That @beingbengt Friendly Low GI Vegetarian Meal - Done I'm not religious but it's been a tradition in our family to eat vegetarian food during the 10 days celebrated as Ganesh Chaturthi /Birthday of Lord Ganesha What warms my heart is that without anyone telling him to, @beingbengt happily observes this tradition too. I felt the least I could do was make a couple of his favourite vegetarian dishes Clockwise : 1. That Coconut Amti I pressure cooked skinless split pink lentils /masoor dal in salted water along with asafoetida, turmeric powder, curry leaves & green chillies. Once cool, I churned it well & simmered along with coconut milk, fresh coriander & kokum/Garcinia indica I tempered coconut oil with mustard seeds, curry leaves & asafoetida & added to the simmering lentils 2. Those Claypot Ivy Gourds/Tendli/Kundru I tempered coconut oil in a claypot with mustard seeds, curry leaves, asafoetida & onions. I cooked the ivy gourds along with more curry leaves, salt & a little chilli powder in this till done but still crispy It's optional to cook this in a Claypot but it's so tasty if you do 3. That Salad/Side : Sombol - My Style I mixed together : Onions, tomatoes, fresh coriander, freshly scraped coconut, dried chilli flakes, salt & lime juice I usually use a Sri Lankan chilli paste that contains dried prawns but skipped it to keep it vegetarian 4. Those whole wheat parathas Since we're trying to get back to eating Low GI, I skipped the rice. @beingbengt ate very happily & I'm sure this is a Bappa/Lord Ganesha friendly meal too!!🙏

Hubby wanted slow cooked beef ribs for our anniversary... I wanted a salad 😋 everyone’s happy! In a pan added 1 tbsp coconut oil, added aesofotida, mustard seeds,green chillies,curry leaves, cook for 2 monutes,then add the cubed squash toss well adding 1 tsp of corriander-powder,seasalt.Add 2 cups of water,and when the squash is 3/4th cooked add the ground spice mix,stir well ,then add 1/4cup coconut milk and a pinch of black pepper.Cook until squash is fork soft but not mushy.Garnish with cilantro. . . 2.Ridgegourd/Hirekai/turee with tomato. . Made this with no oil. In a pan add chopped tomatoes with a 1tsp turmeric,salt to taste and let it get pulpy,then add the chopped garlic,curry leaves ,salt and cut ridgegourd pieces adding 1 cup of water.I added 1 tsp cumin powder,1tsp chilli powder ,covered with lid and once done, seasoned in 1 tsp oil and mustard seeds for flavor(optional).Very mild flavored and light. . 3.Leftover karela sabji/bittermelon stirfry. . 4.Wholewheat rotis smeared with ghee. . A wonderful,plantbased,light on the tummy yet hearty and balanced meal. .
