Chocolate Rye Cranberry-Orange Hazelnut Sourdough bread. I’m practicing for this upcoming week’s Christmas baking extravaganza and the smell of the house alone would make the effort worthwhile. I confess I just cut open a loaf while it was still piping hot, and we all slathered slices with butter and feel ridiculous amounts of Christmas cheer! 🌲
I have been experimenting and finalized my recipe listed below if you want to try it. You won’t regret it. 🌲

Ingredients - makes 2 good sized boules
800 g King Arthur bread flour
170 g freshly milled rye flour
200 g 50% rye 50% whole wheat leaven made from a 100% Rye starter the night before using the Chad Robertson method.
850g water between 80-85 degrees F
100 g high-quality cocoa powder
50 g caster sugar
300 g dried cranberries
100 g cocoa nibs
1 Zest all 4 oranges, juice them, bring juice to a boil in a non reactive pot, add cranberries to absorb liquid and turn off the heat. Toast the hazelnuts whole in a cast iron pan and allow them and the cranberries to cool.
2 Combine the flours, cocoa, and sugar in bowl and mix well.
3 In a separate bowl mix 800 g of H20 and the leaven reserving the final 50g of water.
4 Autolyze for 30-45 mins
5Add the salt and final amount of water to the dough and gently squeeze it into the loaf until combined.
6 Cover with a wet towel and allow to bulk rise for 3 hours using the stretch and fold method. Be gentle.
7 After the first hour and two sets of stretch and folds add nuts, fruit and nibs.
8 It will be wet and stick but dust your baskets and towels/liners with cocoa powder (to preserve color and add a nice bitterness to the crust) to help with sticking. Gently shape and try to keep fruit and nuts inside dough so they don’t burn on the outside crust.
9 Finish bulk rise overnight in the fridge.
10 Combo cast iron bakers preheated to 500. Bake for 20 mins then turn them down to 450 for another 10 mins. At the 30 min mark remove the lids. Bake another 25 mins on 450. Cool on racks.
