Last Monday was the official start day of the 'biggest loser' challenge. Today was weigh ins ♡ I started at 186 last sunday - last monday was 185.6 -- today i fluctuated between 182.4 & 183.4 ♡ Last monday my waist was 39.5 inches-- today it is at 36 inches ♡ so stoked! It may not seem like much but its great to be excited and celebrate the little victories to your goal!💎I have so much non scale victories to be happy about as well-- my energy is there! I use to be so tired before hand and now I can sustain the day😁 even without coffee!! Health & fitness is a journey! Zucchini Taco Boats! I don’t follow a specific recipe, I just brown (and rinse & drain) 1 lb. of ground beef, add a packet of taco seasoning, slice 4 zucchinis lengthwise, scoop out the seeds, fill with meat, and top with cheese. I bake at 425f for 25ish minutes and they’re so good! I don't know what it is about cooler weather and roasted chicken, but for some reason, it is definitely such a comfort and happy combination for me 😍 . Roasting chicken on Sunday evening is a great way to a) have a delicious Sunday meal but also b) have a quick and simple option for meals for other days in the week! . This recipe is simple, healthy, and delicious. 1️⃣ Mix juice from 1 large lemon, 1/3 cup olive oil, 6 cloves garlic (or more if you are like me 😋) 1/4 tsp salt, and freshly cracked pepper. 2️⃣ Place about 2lbs split chicken breast in roasting pan and pour marinade over chicken. Make sure surface of chicken is fully covered. 3️⃣ Roast chicken, covered with foil, for 90 minutes at 275F. After 90 minutes, turn oven up to 425F and uncover chicken. Baste the chicken and then return to over for additional 20 minutes until skin is crispy and golden . You can eat the chicken as is, use in salads, soups etc, shred for tacos or enchiladas, etc. The options are endless since this is a simple and universal flavor! 🤤🤤🤤🤤🤤 Super simple chicken & broccoli casserole. 2 10 oz bags of broccoli florets 2 10 oz bags of cauliflower rice 1 bag of diced chicken 1 can of chicken broth 2 C sharp cheddar cheese (shredded) Season to taste, I used Goya all purpose seasoning Throw everything (except cheese) in a pan & put in the oven (covered) at 400° for about 35/45 mins. Once everything is tender, add something to thicken it up, I just used coconut flour. Sprinkle abt 1/2 c sharp cheddar cheese & stir. Then add about 1 1/2 c of cheese on top & throw back in the oven to melt. Take it outta the oven and let it set for about 10/15 mins #ketogenicdiet #lifestylechange #keto #pcos #ketoaf

Nothing better than a pot roast on a rainy evening like tonight. Cooked this meal in the crockpot all day and came home to a delicious meal and a good smelling house! 🔹2 lb rump roast 🔹1 packet of onion soup mix 🔹1 can of low sodium cream of mushroom 🔹1 bag of carrots 🔹1/2 a chopped up onion 🔹little bit of water 🔹Garlic 🔹salt and pepper to taste Cooked all day on low for 8 hours and put over a 1/2 cup of white rice. This makes a huge portion! I made enough to have left overs on Thursday! 2 smaller portions for me and 2 large portions for the hubby! 💙only 6 points a serving! Day 62 Dont be afraid 💞Alot of times i did not take the steps i needed because i was a afraid of failing. I was afraid of the change affect i would have i thought it was going to be negative and it was holding me back. 💕But in reality it made such a big difference to take that step and be a lil brave and change my mindset with that everything started to change for the better. I would like to buy one that is real old and century as well but I couldn't finde it there sadly ! But the place is really nice and very big too. They also have a lot of things that are still looking like new and in a very good conditions. Anyway...
