🥬KALE SPROUTS CHIPS🥬 Happy Monday, everyone! How was your weekend? Mine was busy and I’m still tired but the next week started and I have lots of things to do, let’s hope I’ll reach the end of my to do list! . Today, I’m here with some vegan snack what I could grab any time of the day/week. It’s just so tasty! Especially, with this creamy yoghurt-lemon dip with spring onions! This kale sprouts chips literally takes 10-15 minutes from your day to make it. . Ingredients fresh kale sprouts (as much as you want) olive oil salt pepper garlic powder Dip: 100 ml coconut yoghurt 1/2 lemon juice salt 3-4 spring onions . Method 1️⃣Preheat the oven to 160 degrees (Celsius). 2️⃣Chop the spring onions and mix all of the ingredients together for the dip. Set is aside. 3️⃣Wash the sprouts dry them gently with a kitchen towel. And put them in a baking sheet with paper. 4️⃣Pour some oil on it and sprinkle it with salt, pepper and garlic powder. Mix them well with your hands. 5️⃣Bake it for 6-8 minutes until it’s crunchy. You can sprinkle some chopped chives on the top. . That’s it what you need to do. Even if you’re not vegan this is a great snack for a movie. . (ENG below) Zurück in Berlin nach wunderbaren, erholsamen Tagen an der Ostsee. Ich finde es immer bemerkenswert, wie schnell man sich entspannt und erholt fühlt, wenn man mal ohne Kind unterwegs ist😁. Wir hatten Zeit für lange Spaziergänge am Strand, Aufwärmen in der Sauna, zu lesen und für stundenlange Unterhaltungen über Gott und die Welt. Trotzdem ist man am Ende froh, wenn man die kleine Maus wieder in die Arme schließen kann❤️👨‍👩‍👧. Für mehr Zeit zum kuscheln, gab es ein schnelles Abendessen mit Ofengemüse, Guacamole mit Speck und Postelein. ———–——————————— Back in Berlin after a few wonderful and relaxing days at the Baltic Sea. I always find it remarkable how easy it is to unwind without a child😁. We had time for long walks on the beach, warming up in the sauna, to read and long conversations. Nevertheless we are always happy to have our little one back❤️👨‍👩‍👧. Bring your own food! - Today I had a brunch for a friends birthday and hate when I can’t partake in the eating portion of the festivities, so I made some #glutenfree #vegan blueberry muffins 😋 - Here’s how I made these #allergyfriendly muffins ⬇️ • 1 and 1/2 cup of @josiesbestgf muffin and more mix • 1/2 cup coconut sugar ( I used @bobsredmill ) • 1/4 cup oil , I used avocado but coconut oil would work too • 2 egg replacement ( @bobsredmill ) or 2 eggs if not vegan or egg free • 1/2 cup dairy free milk • vanilla • blueberries •1/2 tsp baking powder • optional- add @furtherfood collagen peptides for extra protein 💪🏼 - Mix wet ingredient and dry separately, then combine. Add in blueberries and add to muffin pan. Bake at 350 for 18-20 minutes and that’s it! It’s full with chocolate, a little coconut and perfectly balanced with some fresh raspberry. Even this vegan chocolate had coconut and raspberry taste. 😋 Here’s how you can make it. . Ingredients 300 ml rice-coconut milk 4 tbsp GF rolled oat 1/2 tbsp cocoa powder 1 tsp vanilla extract 1 tbsp maple syrup Toppings fresh raspberry coconut flakes raspberry-coconut vegan chocolate . We ended up eating at @tocayaorganica a few times whilst in LA (mainly due to location + they had a lot of GF options) the menu and ordering was a little confusing but you got the hang of it towards the end. This was the tostada salad, a crispy corn tortilla layered with lettuce, tomato, red onion, corn salsa, white cheese and chicken 🥙 I’ve had some incredible food experiences on this trip, and found some epic treats along the way. I honestly can’t stress enough about the importance of preparation and research. For me taking snacks and knowing what was GF and what wasn’t made the trip so much less stressful and enjoyable. Having been to the US previously this was my first time to the states “gluten free” and I’d say it was a success 👍🏼

🎄GLUTEN AND DAIRY FREE GINGERBREAD COOKIES🎄 Happy Friday, everyone! What are your plans for the weekend? 😊 If you’ve seen my stories, you know that I baked last weekend. I always loved to make gingerbread cookies and this year I have them without gluten and dairy. They turned out as delicious as the normal ones and the consistency is just perfect! 😍 Moreover, the house smelled amazing! I loved them so much! The other fun part is the decorating! I takes some time but it’s worth it! 🤩 . With this recipe, everybody can enjoy them in my family with the same taste! Here’s the recipe, if you also want to make them. 🎄 . Ingredients 500 g GF flour mixture 1,5 tsp xanthan gum 1 tsp baking soda 1/2 tsp salt 170 g vegan butter 170 g molasses 220 g sugar 2 tsp ginger powder 4 tsp cinnamon 40 g honey 2 eggs Icing: 1 egg white 200 g icing sugar few drops of lemon juice . Method 1️⃣Mix the flour, salt, baking soda, cinnamon, ginger, xanthan gum together in a bowl then add the sugar and mix it in as well. Cut the butter into small cubes then add and mix it with the flour mixture. 2️⃣In another bowl mix the molasses, eggs and honey. 3️⃣Add the wet mixture to the dry one and mix it until it’s a dough. It can be sticky. If it’s too sticky, you cannot form a ball then add a bit more flour. 4️⃣Wrap it in and put it in the fridge for 30-40 minutes. 5️⃣Preheat the oven to 175 degrees (Celsius). 6️⃣Take it out from the fridge and cut it into four pieces. Put some flour under it to avoid sticking and roll it out until it’s between 0,5-1 cm. 7️⃣Use the cookie cutters and place the forms on a baking paper. Put them into the oven and bake them for 10-12 minutes. 8️⃣Let them cool down before decorating. 9️⃣Beet the egg white with the powdered sugar and few drops of lemon juice. Pour it in a pastry bag and you can decorate the gingerbread how you prefer. 🔟Let them dry. . What a find! ✨👌🏻 I can't tell you how much I missed Leibniz biscuits after my diagnosis (btw, the GF ones they came out with aren't worth eating 👎🏻), so when I found these @lu_france ones stuck on a shelf amidst the glutenful biscuits - not in the 'sans gluten' section - at Galeries Lafayette, I was cautiously optimistic. Turns out they taste JUST. LIKE. LEIBNIZ. 🎉🎉🎉 Crunchy, buttery, not too sweet. Or at least, as close to Leibniz as I can remember. I was being glutened out of my mind back then, quite literally. So if you miss those biscuits like I do, get your hands on these French gems. Just don't get them here, because I'm headed back asap to buy the whole shelf of them. 🤭

Rose Cardamom Chia Seed Pudding- new on the blog! Rosewater and honey give this pudding just the right amount of sweetness with a subtle rose and cardamom flavor. I really don’t have another word for it besides luxurious! I need to find a honey rose milk bath to match haha. What do I care how much it may storm, I’ve got my chili to keep me warm! 🎶 And my 80lb golden retriever who thinks she’s a lap dog.... . I’m not a big fan of beans. I’ve slowly gotten into black beans, but they’re just kinda mushy to me. And they make you toot. I just can’t get into it. As I was testing chili recipes (which did have beans), I spotted a large bag of pre-cut butternut squash @traderjoes and figured I’d try it instead of beans. It was sooooo good! The squash doesn’t get mushy like you would think and really adds a nice, comforting flavor. It’s my new favorite healthy weeknight meal. And if you put it on top of tortilla chips with some cheese and toppings, you have the perfect nachos for all these bowl games coming up. Anyone else betting on bowl games?? I’ve got $5 riding on anyone who will beat OU! 🙌
A little Christmas treat, before I start all my own baking for the season 🍰 I stopped by @brotquelle to give their pastry another shot (first time, way too dry) and was pleasantly surprised. The eclair choux pastry was much better this time and the custard filling was delicious. The Zimtsterne cookies were also really flavorful and had a great texture. As a baker myself and a bit of a food snob, I generally won't buy from places where I know I could make it so much better myself, so I hope this spot continues to push themselves as I can see the potential for them to become one of the better gluten-free spots in Berlin. 😏

Nel senso per noi intolleranti al latte non è possibile mangiarne una vera quindi mi sono inventata questo TORTINO_fit..... Semplice poche mosse e infornato. . . Ho creato una BASE con noci pecan un 20gr ✔25gr di fiocchi di avena baby ✔10gr di fiocchi di quinoa ✔5gr olio di cocco un po' di acqua, ✔impasto il tutto. Messo in un coppapasta precedente un po' oleato con olio di cocco, su una teglia da forno con un foglio da carta forno. ✔precedentemente ho bollito una patata dolce non troppo grande...poi schiacciata mischiata assieme un yogurt vegetale ,un uovo, una punta di cannella, zenzero e noce moscata...grattata di scorza di arancia ...ho versato il composto sulla base e infornato per 40minuti...et voilà...... Topping di una semplice cremina di cacao amaro e acqua... I would definitely recommend this place if you’re #lactoseintolerant or have a #glutensensitivity (don’t know about cross contamination, therefore not sure if it’s #coeliacfriendly ). 🥘GLUTEN AND DAIRY FREE SWEDISH MEATBALLS🥘 Hey, everyone! Last week I’ve made Swedish meatballs! Before my diet I loved okra meatballs so much! Anytime when we went there I had to have some. I know not the healthiest... since I missed it so much I had to have some. . These are gluten and dairy free and tastes delicious! You won’t notice any difference, I promise you! 😍 I think this is also a perfect dinner during Christmas time with some cranberry sauce on the side. Let’s see how you can make it! . Ingredients ~20-22 small meatballs) Meatballs: 250 g minced beef 250 g minced pork 1 egg 1 medium onion (small diced) 1 tsp garlic powder 1/2 tsp ground nutmeg 1/2 tsp cinnamon 1/2 tsp ground cumin 2 tbsp GF bread crumbs salt,pepper Sauce: 2 tbsp olive oil 5 tbsp vegan butter 500 ml beef broth 1/2 tbsp Worcestershire sauce 1 tsp mustard 1 tbsp corn starch 2 tbsp buckwheat flour 150 ml rice cream salt, pepper + topping: chopped parsley . Method 1️⃣Mix the ingredients of the meatball. Let it under cover for one hour. Make small balls. 2️⃣In a skillet, heat up the olive oil and 1 tbsp V butter. Cook the meatballs in it until brown. Take them out. 3️⃣Same skillet: add 4 tbsp butter, then corn starch and buckwheat flour. Fry it a little. Add the broth and the cream. Mix it well and add the other ingredients. Cook it until creamy. 4️⃣Add the meatballs and cook it for few more minutes. When it’s done sprinkle it with parsley. . It’s very easy to make and sooo delicious! Gluten free cheeseburger and fries 🍔🍟 Allergy friendly food options were pretty limited at both Disneyland and downtown Disney. This was at the Hungry Bear restaurant in critter country, the service was pretty average and the burger it self wasn’t much better. Thankfully I always carry snacks with me, as a few times this trip my snacks saved me. You win some, you lose some, but at least the cups were pretty 🤷🏻‍♀️#glasshalffull 🤣
S N A C K I N G is a huge topic for me & I literally have food with me at all times 🙈 So I thought I’ll share my favourite snacks with you: ~~~~~~~~~~~~~~~~~~~~~~~~~~~ • MACADAMIA NUTS Nuts in general are great, but these are my favourite ones 👉 I often buy the salted ones from @aldi_suisse because they’re just the BEST 😍🙌 (< 20 macadamia nuts are #lowFODMAP ) ~~~~~~~~~~~~~~~~~~~~~~~~~~~ • CRACKERS / PRETZELS Go for either #glutenfree or #spelt ones 👉 here I tried the Blevita chickpea crackers from @migros 😋👌 ~~~~~~~~~~~~~~~~~~~~~~~~~~~ • CRISPS / CHIPS About a handful of potato, corn or veggie chips are yummy & #FODMAPfriendly (just watch out for #FODMAPS in the seasoning, just salt is safest!) ~~~~~~~~~~~~~~~~~~~~~~~~~~~ • DRIED FRUIT This may be a tricky one, especially if you have a #fructosemalabsorption like me. But there are still some options: < 15 dried banana chips < 1 tbsp of dried cranberries < 3 tsp of dried goji berries < 1 tbsp of raisins < 2 tsp of sultanas (Don’t stack them! Stay with one to not overdo your #FODMAP intake.) ~~~~~~~~~~~~~~~~~~~~~~~~~~~ These are just a few options. There are many more, believe me! Wenn du gerade erst angefangen hast deine Ernährung umzustellen, kann es eine echte Herausforderung für dich sein in der Weihnachtszeit dem ganzen Süßkram zu widerstehen. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Du entkommst ihnen auch nicht, wenn du dir selbst keine kaufst. Freunde, Kollegen oder Nachbarn bieten sie dir großzügig an oder platzieren sie in einer Schale direkt vor deiner Nase. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Und eigentlich möchtest du auch gar nicht komplett darauf verzichten... Wenn du nur an die Weihnachtsfeier denkst, bei der deine Kollegin ihre sagenhaften selbstgemachten Lebkuchen mitbringt. Einen würdest du schon gerne davon essen.⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Bevor du dich auf der Weihnachtsfeier quälst, weil du nur an deinem Wasser nippst und deine Laune auf den Tiefpunkt sinkt, kannst du dir überlegen eine Ausnahme einzuplanen. Die lautet dann: Ein oder zwei selbstgemachte Lebkuchen bewusst genießen und ansonsten verträglich zu essen. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Besonders die Mahlzeiten drumherum sollten verträglich sein. Nimm dir ins Büro z.B. eine verträgliche Nudelsuppe zum Mittagessen mit. Eine Ausnahme verleitet schnell dazu zu denken, dass du ja eh schon eine Ausnahme machst und dann auch das Mittagessen eine Ausnahme sein kann. Und wenn du schon gestern eine Ausnahme gemacht hast, kommt es auf eine weitere heute auch nicht an. I was craving for some fresh toasts in the days so I’ve made this deliciousness! Simply spread hummus on a GF toast and topped with fresh tomatoes and cucumber slices. . If you want the maximum taste of these veggies you must sprinkle some salt on the top. I know, nowadays lots of people are afraid of salt, but don’t be! For home cooking it’s hard to use as much as it’s harmful for yourself. It brings the flavors out so perfectly and makes everything more alive in your mouth! On the best way! BUONGIORNO mondo ❤❤❤!!! Ieri avevo delle patate dolci...mi son detta...dai Natascha "perché non provare una cheesecake, ma di cheese non ce né nemmeno l'ombra?" Nel senso per noi intolleranti al latte non è possibile mangiarne una vera quindi mi sono inventata questo TORTINO_fit..... Semplice poche mosse e infornato. . . Ho creato una BASE con noci pecan un 20gr ✔25gr di fiocchi di avena baby ✔10gr di fiocchi di quinoa ✔5gr olio di cocco un po' di acqua, ✔impasto il tutto. Messo in un coppapasta precedente un po' oleato con olio di cocco, su una teglia da forno con un foglio da carta forno. ✔precedentemente ho bollito una patata dolce non troppo grande...poi schiacciata mischiata assieme un yogurt vegetale ,un uovo, una punta di cannella, zenzero e noce moscata...grattata di scorza di arancia ...ho versato il composto sulla base e infornato per 40minuti...et voilà...... Topping di una semplice cremina di cacao amaro e acqua... It still tastes good, but the consistency is much thinner. | #eatcleancolors 💫 Matthew eats so dang much that when I have a recipe that is delicious AND gives us leftovers...it’s a winner!! I could literally eat this potato soup all week long. It’s nothing but creamy and guilt free!! . Now I’m at the gym because my day was filled with ALL the noms and cake from my story!!🙃😍 . Vegan creamy potato soup: sauté until tender- 4 small garlic cloves minced, 1/2 yellow onion, 2 carrots, 2 celery stalks, 2 tbsp fresh parsley, 1 tbsp green onion, season with salt/pepper(I added a lot of pepper)/pinch of smoked paprika/garlic/onion. Add 32oz veggie stalk, add cubed 3 Idaho potatoes. Light boil until potatoes are cooked. Add 1 cup (and a splash extra 😏) of @nutpods unsweetened creamer. At the end I add cayenne pepper and MASH some of the mixture to thicken it a little bit. Dobrze że na śniadanie wjechały te pyszności. . . 150 g mąki bezglutenowej uniwersalnej @schaerglutenfree 75g mąki gryczanej @denverfoodpl 1 łyżeczka sody oczyszczonej 50g płatków owsianych bezglutenowych @intenson.pl 4 łyżki cukru muscovado 2 jajka 120g masła klarowanego 2 łyżki jogurtu kokosowego 2 czekolady 80% @e.wedel 1 średnia cukinia Esencja waniliowa . . Piekarnik rozgrzać do 180 stopni. Obraną cukinie zetrzeć na tarce o grubych oczkach. Mąki wymieszać z sodą i płatkami. Masło utrzeć z cukrem i esencją waniliową. Stopniowo dodawać mąki i jogurt. Na sam koniec dodać cukinię i potłuczoną czekoladę. Piec 18 minut na opcji grzanie góra i dół. . . Still my body hasn’t been too fond of it lately. Maybe I’ve had too much?! 🤔 Could definitely happen here in #Switzerland ... We eat pretty much everything with cheese - at least my family does 🧀 I feel like I’m less bloated though when I’m #dairyfree . That’s why I try to find alternatives. I’m okay with #dairyfreemilk . A great alternative to wheatflour or all purpose flour is teff flour. It is a grain grown in eastern Africa mainly in Ethiopia that is 100% glutenfree. I have been baking with and eating this grain for many years and was very happy to see it come to the stores in Sweden. My favorite is the lightest flour (shown on the picture) since it isn't as "gritty" as the other two and as I mainly make desserts. The other two flours are more suitable for bread baking. . .
