HI I MADE DIS 😁 before going vegan I never ever ever cooked so it’s been quite a learning experience but I’m getting better all the time. had the idea for the last week to make this & finally got the chance... 💚brown rice noodles with veggies, crispy tofu, & covered in peanut sauce 🥜 so easy and delicious, & yes I had seconds 👌
If you're a dessert-lover like myself, chances are you already have some chocolate stashed somewhere safe 😉🍫 This little chocolate pot was three layers but you make one in the blender while the other one is in the microwave, so it takes absolute minimal time & effort!
Soak 1 date in a 1/4c water for a few minutes then blend up into syrup! Add a handful of pecans, cashews (I did a mixture of both), or whatever other nuts you have on hand. You're essentially making a chunky nut butter in the blender.
In microwave-safe mug:
Melt together 1/4c chocolate chips + 2-3 Tbs coconut milk. Stir it up!
Layer your nut butter at the bottom of two small jars, add another layer of plain coconut flakes, and finally a third layer of the melted chocolate. Let set in freezer for 10-15 minutes then enjoy!
I ended up eating both jars of this 😂😋🤤

Ahh, vegan food. For not-quite dinner (The pregnancy meal that occurs around 4pm) we had fresh out of the oven bagel burgers with Like-Meat schnitzel, guacamole, pomegranate, and baby arugala. With it I had salt and vinegar röstis (hashbrowns). Delicious! And see, fruits and greens, that's healthy. :D This is the closest I've come to 'cooking' all week... So glad I take vitamins.

no cheese pizzas a go. The hummus one is deffo my favourite, the crust is really crispy and the toppings are pretty tasty. A bit smaller than I expected but would buy again.

the weather outside is frightful but this smoothie is so delightful 🤪 banana 🍌 cocoa powder 🍫 dates, almond butter, almond milk, chia seeds, and a handful of ice, make for one heck of a breakfast ♥️

Vegan gluten free family dinner two ways. Super easy. Trader Joe’s cauliflower gnocchi sautéed with fresh broccoli. Take half and divide among kiddos and put some vegan cheese on top. For the adults put the other half back on the heat and add mushrooms and a little truffle oil! Yum!
You guys probably know by now that one of my favorite meals at home are leftovers! So after my workout, I just heated up some veggies, black beans, and spaghetti with some seasonings. Simple as that and now I'm full!

Vegan Epcot! 🥡 Veggie Stir Fry from Lotus Blossom Cafe (quick service) in China. It’s vegan as is: rice, cauli, bok choy, green beans, zucchini & carrots.☺️💖
Vegan Creamy Mushroom Pasta 🤤
Recipe below 🌱
70g Fettuccine Pasta
80ml Coconut Cream
50g Portobello Mushrooms
30g Green Capsicum (Bell Pepper)
30g Red Onion
1tbsp Crushed Garlic
Salt to Taste
1. Cook pasta in boiling water for approx 12 minutes.
2. Brown onion and green capsicum in a frying pan with either water or oil.
3. Add mushrooms, Garlic and Salt.
4. Add coconut cream and let simmer until pasta is done.
5. Drain pasta.
6. Serve and enjoy!

tonight beerboy left me to my own devices so i’ve eaten 3 bowls of cereal and watched doctor who (a BIG throwback; maybe i’ll resurrect my life-size david tennant cardboard cutout) 👽 anyway instead of showing you shreddies here’s an alternative plate of slop:
lentil and mushroom shepherd’s pie with an eDgY puff pastry top and roasted leeks 🤠 i used the leftover pastry to make marmite straws and they looked like turds so i fed them to people at work 💩 x
