy and no guess work involved!
