Grilled sugar plums ~ feta ~ lentils ~ pomegranate ~ pistachio ~ honey. . I couldn’t resist #sugarplums , which are in season right now. Any kind of plum dessert is right up my street, but I’m also partial to plums (or any stone fruits) in savoury dishes - especially when teamed with salty flavours like feta or parma ham. This salad is a great addition to a long lunch this weekend or if you’d like something lighter during the week. . 3/4 cup green lentils 1 medium red onion 1 clove of garlic 4 tbsp vegetable oil 6-8 sugar plums, halved and stoned 1 large bunch coriander (leaves and stalks), rinsed 1 large bunch of mint leaves, rinsed 1/2 tbsp each of coriander seeds, fennel seeds, cumin seeds (lightly toasted and crushed) 1/2 tbsp sumac (or zest of 1/2 a lime and lemon) 1/2 tbsp sweet paprika 1/2 tbsp chilli flakes 1 tbsp pomegranate molasses (if available) 3 tbsp olive oil 2 tbsp honey 60gm roasted and shelled pistachio 100gm crumbly feta 1 large handful of baby salad leaves Salt and pepper to taste . Cook the lentils with a good pinch of salt and pepper (follow instructions on the back of the pack). Set aside. . Finely slice the red onion and chop the garlic. Heat 2 tbsp of oil in pan and gently sweat the onions and garlic with a pinch of salt and pepper until translucent. Remove from the pan and set aside to cool. Heat the remaining 2 tbsp of oil in the same pan and gently grill the flesh of the plums until just charred. Set aside. . Finely chop the coriander and mint and transfer to a mixing bowl. Add the cooled lentils, onions and garlic to the bowl. Mix the sumac, sweet paprika, crushed coriander seeds, fennel seeds, cumin seeds, chilli flakes and a good pinch of pepper in a bowl. Add the olive oil and honey and mix well. Add a little bit of warm water to loosen if desired. Pour in to the mixing bowl and mix well with the other salad ingredients. . Add the pistachio, crumbed feta and salad leaves just before serving. Check seasoning and adjust if required. Transfer the salad to a serving dish and place the charred plums on top. Top with more crumbed feta and a good drizzle of honey. . . . . #mgtestkitchen #vegetarian

I took this photo at a yoga workshop a number of years ago and felt myself in awe of the strength and discipline displayed by these practitioners. I am still in awe when I see practitioners who are able to press to #handstand and float back down to the ground like feather. . I was constantly distracted by everyone around me during this phase of my practice, wishing I could do what they were doing. What I hadn’t realised back then was that everyone has their own journey and these advanced practitioners would’ve had their own distractions and struggles. . I’ve since learnt how to look inward, and to be curious about my own practice and not others’ - something I’m trying to apply to the rest of my life too. Last week, I posted about introducing traditional Chinese herbs in to modern recipes as part of our next #eastentialxmgtestkitchen collab. To kick off our series, I decided to explore the the marriage of flavours from the Middle East and Asia. These may sound a little unusual but they do complement each other, as spices such as cumin is often used in parts of China to marinade meat. Weird but true 😉 . . The sweet, sour and salty flavours of the #longan and #goji #pesto cuts through the fattiness of the Middle Eastern spiced #lamb , while the #kaffirlime and aubergine #labneh lifts the dish in an unexpected way. . . #Gojuchang chilli #lamb ~ shallots ~ peanuts. . Monday “dinsperation”, inspired by the flavours and smells from a Korean bbq and traditional Chinese “sang choy bau”, these morsels are light, #healthy and perfect for time poor peeps. . . Finely chop 1 clove of garlic, 1/2 a shallot and 1 stalk of lemongrass (bottom half only); or use a food processor if you’re time-poor. Transfer to a bowl and mix with 1 tbsp each of gochujang paste (medium 🌶), muscoavdo sugar, sesame oil, cooking sake and soy sauce. Add 1/2 inch of skinned and grated ginger and mix all ingredients well. . . Pour over 250gm of grilling lamb or beef and marinade for 30 mins. While the lamb is marinating, carefully remove the baby gem lettuce leaves from the core, rinse and pat dry. . Cook the lamb on a hot griddle or bbq, then rest the meat (I prefer my lamb to be served medium). Cook the remaining marinade in the same pan until it starts to thicken and caramelise. Set aside until you’re ready to plate. . Slice the rested meat thinly and place a few slices on each lettuce leaf. Top with a little caramelised marinade, chopped roasted peanuts, chopped coriander and fried shallots. Serve immediately. Finger licking good. . Roasted peppers and pomegranate “romesco” ~ chickpea fusilli. . I had to use up a whole lot of red peppers unexpectedly today as our fridge has decided to stop working during the hottest months of the year 😒. So waste not, want not, a sauce inspired by the Catalan favourite Romesco, was probably the easiest way for me to ensure that the ripe peppers didn’t go to waste. . Bar peeling the charred skin off the peppers, it’s minimum effort, maximum satisfaction. Traditionally, a romesco requires sherry vinegar and a mix of almonds, hazelnuts and breadcrumbs to thicken the sauce. I didn’t have any of these on hand so I adapted the sauce with what I had in the pantry. Don’t ever fret if you don’t have all of the ingredients in a recipe, just look at what’s in your store cupboard and experiment 🙌🏽 . Turn the grill on to 220-240 degree Celsius. Core and slice 5-6 red peppers. Lay them on a lined tray, ensuring that they’re as flat as possible (I cut slits into the bumpy parts to flatten them out). Place the tray directly under the grill to char the skin of the peppers until the skin blackens. Keep an eye on them as some pieces will cook at a different speed, depending on how close they are to the grill. Place charred pieces on a plate and wrap with cling film to make them sweat. This will make it easier to peel the skin from the flesh. . Once cool enough, peel the charred skin and discard. Place the flesh in to a food processor. Add 1tsp of smoked paprika, 150gm of a mix of macadamias and cashews (or your preferred nuts), 2 tbsp balasamic vinegar, 2 tbsp pomegranate molasses, 2 -3 tbsp extra virgin olive oil, 1 clove of raw garlic, salt and pepper to taste. Blitz until it becomes a paste. Check the seasoning and adjust to your palate. . Grilled crayfish ~ Lemongrass and coriander jam. . . Throwback to our family #seafood extravaganza a few weeks ago. I was fortunate enough to receive a couple of #crayfish tails from a friend who dives for them. Retaining the natural sweetness of such amazing fresh catch was important so I decided to flash fry and finish them under the grill, and top the sweet crays with a light layer of my #homemade lemongrass and coriander savoury jam and sesame oil. Pork and shiitake #dumplings 🥟 🥟 🥟 . . You don’t have to be a “crazy rich Asian” to make dumplings a family tradition. They’re easy to wrap once you get the hang of how to pleat the skin, and can be filled with anything that takes your fancy. My current favourite is a mix of pork mince, ginger, garlic, shallots, spring onions, shiitake mushrooms, fish sauce and chilli (adjust portions to suit your taste). . . Just be sure to cook the aromats to remove the “raw bite” before you fill the dumplings. . . It’s also a great activity for kids because it teaches them hand dexterity and patience. Cashew cream ~ summer berries 🍓. . . A little naughty and a whole lot of nice. Try this #healthy cashew cream for a burst of energy and guilt-free #indulgence . I’ve used liquidised dates to sweeten the cream but you can easily substitute with maple syrup or brown sugar if you’re ok with being a little naughty 😉. . Replace gelatine with hydrated chia seeds, agar or Irish Moss for a plant-based option. . . Soak 250gm of raw cashews and 150gm of dates in water for 3-4 hours, separately. . . Once the cashews and dates have soaked, bloom 1.5 tspn gelatine or soften 1/2 a leaf of platinum grade gelatine in a separate bowl and set aside. Scoop the cashews into a food processor or high speed blender with a little bit of water and blend until you get relatively smooth paste. Remove and set aside. . . If you’re using dates, repeat the same process above with the dates but with a bit more water so it’s more of a syrupy consistency. Scoop half into a bowl and leave the remainder in the food processor. . . Gently warm 100ml of almond milk. Remove from the heat and whisk in the bloomed or softened gelatine. Add the warmed almond milk, cashew paste, 2 tbsp raw cocoa, 1 tspn cinnamon, 1/2 tspn ground cardamom to the liquidised dates and process until mixed well. Taste and keep adding more liquidised dates (or alternative) to your taste. . . Scoop in to small ramekins and set in the fridge for 2 hours. My wonderful ugly #carrots . This summer, we started experimenting with Mum’s #vege patch, in the hope that we’d be able to eat organically, without the hefty price tag. . . It’s been a real learning curve with the planting and care of the garden, such as it was with these 🥕🥕🥕. I hadn’t realised that I had to space out each micro frond when planting, resulting in the carrots growing around each other in a cluster and in odd shapes. . . Commercially, these ugly carrots would normally end up in the landfill which a travesty, but they went straight to the dining table in our household. It’s been so rewarding to be able to eat #healthy with produce from the garden. . . Straight, warped, ugly, beautiful, good food should never go to waste. #wastenotwantnot . . . Asian #salmon ceviche lettuce cups. . Some friends have been asking for this recipe since I posted it a year ago. . . It’s a great little #starter or #canapé for the festive season (in hot or cold weather), especially if there is a lot of roast or barbecued meat to follow. #Salmon #roe | #handmade #tagliatelle | crème fraîche | butter. . * * 👈🏽 👈🏽for more * * 🍽 There’s currently an abundance of roe available in my Mum’s local fishmonger so I jumped at the chance to enjoy these delightful little jewels of popping salty goodness. Having never prepped roe before, I underestimated how much patience and effort is required to remove each red jewel from the roe sacks (of which, there are many in each skeig!) 🍽 That said, it was worth the effort. Home-cured roe is much less salty than commercial products. Torched eggplant | laksa leaf | finger lime | coconut | yoghurt | sesame. 🍆 During my recent trip to Singapore, I discovered torched ginger (aka ginger flower) as an ingredient. It has the most unusual aromatic and citrusy smell and flavour, which added a totally new dimension to a dish. I knew that I had to experiment with it before leaving. Sadly, I’ve not been able to find it since returning to #Australia (peeps, please share if you know where I might find it in #Sydney !). 🍆 This is an adaptation of the dish I made with #eggplant and torched ginger. I’ve substituted the torched ginger with laksa leaf and finger lime (little caviars of intense citrus flavour) to try and replicate that unusual aromatic flavour. 🍆 “Eggplants are expansive in effect which can be beneficial to those who become tense from work stress or activity that takes great concentration.” ~ Dr. Jacqueline Heng (Chinese Medicine) . This little purple wonder has a cooling thermal nature, is sweet in flavour therefore great for those with heat signs. We are what we #eat . Start the week with some #homemade gluten-free nutty #granola . The best bit about this granola is that there are no rules! I’ve listed what I’d include below but you can substitute any of the ingredients below once you understand how to make your own 🙌🏽 _ - Warm your oven to 160 degrees Celsius. Mix your favourite chopped #nuts into a large mixing bowl, add a dash of vegetable or sunflower oil, a little bit of honey, and a few teaspoons of ground cinnamon and ginger (autumnal and warming for your body. Thanks @eastentialchinesemedicine For the seasonal tip!). Give everything a good mix. _ _ Spread the but mix into a baking tray and bake for about 10 mins. Remove the tray from the oven after 10 minutes and stir in some desiccated coconut, chopped dates, sunflower and pumpkin seeds and cocoa nibs. _ _ Return the tray to the over and bake for another 10 - 15 minutes (or until the nuts are lightly browned). Stir the granola occasionally to ensure that bits at the bottom brown evenly as well. _ _ Serve with your favourite topping. Late nights at the office often mean that I’m time-poor when I get home. Batches of bases or condiments such as pesto or slow-cooked tomato sauce cooked over the weekend, are godsends when I crack open the fridge after a long day. . This kaffir lime and beetroot pesto (adapted from chef Peter Gordon’s recipe) is super versatile as a base or condiment. Toss it with pasta, smear it on bread, serve it with charred witlof or duck - endless flavoursome combinations with minimal fuss. . Blitz medium sized beetroot (wrapped in foil and roasted in the oven at 160 degrees until a knife cuts through the middle easily, or just buy unsweetened pre-cooked beetroot), 30gm pine nuts or cashews, 60 gm grated Parmesan, 1 tbsp sesame oil, 2 tbsp light olive oil, 3-4 Kaffir lime leaves (shredded), a handful of coriander leaves, salt and pepper to taste. Add a little more oil if the texture is too thick. .
