I’m trying to trim more areas in our budget and need some advice on a reasonable monthly food budget. It’s just my husband and I. We don’t eat out frequently, but I overspend in this area because I love to cook and enjoy making a variety of recipes that may incorporate more expensive ingredients. Me after working 35.5 hours of work, getting a new phone and losing almost all of my pictures, and getting most of my homework done. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ This week was chaotic to say the least. I’ve been slowly getting used to this new schedule and all of the craziness. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ A few tips that I’ve found to help stay organized while being busy are: 1. Meal prep once per week and put them in containers so then you can just eat them on the go. 2. Prepare your clothes for the week. You can save time in the morning by not trying on a bunch of different things. 3. Put everything in your lunchbox the night before, and everything you can’t leave a note for yourself so you’ll do it in the morning. 4. Schedule out as much of your days as you can and try and stick to a routine. Write everything out in your planner. 5. Pack all of your bags for the next morning and put them near the door. You can just grab and go in the morning. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I hope these were able to help someone!! CRISPY SESAME CHICKEN WITH A STICKY ASIAN SAUCE ~ 5 tbsp olive oil 2 eggs, lightly beaten 3 tbsp cornflour (cornstarch) 10 tbsp plain (all-purpose) flour ½ tsp salt ½ tsp pepper ½ tsp garlic salt 2 tsp paprika 3 chicken breast fillets, chopped into bite-size chunks Sauce: 1 tbsp sesame oil (optional - you can leave out and just sprinkle with plenty of sesame seeds at the end if you prefer) 2 cloves garlic, peeled and minced 1 tbsp Chinese rice vinegar (white wine vinegar will work too) 2 tablespoons honey 2 tbsp sweet chilli sauce (use more or less depending on the brand and how spicy you like it) 3 tablespoons ketchup 2 tablespoon brown sugar 4 tablespoons soy sauce To Serve: Boiled rice 2 tbsp sesame seeds Small bunch spring onions (scallions), chopped Heat the oil in a wok or large frying pan until very hot.Whilst the oil is heating, place the egg in one shallow bowl and the cornflour in another shallow bowl. Add the flour, salt, pepper, garlic salt and paprika to another shallow bowl and mix together. Dredge the chicken in the cornflour, then dip in the egg (make sure all of the chicken is covered in egg wash), and finally dredge it in the seasoned flour. Add to the wok and cook on a high heat for 6-7 minutes, turning two or three times during cooking, until well browned. You may need to cook in two batches (I find I can do it in one batch so long as it's no more than 3 chicken breasts). Remove from the pan and place in a bowl lined with kitchen towels. Add all of the sauce ingredients to the hot wok, stir and bubble on a high heat until the sauce reduces by about a third (should take 2-3 minutes). Add the chicken back in and toss in the sauce to coat. Cook for 1-2 minutes. Turn off the heat and divide between four bowls. Serve with boiled rice and top with sesame seeds and spring onions." Seab has been asking me to do a budget for so long, and I just couldn’t do it. I truly believed we didn’t have any extra money to budget, all the while we kept eating out like we were high falooting 😂. Since starting #financialpeaceuniversity , we decided on a $400 grocery budget ($100 per person) and to only use cash. Well, that also meant meal planning 🙄. Guess what y’all? It’s actually been fun and we have $45.08 left to spend for the rest of the month. I don’t eat everything that’s on here because that is one thing I told Seab I wasn’t going to compromise....eating healthy. I hope this helps someone. Chicken Lettuce Wraps for lunch & Pulled Pork w/ Green Beans & Banana Pudding for dinner! 😍 . These two meals are wonderful for meal prep. A lot of people assume that meals with lettuce don’t work well for meal prep but as long as you keep the lettuce dry it will be just fine!! I remove the lettuce boat & peanut sauce before I heat the chicken but you can also eat it cold 😎😎 . This meal is just as good warmed up as it is eaten cold. This meal might be able to give you some variety!! A lot of the calories from this meal come in the peanut sauce. If you use PB2 or another powdered peanut butter, you can reduce the calories of this meal even further making it great for weight loss. The volume of food still seems like a lot though because of the raw vegetables included & the time it takes to chew the food . The Pulled Pork recipe is easy, it tastes great, & it retains flavor all of the way through the week. The pulled pork is cooked in a crockpot so it really doesn’t get any easier than that. Dump some Apple cider vinegar into the basin, plop the roast in & go about your day. I use a Pork butt roast which is one of the cheapest cuts of meat you will find in the store. A lot of the time I don’t like Crockpot meats because I find them incredibly bland & boring and pork is one of those meats for me. You can take pork from 0-100 with a good bbq sauce and a couple of minutes under the broiler after if comes out of the crockpot. Before and after✔️ This time a meal for those of you who are busy and don’t have much time to cook or don’t know how to cook (this meal can’t be easier) or simply are lazy and prefer to watch Netflix instead of spending time in the kitchen. It takes only 5 minutes of your time to prepare and change 4-5 simple ingredients into a healthy, reach in protein meal 👆🏼😍 Follow the below steps: . 1️⃣ Ingredients you need: 400g of drained chickpeas, 360g of lean beef, 500g of zucchini, 1 big red bell pepper and 3 spoons of olive oil and seasonings of your choice. Those ingredients will make 3 meals. 2️⃣ Preheat oven to 190°C (375°F). Cut beef in small pieces and season them with 1 spoon of olive oil, salt and pepper. If you have time, you can do it 1-2 hours earlier and cool it down in a fridge. 3️⃣ Mix together in a bowl - chickpeas, sliced zucchini, sliced bell peppers, 2 spoons of olive oil and seasonings (I used cumin, smoked paprika and some salt and pepper). 4️⃣ Take 3 large sheets of foil, place on each of them 1 serving of vegetables and 1 serving of meat. Fold the foil up and make it airtight. 5️⃣ Cook for 25-30 minutes in the oven (you can relax during this time or take a quick workout in). Take all of the meals out of the oven and put on a plates or in your lunchbox. Over the years I’ve refined my meal planning skills so that I’m not agonizing about what to make for dinner every night. Basically, at the beginning of the week, typically Sunday, I go through the freezer and pantry to take inventory and plan 3/4 easy meals from what’s on hand. Usually it’s a combo of a protein + green veg, a stir fry, or fish + side. It’s a fairly loose plan, no specific day for each meal, to allow some flexibility. I keep a running grocery list on my phone and try to only shop a few times during the week. What about your dinner strategy? Do you meal plan? What’s been helpful for your family?

This wild salmon recipe is perfect for those days when you’re not sure where the time goes. For me, when I’m too busy, I usually do not make the best food decisions. I always have wild frozen salmon ready to defrost for a quick nourishing meal. And this is one of my favorites to make in under 10 minutes! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Quick pickled onions:  1 red onion sliced thin, pinch salt, juice of 1 lemon and 2 T apple cider vinegar. Let sit for at least an hour. ⁣ (I always have jars of this ready for salads!) ⁣ Sear salmon on each side for 2 minutes. Toss a handful greens, fresh herbs-my favorites are parsley, cilantro and mint, juice of 1/2 lemon, salt, pepper, 1/4 avocado and a big spoonful of the pickled onions. I love throwing in leftover grilled/roasted veggies from the night before!  To finish, drizzle a nice evoo on top of fish! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀
