Quiche gets a makeover - this open pie is basically shortcrust pastry filled with cream, eggs & vegetables & or meat- ‘quiche’ is the French name for this classic dish which they adopted but its origins are Lorraine in Germany. In the UK store bought they look harmless but are loaded with calories. My husband loves them so i wanted to make a healthier version with local Italian ingredients. I looked to seasonal sweet squash & Italian polenta to replace the high carb, high fat pastry. Still strong & hearty enough to stand up to the filling with a good texture & a warm note. For a 23cm springform tin you need to boil 100g of peeled squash cubes until soft enough to blend. Set aside & then pour 150g polenta into a pan containing 600ml of boiling salted water. Over a medium heat whisk constantly until the polenta has absorbed the water & thickened. Add the blended squash & continue to mix until mixture is thick & sticky, about 6 minutes. Remove from the heat & add 1.5 tbsp olive oil (or 25g butter), 25g grated parmesan & 1 whisked egg. Spread & flatten into your greased & lined tin, you need more at the edges as when cool enough to handle you can press the mixture up the sides of the pan. Bake for 20 to 30 mins until crust is dry. Now choose a filling, sauteed onions are a good starg, with spinach (150g) & a soft crumbly cheese like goats, feta or ricotta (100g). These weights are guidelines, adjust according to the number of ingredients. Pea, zucchini, sliced mushrooms, roasted cherry tomatoes, cured meats all work well just mix them all in a bowl with 100ml semi skimmed milk, 200 ml heavy cream & 5 eggs. Pour filling into your case & bake for 35-40 mins until set. Happy Monday beautiful people. This chocolate coconut cluster recipe is almost too good to be healthy and this delicious. It’s also a fun family treat to provide for your little ones. Creating recipes like these motivate me to continue for my daughter as she grows and wants to help out in the kitchen.
She is now at the age where anything mama is eating, you better believe she’s right there mouth wide open, ready for a taste. It’s good and bad! I find myself more mindful at what I eat so I can be able to share with her. And I now realized that I may have to start hiding and eating in the closet on a bad day 😝 What about you guys? Here’s what you’ll need
5oz bag of unsweetened shredded coconut flakes
2 Tbsp of melted coconut oil
1/2 cup of almond butter
1 tsp of vanilla
1 cup of 85% dark chocolate
Optional: coconut butter as topping
In a bowl mix everything except the dark chocolate throughly then set in fridge for 30 min. Melt the chocolate in double boiler, then form coconut clusters into balls. Take a spoon and dip cluster into chocolate then set in fridge for one hour and enjoy!
Tip: after you form your cluster balls you can place in freezer for 1 hour to harden completely so that you can a hard shell and soft inside. Then dip cluster into chocolate.

Woke up this morning to snow ❄️☃️ it was such a beautiful Monday morning sight and put me even more in the Christmas spirit! After my run this morning I was craving another yogurt bowl 😋 I started with some coconut milk yogurt and added a banana, some strawberries and a big dollop of cashew butter! I definitely mixed it all up together after I took the picture and it tasted like a PB&J 👏🏼 this is the last full week of work until Christmas and I couldn’t be more excited! Happy Monday 💗

2 large English cucumbers
4 oz. whipped cream cheese
1 tsp sriracha
¼ tsp ginger powder
4 oz smoked salmon
2 carrot sticks, cut into matchsticks
1 red pepper, cut into matchsticks
1 avocado, thinly sliced
Toasted sesame seeds for sprinkling
Trim the ends off the cucumbers, then use a vegetable peeler to slice the cucumber into thin flat strips. Continue until your reach the center of the cucumbers.
In a small bowl, mix the cream cheese with the sriracha and ginger powder and stir until well combined and smooth.
To assemble the rolls, lay the cucumber slices down, spread the cream cheeses mixture on top. Then place the smoked salmon, carrot sticks, red pepper sticks and avocado slices on the top half of the cucumber slice. Starting from the top half, carefully roll the cucumber slices tightly.
Place them upright on a plate and sprinkle toasted sesame seeds on top, if desired.
Had the brownie. The rest tasted of Christmas = cinnamon 🤮

GALETTE PROTEICHE CON CREMA DI EDAMAME E SALMONE AFFUMICATO
Questa ricetta contiene 756 kcal e 50 g di proteine.
In una ciotola unire tutti gli ingredienti per la base e mescolare bene. Lavorare l'impasto con le mani per un paio di minuti finché risulterà morbido e omogeneo. Coprirlo e lasciarlo riposare.
Per la farcitura: mettere nel frullatore gli edamame sbollentati e raffreddati, la tahina, il succo di un limone e il sale. Frullare fino ad ottenere un composto omogeneo e, se necessario, aggiungere un pizzico di sale. °Tagliare l'impasto a metà e stenderlo in una forma circolare dandogli uno spessore di circa 2-3 mm.
Cuocere la base della galette in forno a 180°C per circa 10-15 minuti, girandola a metà cottura. In alternativa si possono fare delle galette più piccole da servire come monoporzione.

Bữa tối nhanh gọn lẹ hong cần rửa chiếc nồi nào haha Hạt diêm mạch (mua trong L's place 175k/bịch 145g), m đong nước tỉ lệ 1:2 rồi nấu bằng nồi cơm thường luôn, không cần ngâm. Ức gà ướp với sốt teriyaki có sẵn nhưng mà ở VN chắc hổng tìm được, nên là mng cứ dùng công thức mật ong xì dầu của m hoặc paprika, thảo mộc, muối, tiêu cũng oke lắm. Không có lò nướng thì rán với chút dầu olive, mà k thích rán thì đem luộc luôn cho nhanh ! 😂 Bí ngòi rắc muối tiêu, phô mai parmesan (chời ơi thơm nức mũi luôn), bỏ vào cùng xiên gà nướng 15-20' 200 độ. Tip: Plan out your day. Ensure your main meals are wholesome and filling, and contain some veggies! Get in your protein. Whatever calories are left, I fill with treats 😻 for example, I wanted to eat chocolate today, so I factored in a Mint Flake which comes in at 160 calories. Really easy to fit in if you plan🍫 •
I also wanted to make carbonara pasta 🍝 If you control your portion sizes, you can keep the calories down. For example, I weighed out 100g of San Remo Carbonara sauce and only used that amount. I cooked the chicken and bacon separately to the chicken to ensure I ate the exact amount of sauce I wanted 👍 and cooked my pasta (Aldi ‘Has No’ GLUTEN FREE SPIRALS) separate to my partners because he eats a lot!!! Dinner came in at 560 Cals 👻
I also ate: gluten free avo toast for brekky 🥑 chicken, uncle Ben’s coconut chilli and lime rice and salad 🥗 and @keepitcleaner
