Fridays off means fresh breakfast at home. It doesn't look too appetizing, but this mushroom and tomato scramble is pretty delicious.
A shot of today's lunch prior to portioning. It's just so much prettier in the cast iron. Summer may be wrapping this week, but this meal has all the flavors of it: smoked garlic asiago sausage, green and red peppers, yellow squash, zucchini, mushrooms, and onions. Lately my "jar salads" have been in my favorite glass meal prep containers. I find great joy in the way they perfectly fit two deep on my fridge self. A fridge after #mealprepmonday

First day of my redirect: meal prep! I kept fairly low carb and really mixed up the flavors so I can pick and choose throughout the week. Whatever's left on Friday, I will vacuum sealer and freeze. I have at top: Chicken Sausage Veggie Skillet. Middle: Sugar Free Garlic Chicken Stir Fry. Bottom: Hamburger Gravy on Summer Squash (only two actually have squash - I ran out!)
This slow cooker chicken taco soup is 1 of my favs to make. And freezes really well. If u like your soup really really spice add the amount it says. I like spice but the very 1st time I made this it was insa ley spicy lol so I halve the spices even then it's still pretty spicy. Then I add sour cream and a tortilla when you serve it up. I like to cook. Especially when I am bored. I actually neglect other household chores at times, in favor of cooking. I made bacon kimchi cauliflower fried rice and low carb shepherd's pie (1st two photos for the first dish, next 3 for the pie). These dishes aren't keto because they both contain peas and carrots; however, I ain't tripping. I'm gonna Forrest and Jenny it up.

I’m exhausted (I made pulled BBQ chicken wraps with Greek yogurt coleslaw too) after cooking and cleaning a super chaotic kitchen AND having grocery shopped - all for around 3+ hours nonstop. Plus baby wouldn’t stop Hulk-ing it out in my belly 😬
But man it feels good to mix it up with our macro plans! I can go with the same meals for months but it was getting boring (and gross tbh) having just plain swai or chicken.
And really, I wanted to stretch my cooking muscles again! I’ll have tons of time after tomorrow to cook and learn how to be a wiz in the kitchen so I’m amped to get creative 😈😈😈

Starting my 2-2-3 12 hour swing shift at 5:45 am tomorrow morning = meal prep for the week. I’ll be having veggies and eggs with a premier protein shake around 2:30 and eating dinner around 6:30 during my working days.
I made a sheet pan meal of Italian chicken sausage and peppers and onions which I’ll serve over parmesan wilted kale and a ribeye stir fry I made with chopped fresh veggies and a bag of frozen stir fry veggies. Also, have pork in the crock pot to shred and make a low sugar bbq sauce for with green beans for dinner.

Chicken and Veggie stir fry on cauli-rice prepped and ready to go for the week! .
Peppers 🌶, red onions, green beans, avocado oil, garlic, coconut aminos, turmeric, chicken thighs, and ginger made up this dish.
I cooked up the cauliflower rice in butter, and salted and peppered it liberally!
It’s in containers portioned out, and ready to go for the next couple lunches for my husband and I!

Usually I prefer to shop and prep on different days because it can really take all of my weekend mojo to do it all on Sunday.
Luckily I have a handful of go-to slow cooker recipes for this week so I can keep my prep to a minimum today!

Seriously, this recipe could not be easier or more packed with flavor! The Cajun seasoning takes the chicken to a whole new level with minimal extra work!
This Cajun chicken is perfect to use all week in salads, with rice and veggies, in soups or wraps.
I have a garlic and onion free low FODMAP recipe for Cajun seasoning if you are practicing a low FODMAP and need some inspiration!
For this recipe you will need:
- Cajun seasoning
- garlic olive oil (or regular but garlic adds more flavor and is low FODMAP friendly)
- boneless skinless chicken breast
- bag of frozen peppers (@traderjoes
Add bag of frozen peppers and some Cajun seasoning to slow cooker. Coat the chicken in oil, add the seasoning liberally. Place chicken over peppers and cook low 8 hours or high for 4-6.
When done take chicken out and shred with 2 forks. Serve with peppers.
