GINGERBREAD OATMEAL 🤶🏽🎄 That’s right fam, we are getting festive with my oats over here. Also, how effin cute is my new twig spoon?! 😍 Did I buy it purely for this photo? 100% Do I have any regrets? I have, in total, zero regrets. dEATs: 1/2 c oats cooked in 1 c water. Stir in 1 scoop vanilla protein powder, cinnamon, allspice, ground clove, and ginger. Top with honey roasted pear (brush with melted coconut oil honey, cinnamon and cook at 450 for 10-15 min), @siggisdairy vanilla yogurt, almond butter, and pomegranate seeds. P.s. the spoon does in fact make it taste better

Here's a reminder from Bobs to eat your BRUSSELS SPROUTS this Christmas 😊 (Bobs loves his new giant sprout friend!!!) To all you sprout haters, there are many different wonderful ways that you can eat your brussels sprouts; my fav way to have them is roasted! Serve with a little drizzle of maple syrup or balsamic vinegar.. Try adding some nutritional yeast (see recent post on how to get that caramalised crispy finish!) Add a little chilli to your sprouts or some rosmary, thyme and chestnuts or try some warming christmas spices with some nuts and cranberries.. These little sprouts are bursting with nutrients; they are rich in vit K & C so good for supporting bone health, the immune system, tissue repair, iron absorption and more .. they can help reduce severity of colds over the winter! They have a high fibre content & are great for our #digestivehealth & #guthealth .They are also high in antioxidants which can help reduce inflammation. Add them to your pastas/stir frys/salads/buddha bowls in the lead up to christmas 😋 I've been a little quiet with recipes this week - sorry! It's been an intense one. Spicy🌶 vegan barbacoa, anyone? Tag a friend who loves this! . Wanna guess what is it made of?🧐Not tofu, not beans... . . . Yup, it’s jackfruit!! This is my first time using jackfruit for savory dish and I must say it’s surprisingly flavorful! . 🙋🏻‍♀️never tried barbacoa before and thought I would give it a try with jackfruit! . Ingredients: ~ 2 cans of jackfruit in brine, drained and baked at 250F for about an hour. *strongly recommend this step to remove the moisture and sourness of jackfruit, especially when it’s in the brine. Using a fork, shred jackfruit into strips and take out the seeds. ~ 1 medium onion, diced ~ 3 cloves garlic, minced ~ 3 tsp ground cumin ~ 1 tsp ancho chili pepper ~ 1 chipotle pepper in adobo sauce, sliced ~ 2 tbsp adobo sauce (adjust accordingly for spiciness) ~ 2.5 heaping tbsp vegan Worcestershire sauce ~ 1-2 tbsp ketchup (adjust based on preference) ~ 2 heaping tbsp maple syrup ~ 1/2 tsp green Chile (optional) ~ salt to taste In a heated pan, sauté onion and garlic until soft, add cumin, chili, and condiments. . Now the fun begins... add jackfruit, stir-mix-stir.. if it’s too dry, add a bit of water. Your kitchen will smell so sweet now.. and you probably sneeze because of the heat from chili🤣. Season... . Transfer jackfruit into a loaf pan and bake at 350F covered for 30-35 mins. Layer with banana leaf, if you have one. Why bake it, you asked?! Well, it’s just more fancy🤣, no actually, I wanted the jackfruit to absorb all the flavor from the sauce.. in fact, it’s more seasoned the day after. . Serve with 🌽or flour tortilla, salsa, 🥑 and lime juice. I added more Worcestershire and hot sauce🤩. Tacos —> Taco Bowl —> ‘Taco Bout Fun! I love a build-your-own taco something station for dinner (see last pic). That way if someone doesn’t want starch, boom! They can make a taco salad! Or put the tortilla at the bottom of the salad if they would rather eat with a fork and not tacos in their hand. Anyway, it’s a crowd pleaser, and you can have whatever taco ingredients you wish. My little station here is just for some inspiration ✨ now let’s get cooking! Ingredients: - chicken thighs (boneless and skinless) - spinach (washed) - tomatoes (washed and diced) - avocados - shredded cheese - chips - salsa - bell peppers (washed and chopped) - onion (chopped) - lettuce (shredded and washed) - tortillas (I used corn) - other ingredients i did not feature that you may want: sour cream, beans, limes Steps: - preheat oven to 375 - in baking dish, put chicken thighs and spinach in olive oil and seasoning. Bake for 45 mins - meanwhile prep the spread: put out in different cups/bowls the cheese, chips, salsa, diced tomatoes, and shredded lettuce - in a pan on the stove on medium heat, cook the peppers and onions in olive oil and seasoning for about 20 mins, or until soft. When done, put in a bowl and add it to the spread - in a small bowl, cut avocados in half, take the seed out, and scoop out the insides and into the bowl. Mash it up for some guacamole! - when chicken is done, chop it up into smaller pieces and put out in a bowl next to everything else - lastly, warm the tortillas on a plate in the microwave for about 30 seconds Happy nomming! 👩🏼‍🍳🐝 #thebusybea #busybeasbasiccooking #bbbcooking #bbb #lovesprouts

Another week, another menu plan + grocery list 📔🖊 our little tree is up, there’s snow on the ground, and three blankets on the bed so I’d say a fair amount of comfort food is being pined for over here 🌲 I wanted to address a question I receive somewhat often, and that’s how do we keep our grocery budget so low. Beside the fact that we live in the south where cost of living is generally more affordable, and most things we eat are made from scratch, here’s the answer: we don’t go out of our way to buy organic. I know this isn’t a popular position (especially in the sustainability niche!) but we just can’t justify spending nearly twice as much on food that may or may not be better for ourselves or the environment. The evidence is inconclusive at this point in time so we’re just not convinced 🧐 tbh I’d rather buy a metric crap ton of conventional produce than get like three apples and five potatoes for the same price. Sometimes we do choose organic, when the price is reasonable and it comes package-free, e.g. carrots and kale. At the end of the day, though, I believe eating vegetables is what’s good for us and the planet. Do you buy mostly organic or do you agree that “fed is best” 😜 I’d love to know your take!
Who wants a bowl of 🥭sticky rice in a pool of mylk sprinkled with some red ruby jewels, tapioca pearls and chia pudding?🤩 . If you ever dine at a Thai restaurant, there is always the mango sticky rice dessert to end your meal. I’m trying to replicate this with a healthier twist using maple syrup and mix of almond and coconut milk. . Blue sticky rice recipe: ~ 3 tbsp Butterly pea flower juice (by cooking the flower with water until the color releases or just add water to it) ~ 1/2 cup of cooked Thai sticky rice (cook per package instructions) I steamed mine instead and added coconut milk Add blue color to your sticky rice and mix until well combined, mold to your preferred shapes. . Mylk mixture: ~ I used 1.5 cups of almond to 3/4 cups of coconut milk ~ maple syrup to taste I did not cook my mixture, if you want it thicker, you can boil the mylk until warm. . Plate as you wish with mangoes, pomegranate seeds, chia pudding or tapioca pearls, and topped with toasted coconut flakes! . These 5-ingredient Cashew Butter Cookie Dough Balls are coming in handy for that post dinner sweet tooth 🍬One of my favorite recipes- plus they're vegan & gluten free! Recipe: 1 cup @georgiagrinders cashew butter (add 1/8 tsp salt if the cashew butter is unsalted) 1/4 cup maple syrup 1/2 cup @bobsredmill almond flour 1/2 tspn @frontiercoop vanilla extract 1/4 cup @enjoylifefoods chocolate chips Mix together the cashew butter, vanilla & maple syrup. Add in the almond flour and chocolate chips and stir until well combined. Roll into balls and let set in freezer for at least 30 minutes. Can be stored in fridge or freezer.

Quinoa, Avocado, and Greens OH MY! You cannot go wrong with this tasty nutrient-packed salad. ▫️▪️▫️▪️▫️▪️▫️▪️▫️▪️▫️▪️▫️▪️▫️ -1 cup Quinoa, cooked and ready -1 15 oz can of Chickpeas, drained and rinsed well -1 cucumber, peeled, seeded and diced -1/4 cup of Fresh Mint, chopped -1 Avocado -3 Tbsp of Extra Virgin Olive Oil -Juice of 1 Lemon -4 cups of Mixed Greens -Salt & Pepper, to taste —In a bowl, mix together the quinoa, chickpeas, mint, cucumber, olive oil, lemon, salt & pepper, set aside. —Add the mix on top of a bed of greens (I used baby spinach & arugula)and top with slices of avocado. Add a tiny bit of salt,pepper, and lemon to season the avocado. Hello you beautiful thighs of amazingness and you beautiful mushrooms and spinach and cauliflower rice and quinoa and just UGH this was so good and so easy. I wish I could not be full right now and eat it all again. Now let’s get cooking! Ingredients: - bone-in chicken thighs - spinach (washed) - mushrooms (washed) - cauliflower rice (I used @cecesveggieco ) - quinoa Steps: - preheat oven to 375 - in baking dish, put thighs, spinach and mushrooms. Add olive oil and seasoning. Bake for 50 mins. - meanwhile, in one pot cook quinoa (as instructed on the package it came in) - in a separate pan on the stove, sauté cauliflower rice in butter and seasoning. When quinoa is done, add it to the rice and sauté for five more mins on medium heat to get the flavors blended. I had some leftover fresh pesto in the fridge, so i added that to the pan. It was delish. - put quinoa and cauliflower rice in a bowl. When chicken is done, put the thighs and veggies on top of the quinoa and rice. Pour some of the juice on top. Instant Pot Chicken Enchilada Soup (slow cooker can also be used) ▫️▪️▫️▪️▫️▪️▫️▪️▫️▪️▫️▪️▫️▪️ -2 Boneless Skinless Chicken Breasts -2 1/4 cups Chicken Broth -2 cups Enchilada Sauce (homemade or store bought) -15.5 oz can Black Beans, drained & rinsed -15.5 oz can Pinto Beans, drained & rinsed -2 cups Crushed Tomatoes -1 Green Bell Pepper, diced -1/2 Red Bell Pepper, diced -1/2 Onion, diced -10 oz Frozen Corn -1 tbsp Cumin -Pinch of Chili Flakes -2 tsp Dried Thyme -1 tsp Garlic Powder -Salt & Pepper to taste —Season chicken breasts with salt and pepper on both sides —Add all ingredients to the Instant Pot and stir to combine. Remember to season liberally with salt & pepper is a lot to season. —Cook in Instant Pot on high pressure for 25 minutes. If using a slow cooker, cook on high for 4-5 hours or on low for 7-8 hours. —Once done, remove the chicken and either cut into pieces or shred. Place the chicken back into the pot, stir and taste for seasoning —This goes well with parsley, sour cream, avocado so top with your favorites and enjoy! From the chicken thighs ... to the shrooms and peppers ... to the zucchini ... everything just melted in my mouth! 🤤 And it’s a perfect healthy meal before the food coma that Thanksgiving is 🥴 now let’s get cooking! Ingredients: - chicken thighs (bone-in with skin) - mushrooms (washed and cut) - peppers (washed and diced) - zucchini (washed and spiralized) Steps: - preheat oven to 375 - in a baking dish, season thighs with olive oil, salt, pepper, cumin, coriander, garlic powder, pepper, turmeric and basil (if you don’t have all of this that’s okay!) - bake thighs for 45 mins - on the stove, in one pan add the peppers and then mushrooms. Sauté on medium heat for 25 mins in butter and the same seasoning on the chicken. - in another pan, sauté the zoodles on medium heat for 15 mins in butter and the same seasoning. A simple twist on pad thai ! One large pan, some soy sauce, and the essentials: a meat, starch, and whole lotta veggies! Now let’s get cooking! Ingredients: - shrimp (washed and tails taken off) - rice noodles - carrots (washed and chopped) - bok choy (washed and chopped) - kale (optional) (washed and take leaves off stem) - soy sauce - garlic powder Steps: - in a pan on médium heat, sauté carrots for five minutes in butter, soy sauce, garlic powder, pepper, salt, and coriander. - add the bok choy, sauté for five more minutes, then add the kale and more soy sauce and olive oil. Sauté it all on medium heat for five more mins. - in a separate pot, start boiling water - in the pan with the veggies, add the shrimp. Sauté for 10 mins, then bring the heat to low. - in the boiling water, add the rice noodles for five mins, then drain the water and add the noodles to the shrimp and veggies. - stir it up and let simmer for a few mins Boom! Zoodles are oodles of fun ! Finally bought my own spiralizer on amazon (6 bucks!), and it was def a solid purchase. Made some sautéed @cecesveggieco cauliflower rice, veggies, tomatoes and cheese for the sauce. Took this pic right before I topped this baby with some pan-seared tofu. Also ... to cook zoodles, just sauté them in a pan on the stove on medium heat for 10-15 mins with some olive oil and spices. Spread on a baking sheet and drizzle with some olive oil. Cook in 300 degree oven for 15 minutes. —While chickpeas are cooking, smush an avocado with salt & pepper (and any other seasoning you would like) —First spread the avocado over the toast, then the roasted chickpeas. Homemade Granola ▫️▪️▫️▪️▫️▪️▫️▪️▫️▪️▫️▪️▫️▪️▫️▪️▫️ -4 cups Rolled Oats (Gluten Free Rolled Oats from @bobsredmill ) -1 cup Pumpkin Seeds -1/2 cup Organic Blue Agave -1/2 cup Grapeseed Oil -1/2 tsp Vanilla Extract -1 tsp Cinnamon -1/4 tsp Salt —Preheat the oven to 300 degrees. —Combine oats, pumpkin seeds, cinnamon, and salt in a bowl. —In a separate bowl, mix together blue agave, grapeseed oil, and vanilla extract. —Pour wet mixture over dry ingredients and mix well. —Spread over a baking sheet in one layer and bake in the oven for 40 minutes, tossing it once halfway through. Granola will crisp up as it cools. EVERY DAY IM BRUSSELIN’ 👊🏻 Leftovers for lunch! Say hello to a b-e-a-utiful lentil & quinoa bowl! When I had this for dinner, I made some roasted salmon to put on top ... but I skipped the meat this time for lunch. Let’s get cooking! Ingredients: - lentils - quinoa - brussel sprouts (washed and halved) - delicata squash (halved, take seeds out, sliced into thin pieces) - radishes (washed and cut in fourths) - eggs - cheese (I used goat) Steps: - preheat oven to 450 - place squash, radishes, and brussel sprouts on baking sheet. Drizzle with olive oil, salt and pepper. Bake for 25 mins. - boil water in a large pot on the stove, and in a small pot - in the large pot, add lentils and cook for 12 minutes. Then add quinoa and cook for 18 more minutes. - in smaller pot, add eggs to boiling water for 6 mins. Take them out, run under cold water, and peel. Then slice. - when quinoa and lentils are done, drain the water in a strainer and add back to pot. Add cheese and olive oil in there, stir it all up. - scoop lentils and quinoa into bowl. Top with roasted veggies and egg. For extra umph, add some dressing on top and even avocado or hummus if you have it! VEGETABLES ROCK. My fave way of getting that veggie fix is in a soup. This is probably the easiest recipe ever! Just ... 1) go to the grocery store 2) buy vegetable broth (or bone broth bc it’s so good for you), and whatever veggies your heart desires 3) at home, wash the veggies and cut them 4) dump everything into a pot 5) add any seasoning you want (I do cumin, coriander, turmeric, pepper, garlic powder) 6) bring to a boil then let it simmer for 20 mins Your body will thank you ! Never be afraid to pack on the healthiness 💪🏻here we got some sautéed broccoli rice topped with roasted butternut squash, onions, and zucchini ... plus some cheese and hummus for that extra flavorful zing! And protein punch 👊🏻 Ingredients: - Broccoli rice ( I got the organic @cecesveggieco box at @sprouts ) - Chopped (into small cubes) butternut squash - Diced white onion - Chopped (into small cubes) zucchini - Hummus - Parmesan cheese - Mozzarella cheese Steps: - Preheat oven to 400 - in a large baking dish, add butternut squash, zucchini and onion. Toss with olive oil, garlic powder, anything else ya want ... - Bake for 45 mins - In a pan on the stove, sauté broccoli rice with butter, garlic, and you guessed it ... whatevs you want people !!! It’s all about having fun with what’s in your fridge! I put some organic stone ground mustard in mine because yolo - Cook on medium heat for about ten mins, stirring. - Add mozzarella cheese and stir some more. - Put your serving of “rice” in a bowl. Take out stuff in oven when done, and put a nice amount on top of the rice. - Top that baby with parm and a glob of hummus (or not if you don’t want .... avocado would also be a good option) - Then boom!
