So...I have been sick with a stomach virus that I acquired from 1 of my lovely germ carrying children so I have not been able to eat anything let alone post or be sorta kinda keto for the past few days. I am back on the wagon today and I had this for breakfast this morning and I am feeling so much better. I didn't eat all the nuts. I had about 2-3 hand fulls. This was very fulfilling and held me until 1p. Now I am trying to figure out to what eat for lunch. Yeah I scratched my head, got frustrated, didn’t understand it, couldn’t “feel” it and wanted know EXACTLY HOW to do it!
Then one day it clicked...all the teachings, coaching, retreats and personal development I’ve done over the years opened my understanding to that concept which is so simple BUT most people won’t get past it because they are committed to the Story In their head, they are addicted to the emotions that they’ve felt through all the challenges in their life and it’s a choice to let that go. How do I know that because that was Me. YES even with all the work I’ve done i still had the shit I didn’t want to let go of and that I thought kept me safe. .
Then the other day I was talking to my Mom about who i was as Kid and she said I was “independent, adventurous, social, creative, entertaining and always had vidid sleeping and day dreams that sounded real” BOOOMMMMMM!!! That’s it...GO WATCH A KID AND HEAR THEM TELL A STORY ABOUT THEIR FUTURE. They speak and FEEL as if it were happening right then in that moment. All the details are clear and absolute and there aren’t any obstacles. .
THAT’S THE ＳＥＣＲＥT!!!!! .

Why am I saying all this? There are people out there who will tell you that if there is sugar or starch in the ingredients of a food, that’s not Keto. That you’re eating “too much” protein or “not enough” fat. That there’s one specific way to do things and anything else isn’t Keto. 🙀 That’s not true. Keto is a whatever keeps you in the metabolic state of ketosis. •
Now some people may be much more sensitive to artificial sweeteners or sugars or starches. Maybe they’ll cause problems for you. But not necessarily. I do a lot of things that the Keto police 👮🏻♀️ would consider “wrong”, and here I am, glucose at 81, Ketones at 1.6, GKI of 2.8 (thanks @ketomojo

I just want to encourage everyone to do their own research, experiment, see what works for you. I worry that those people who sweat the little things will scare people away from Keto by making them feel like it has to be complicated. It doesn’t! You can do lazy Keto or dirty Keto or low carb or whatever. Just do you. 😊💖

KETO HERB BUTTER SALMON AND ASPARAGUS 🐟 ---

INGREDIENTS (servings - 4)
4 boneless skinless salmon fillets
salt and pepper to taste
1 pound asparagus, ends trimmed
1 lemon, thinly sliced, (plus additional wedges for garnish)
1/2 cup butter, at room temperature
3 teaspoons Italian seasoning
3 teaspoons minced garlic
fresh thyme or parsley, for garnish
1. Season salmon generously with salt and pepper on both sides. Arrange one salmon fillet and 1/4 of the asparagus in the center of one 12x12 inch piece of foil. Repeat with remaining salmon and asparagus on 3 other pieces of foil. Slide lemon slices under the salmon and asparagus.
2. In a small bowl mix butter, Italian seasoning, and garlic. Drop large dollops of the herb butter on top of the salmon and asparagus.
3. Fold the foil tightly around the salmon and asparagus, being sure to seal the ends together tightly so the juices and butter doesn't run out while cooking. Grill over medium high heat for 6-8 minutes on each side, OR bake at 400 degrees for 20 minutes, until asparagus is tender and salmon is flaky.
4. Drizzle fresh lemon juice over the top and serve immediately. ---

Shrimp Fried “Rice”
Marinated shrimp in the same sauce I poured over the riced cauliflower: sesame oil, soy sauce, ginger, minced garlic, dehydrated onion, salt and pepper and a splash of rice wine vinegar.
Steamed cauliflower, squeezed out as much liquid as possible, threw it in the hot pan to dry out even more before adding sauce.
Scrambled a few eggs on the side, but decided I’d made too much of that, so I nibbled at it as I finished cooking.
Set the cauliflower/egg aside and threw the shrimp in the same hot pan for a couple minutes on each side.
Derrick likes it (as much as he can like cauliflower), so it’s a win in our house. 🍴
Incredibly happy with 2lbs this week. I thought for sure following the big week last week it would be low this week. Also this weekend wasn’t the best I drank so little water and ate as best I could being out of town. So 2lbs this morning was a welcome treat. #weighinwednesday #weighin
